CHICKEN CASSEROLE WITH HERBY DUMPLINGS

Bypass the suet and make lighter dumplings for this family-friendly one-pot stew

12 skinless chicken pieces - a mixture of thighs and drumsticks on the bone, and halved chicken breasts
3 tbsp plain flour
2 tbsp sunflower oil
2 onions, sliced
2 carrots, diced
200g bacon lardons, smoked or unsmoked, or streaky rashers, snipped
3 bay leaves
3 sprigs thyme
250ml red wine
3 tbsp tomato paste
1 chicken stock cube
140g cold butter, diced
250g self-raising flour
2 tbsp chopped mixed herb - try parsley, thyme and sage or chives

Steps:

  • Heat oven to 180C/160C fan/gas 4. Toss the chicken pieces with the flour and some salt and pepper, to coat them - it's easy to do this in a plastic food bag.
  • Heat the oil in a casserole with a lid. Brown the chicken pieces well on all sides - you'll need to do this in batches. Remove all the pieces to a plate, and tip the onions, carrot, lardons, bay and thyme into the pan. Cook gently for 10 mins until the onion is softened.
  • Return the chicken pieces, with any juices that have collected on the plate. Then pour in the red wine, 250ml water and tomato paste and crumble in the stock cube. Add a splash more of water if you need, until the chicken is almost covered. Bring to the boil, then cover with a lid and bake in the oven for 20 mins. Remove the lid and bake for another 10 mins while you make the dumplings.
  • Rub the butter into the flour with your fingertips until it feels like fine breadcrumbs. Stir in the herbs with ½ tsp salt and some pepper. Drizzle over 150ml water, and stir in quickly with a cutlery knife to form a light dough. Use floured hands to shape into ping pong sized balls.
  • Place the dumplings on top of the stew and bake for 20 mins more until the dumplings are cooked through.

1 pound skinless, boneless chicken breasts, cut into small pieces
1 cup sliced carrot
½ cup sliced celery
1 cube chicken bouillon, or more to taste
⅓ cup butter
½ cup chopped onion
2 teaspoons minced garlic
⅓ cup all-purpose flour
½ teaspoon poultry seasoning
½ teaspoon dried basil
½ teaspoon dried thyme
¼ teaspoon ground black pepper
1 ¾ cups chicken broth
⅔ cup milk
1 cup frozen peas
1 (16.3 ounce) package refrigerated biscuit dough, separated

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a large baking dish.
  • Combine chicken, carrot, celery, and bouillon in a large pot and add enough water to cover. Bring to a boil, cover, and cook until chicken is no longer pink in the centers, 10 to 15 minutes. Drain, reserving chicken and broth in another pot or bowl.
  • Melt butter in the same pot over medium heat. Cook onion and garlic in the hot butter for 5 minutes. Stir in flour, poultry seasoning, basil, thyme, and pepper. Stir in chicken broth and milk slowly. Add chicken mixture and peas. Simmer over medium-low heat until thick, 10 to 15 minutes. Pour mixture into the prepared baking dish.
  • Bake in the preheated oven until mixture is bubbling, 20 to 25 minutes. Remove from the oven and place biscuits on top. Cover and bake for 15 minutes. Uncover and continue baking until biscuits are golden brown, 15 to 20 minutes more.

My family loves chicken and dumplings and this has the same taste but is super easy!! On lazy nights I may use a cooked chicken from the deli and a can of chicken broth.

1 chicken
1 small diced onion
1 stick butter
2 c bisquick
2 c milk
1 can(s) cream of chicken soup
1 Tbsp chicken broth paste(or cube)
1 tsp poultry seasoning
salt and pepper to taste

Steps:

  • 1. Boil a whole chicken with a diced onion and salt and pepper. Debone and dice chicken and save chicken broth.
  • 2. Preheat oven to 350.
  • 3. Layer #1 In a 9x12 baking dish pour a melted stick of butter. Spread the chopped chicken evenly over the butter, Sprinkle salt and pepper on the chicken.
  • 4. Layer #2 Mix 2 cups of bisquick , poultry seasoning, and milk. Mix well until lumps are out of mixture. Pour Mixture slowly and evenly of chicken. Do Not stir layers together.
  • 5. Layer #3 Whisk together 2 cups of warm broth and paste. Optional, with a slotted spoon fish the onions out of broth. Once the paste is dissolved stir in cream of chicken soup until the lumps are out. Pour mixture slowly and evenly into dish. Do not stir Layers together
  • 6. Bake uncovered 50-60 minutes or until golden brown Allow to cool for about 10-15 before serving.

This recipe holds a special memory for me because I was a young new bride and was working long hours and wanting to keep a nice house and cook good meals for my husband and I had marked this recipe in a magazine to write down when I could find time (no technology back then!) and when I got home from work my husband had written it...

1 can(s) whole carrots
1 can(s) cut green beans
1 medium onion
1 stalk(s) celery
2 Tbsp salad oil
1 can(s) cream of chicken soup, undiluted
3/4 c milk, divided
3 can(s) chunk white chicken, drained
1 pkg cornbread mix (11-13 oz)
2 1/2 Tbsp dried parsley
1 large egg

Steps:

  • 1. I have been making this recipe since my husband and I first got married 33 years ago. It is a great recipe to make when you need some shortcuts, but something that still tastes yummy! First, let me explain what to buy regarding the cornbread mix. This is an old recipe and back when I first starting making this, they sold cornbread mix in an 11 oz pouch. Where I live, they no longer sell that size and I now buy two 6.5 ounce pouches and so I use 13 ounces instead of 11 and it turns out fine. They also have 6 ounce boxes instead of pouches so you can use 2 of those as well. You just need a total of between 11-13 ounces of cornbread mix. This can be Jiffy, Martha White, Krusteaz, it doesn't matter.
  • 2. Preheat Oven to 400. Drain the carrots and green beans. Chop the celery and onion.
  • 3. In a 3 quart saucepan, heat oil and saute the celery and onion for 2 minutes. Stir in the undiluted cream of chicken soup, 1/2 cup of milk, carrots, green beans & chicken. Bring to a boil. Turn down to simmer.
  • 4. Now, make your dumplings: Stir cornbread mix, parsley, egg, 1/4 cup milk, just until moistened.
  • 5. Pour your chicken mixture into a 2 quart casserole that has been sprayed with non stick cooking spray. Drop cornbread dumplings on top by heaping tablespoons.
  • 6. Bake 18-22 minutes or until bubbly and cornbread is browned.

CHICKEN & HAM CASSEROLE WITH MUSTARDY DUMPLINGS

1 tbsp sunflower oil
1 tbsp butter
1 onion, chopped
2 leeks, thickly sliced
2 carrots, peeled and chopped
6 boneless, skinless chicken thighs, cut into chunky pieces
200ml cider
800ml hot chicken stock
½ bunch of thyme, tied
1 tbsp cornflour
150g ham hock or cooked gammon, shredded into chunky pieces
100g frozen peas
1 tbsp English or Dijon mustard
200g self-raising flour
¼ tsp baking powder
2 tbsp English mustard powder
100g suet or cold butter, grated
½ small bunch of parsley, finely chopped

Steps:

  • Heat the oil and butter in an ovenproof casserole over a medium heat. Add the onion, leeks and carrots and a pinch of salt, and fry gently for 10 mins until softened and translucent. Add the chicken, turn up the heat and fry for 5 mins. Pour in the cider, cook for 3 mins, then pour in the chicken stock and add the bunch of thyme. Bring to a simmer, season to taste, then reduce to a low heat and cover the pan. Cook for 30 mins.
  • Heat the oven to 180C/160C fan gas 4. Make the dumplings by mixing together the flour, baking powder, mustard powder, the suet or butter, parsley and ½ tsp salt. Swiftly mix in 8-10 tbsp of water and bring together with your hands. The dough should be firm and pliable. Divide into eight equal-sized pieces, weighing for accuracy if you like.
  • Remove the bunch of thyme from the stew and discard. Spoon a little of the liquid into a bowl and mix with the cornflour, then stir the mixture into the casserole. Add the ham hock, peas and mustard. Arrange the dumplings on top of the stew, then put in the oven, covered, for 30 mins. Remove the lid and cook for a further 10 mins until the dumplings are puffed up and golden brown. Serve in bowls. To freeze the stew, leave to cool completely, then transfer to a freezerproof container. Will keep for up to three months. Defrost thoroughly, then reheat until piping hot.

A rich and warming red wine chicken casserole - ideal for when it's cold and dark outside.

6 part-boned chicken breasts or boned for slow cooker (see below)
3 tbsp plain flour
3 tbsp olive oil
3 onions, each peeled and cut into 8 wedges
200g smoked bacon lardons
3 garlic cloves, peeled and sliced
300g large flat mushroom, sliced
2 bay leaves
2 tbsp redcurrant sauce
3 strips of peeled orange zest
300ml red wine
300ml chicken stock
100g self-raising flour, plus extra for dusting
100g fresh white breadcrumbs
1 tbsp wholegrain mustard
140g butter, cubed
2 tsp fresh thyme leaves, plus extra to serve
2 tbsp fresh parsley, chopped
2 egg, lightly beaten

Steps:

  • Preheat the oven to fan 180C/ conventional 200C/gas 6. Season the chicken with salt and freshly ground black pepper, then coat lightly in a little of the flour. Heat the oil in a large ovenproof lidded casserole dish and, in batches, brown the chicken on both sides over a high heat. Remove the chicken and set aside.
  • Reduce the heat, add the onions and lardons and cook for about 5-8 minutes so they are golden tinged. Add the garlic, then sprinkle in the plain flour and cook for 1 minute, stirring to prevent sticking.
  • Add the mushrooms, bay leaves, redcurrant sauce and orange zest, then pour in the red wine and stock and season with salt and pepper. Bring to the boil, then return the chicken to the casserole dish, making sure it is well covered with the liquid. Put on the lid and cook in the oven for 30 minutes.
  • While the casserole is cooking, prepare the dumplings. Put the self raising flour, breadcrumbs, mustard and butter in a food processor and blitz to a crumb consistency. Add the thyme, parsley, eggs and salt and pepper. Briefly blitz until the mixture forms a fairly moist dough. Using floured hands, roll the dough into 6 large, even-sized balls.
  • Remove the casserole from the oven when the 30 minutes is up and sit the dumplings on top. Pop the lid back on and return to the oven for a further 20 minutes, until the casserole is cooked and the dumplings have puffed up. Spoon the chicken and sauce onto six plates and top each with a dumpling. Serve with a rich, fruity red wine.
  • If you want to use a slow cooker, brown the chicken in batches and transfer to the slow cooker pot. Add the flour, onions, lardons, garlic, mushrooms, bay leaves, redcurrant, orange zest, red wine and stock, and season. Cover and cook on High for 4 hours. Make the dumplings according to step 4, then sit on top of the casserole after 4 hours. Cook for another 1-2 hours, then serve.

I found this recipe in my mom's recipes as I was sorting them. She had written it out but I have no idea where she got it from. In her recipe she said two cups of cooked chicken, shredded in small pieces. She commented that it made the dumplings while it cooked, like magic. This is some kitchen wizardry. because it really does! Using a rotisserie chicken makes it a quick and easy meal to have on the table in under an hour. Serve with a salad or vegetable and you have a meal. This is so yummy.

2 cup(s) chicken, torn into pieces
1 stick(s) butter
1 stalk(s) celery, chopped
1 cup(s) self rising flour
1 cup(s) milk
2 cup(s) chicken stock
1 can(s) cream of chicken soup
1/2 teaspoon(s) poultry seasoning
pepper, ground

Steps:

  • Shred some chicken into pieces. I use a rotisserie chicken for convenience but you could certainly use some you cooked. Place the chicken in an uncreased 9 x 13 casserole dish. I added a tiny bit of poultry seasoning to the rotisserie chicken. If you cook your own you would have seasoned it to your preference.
  • Chop 1 stalk of celery thin. Melt a stick of butter in a pan and sauce the celery until translucent. Pour this all over the chicken. Do not stir the mixture.
  • Mix the flour and milk. Whisk and pour over the chicken. Again, do not stir.
  • To the container you just emptied (milk and flour) add the chicken stock and soup and whisk well, Pour over your mixture, Do not stir the mixture.
  • Top with some pepper and bake in a 350 degree over for 45 minutes. Remove from over and let it sit for 5 minutes for the dumplings to form.
  • Plate up and enjoy.
