1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
2-1/4 quarts cold water
5 chicken bouillon cubes
6 whole peppercorns
3 whole cloves
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/2 cups chopped carrots
1 cup fresh or frozen peas
1 cup chopped celery
1 cup chopped peeled potatoes
1/4 cup chopped onion
1-1/2 teaspoons seasoned salt
1/4 teaspoon pepper
1 bay leaf
DUMPLINGS:
2 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon pepper
1 large egg, beaten
2 tablespoons butter, melted
3/4 to 1 cup 2% milk
Snipped fresh parsley, optional

Steps:

  • Place the chicken, water, bouillon, peppercorns and cloves in a stockpot. Cover and bring to a boil; skim foam. Reduce heat; cover and simmer 45-60 minutes or until chicken is tender. Strain broth; return to stockpot. , Remove chicken and set aside until cool enough to handle. Remove meat from bones; discard bones and skin and cut chicken into chunks. Cool broth and skim off fat. , Return chicken to stockpot with soups, vegetables and seasonings; bring to a boil. Reduce heat; cover and simmer for 1 hour. Uncover; increase heat to a gentle boil. Discard bay leaf., For dumplings, combine dry ingredients in a medium bowl. Stir in egg, butter and enough milk to make a moist stiff batter. Drop by teaspoonfuls into soup. Cover and cook without lifting the lid for 18-20 minutes. Sprinkle with parsley if desired.

3 cups chopped cooked chicken breast
2 eggs
4 ¾ cups chicken broth, divided
1 cup all-purpose flour
¼ cup chopped fresh parsley
2 teaspoons salt
⅛ teaspoon black pepper
½ teaspoon dried tarragon
¼ cup butter
2 cups chopped onion
1 ½ cups thinly sliced celery
2 cloves garlic, minced
½ cup all-purpose flour
2 quarts chicken broth
1 ½ teaspoons salt
1 ½ cups chopped carrots
3 cups chopped cooked chicken breast

Steps:

  • In a blender or food processor, combine 3 cups cooked chicken, eggs, 3/4 cup chicken broth, 1 cup flour, parsley, 2 teaspoons salt, pepper and tarragon. Process until smooth.
  • In a large pot, bring 4 cups chicken broth to a boil. Drop dumpling mixture by rounded spoonfuls into boiling broth. Simmer, uncovered, 5 to 8 minutes, until well formed and slightly browned. Remove with a slotted spoon and drain on paper towels. Reserve dumpling cooking liquid.
  • In a large pot melt butter over medium heat. Cook onion, celery and garlic in butter until onion is translucent. Stir in 1/2 cup flour until fully incorporated. Pour in 2 quarts chicken broth, stirring constantly. Bring to a boil. Introduce 1 1/2 teaspoons salt and carrots. Cover, reduce heat, and simmer 15 minutes.
  • Stir in dumplings, reserved liquid and 3 cups cooked chicken. Simmer 15 minutes more before serving.

This is my homemade Chicken Dumpling Soup. It has a slightly creamy base, not quite a cream soup, but not a broth either. The dumplings are not the fluffy kind, but chewy, more like an egg noodle. I use chicken breasts, just a preference, but you could use any type of chicken pieces. It freezes great, but is best to freeze without the dumplings, and make the dumplings when you serve it.

1 (10 1/2 ounce) can cream of chicken soup
1 cup carrot, diced
1/2 cup onion, diced

1/3 cup peas
1 teaspoon salt
1 teaspoon pepper
1 teaspoon poultry seasoning
3 large chicken breasts

1 egg

Steps:

  • Simmer the carrots, onion and celery in the chicken broth until soft.

  • For the dumplings, mix the egg, milk, and melted butter.

2 carrots, diced
1 bulb celery root, peeled and finely diced
1 turnip, peeled and finely diced

1 fennel bulb, finely diced

4 cups white wine
1 tablespoon fennel seed, toasted
4 sprigs fresh thyme
2 bay leaves
2 1/2 lbs chicken (organic)

1/2 cup chicken fat (sold in tubs at gourmet stores)
2 tablespoons chopped fresh tarragon
1/2 teaspoon ground nutmeg

Steps:

  • Melt the butter in a 6-quart pot over medium heat.
  • Add the garlic, carrots, celery root, turnip, rutabaga, onion, diced fennel, and a large pinch of salt; cook until vegetables are tender, about 5 minutes.
  • Add the white wine, 6 cups water, fennel seeds, thyme and bay leaves; bring to a simmer. Add the chicken and simmer for 2 hours. Remove the chicken and let cool. Pick off the meat in shreds; set aside in bowl.

  • Strain and skim the chicken broth.
  • Put the reserved chicken and strained broth in a large kettle; add cans of broth, chicken and mushroom soups, celery, carrots, onion, potatoes, bay leaf, peas, and one teaspoon of salt.
  • Put cover onto kettle; simmer soup on low heat for 2-3 hours, or until the vegetables are tender.
  • About 30 minutes before serving, mix up dumplings by putting flour, one teaspoon salt, baking powder, and pepper together in a medium bowl.
  • Add egg, melted butter, and enough milk to make moist, stiff batter.
  • Drop by teaspoons into boiling liquid.
  • Cook, covered and without "peeking", for 18-20 minutes or until the dumplings are done.

Add the broth, 4 cups of water, chicken breasts and cannellini beans, bring to a high simmer and cook until the chicken is tender and cooked through, 20 to 25 minutes.
  • Carefully remove the cooked chicken and set aside until cool enough to handle. Add the quinoa to the pot and cook until translucent and tender and the threadlike germ wraps around each kernel, 10 to 12 minutes.
  • Meanwhile, remove and discard the chicken skin and bones. Shred the meat into bite-size pieces and add back to the soup. Add the frozen beans.
  • Make the dumplings . Stir together the flour, parsley, eggs, milk, baking powder and 1/4 teaspoon salt in a medium bowl. Put half the batter into a perforated colander; holding the colander just over the simmering soup, scrape and work the batter through the holes with a rubber spatula, letting the tiny dumplings drop into the soup. Cook until the dumplings float, stirring to break up any large clumps, about 1 minute. Repeat with the remaining batter. Adjust the consistency of the soup with more water if desired and season with salt if needed.

This came from a Taste of Home recipe collection from several years ago. It is requested by my family several time a year. Great during cold weather and when you are feeling under the weather. Takes a little time to prepare, but well worth it.

1 (3 lb) chicken, cut up
2 1/4 quarts cold water
5 chicken bouillon cubes
6 peppercorns
3 whole cloves
1 (10 3/4 ounce) can cream of chicken soup, undiluted
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1 1/2 cups chopped carrots
1 cup fresh peas or 1 cup frozen peas
1 cup chopped celery
1 cup chopped peeled potato
1/4 cup chopped onion
1 1/2 teaspoons seasoning salt, to taste
1/4 teaspoon pepper
1 bay leaf
2 cups flour
4 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon pepper
1 egg, beaten
2 tablespoons butter or 2 tablespoons margarine, melted
3/4-1 cup milk
snipped fresh parsley, optional

Steps:

  • Place chicken, water, bouillon cubes, peppercorns and cloves in an 8 quart Dutch oven or soup kettle.
  • Cover and bring to boil; skim fat.
  • Reduce heat; cover and simmer for 1-1/2 hours or chicken is tender.
  • Strain broth and return to kettle.
  • When chicken is cool to touch; debone and cut into bite sized chunks.
  • Return chicken to kettle and add cans of soup, vegetables and seasonings; bring to boil.
  • Reduce heat; cover and simmer for 1 hour.
  • Uncover and increase heat to a gentle boil.
  • Remove bay leaf.
  • For dumplings, combine dry ingredients in a medium bowl.
  • Stir in egg, butter and enough milk to make a moist stiff batter.
  • Drop by teaspoonfuls into soup.
  • Cover and cook (don't peek) for 18-20 minutes.
  • Sprinkle with parsley if desired.
  • NOTE: It states in the recipe 10-12 servings, I serve bigger bowls, so it probably serves 6-8.
  • I also use a little less seasoned salt due to the salt content of both cans of soup.

An old fashioned, hearty, versatile chicken soup that can be customized in many ways. Whether you're looking for chicken noodle, chicken dumpling or chicken whatever, this is your base recipe that you will use for years to come. Now being used in our family for a fourth generation. The only addition I have made to the original, is to add Better Than Bouillon Roasted Chicken Soup Base along with it's self-made broth.

1 pkg. (1.5 lbs) or 4 large chicken thighs
8 cups of very hot water
8 rounded tsp. better than bouillon roasted chicken base, or to taste
3 carrots, sliced on the diagonal
2 stalks celery with leaves, sliced on the diagonal
1 med-lg onion, chopped
1/4 tsp. pepper
ADD AT THE END
1 tb. dried parsley
1 1/2 cup wide noodles (two large handfuls) , spaetzle or soup dumplings. i like essenhaus amish egg noodles. (see photo below.)

Steps:

  • Add 8 rounded tsp. Better Than Bouillon to 8 cups of very hot water and set aside.
  • Chop carrots, onion and celery and add to large soup kettle. Add prepared bouillon and pepper to pot. Then add chicken thighs, skin side down.
  • Bring to a boil. Reduce heat to a high simmer and continue cooking, loosely covered, for 60-90 minutes or until chicken is fully cooked. (Depending on how big your pieces of chicken are.) Skim foam and discard, if necessary.
  • Remove chicken to a platter, allow to cool slightly and debone. Return chicken meat to pot. Add wide noodles and parsley, bring back up to a low boil and cook noodles as per package instructions. Check salt and pepper at end before serving.

1 (22 ounce) can 98% fat-free condensed cream of chicken soup
1 (10.5 ounce) can condensed cream of celery soup
2 teaspoons poultry seasoning
ground black pepper to taste
2 cups low-sodium chicken broth
1 (12 ounce) package frozen peas and carrots
1 (10 ounce) can buttermilk biscuit dough, separated

Steps:

  • Place diced onion in a slow cooker. Top with chicken.
  • Mix both condensed soups, poultry seasoning, and pepper together in a bowl; pour over the chicken in the slow cooker. Pour in chicken broth and cook until chicken is falling apart, on Low for 10 hours, or on High for 5 hours.
  • Pour in peas and carrots and cook on Low until soft, 1 to 2 hours more.
  • Roll out the biscuit dough thin and flat. Cut into quarters or strips, then cut in half. Add dough pieces to the slow cooker and stir to make sure they are submerged in the liquid. Cook for another 1 to 2 hours on Low.

1 broiler/fryer chicken (3 to 3-1/2 pounds)
3 quarts water
1/4 cup chicken bouillon granules
1 bay leaf
1 teaspoon whole peppercorns
1/8 teaspoon ground allspice
6 cups uncooked wide noodles
4 cups sliced carrots
1 package (10 ounces) frozen mixed vegetables
3/4 cup sliced celery
1/2 cup chopped onion
1/4 cup uncooked long grain rice
2 tablespoons minced fresh parsley
DUMPLINGS:
1-1/3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon dried thyme

  • In a stockpot, combine the first six ingredients; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours. Remove chicken; allow to cool. Strain broth; discard bay leaf and peppercorns., Remove chicken from bones; discard bones. Cut meat into bite-size pieces. Return broth to pan; skim fat. Add the chicken, noodles, vegetables, rice and parsley; bring to a simmer., For dumplings, combine the flour, baking powder, thyme and salt in a bowl. Combine milk and oil; stir into dry ingredients. Drop by teaspoonfuls onto simmering soup. Reduce heat; cover and simmer for 15 minutes (do not lift the cover).

When growing up I used to eat a nice homemade chicken soup at my girlfriends house. In it was a 2 inch square flat dumpling instead of our fulffy dumplings that my mom made in our stews. This is my friends recipe.

1 teaspoon salt
1 pinch nutmeg (optional)
1/8 teaspoon white pepper
2 teaspoons baking powder
1 tablespoon melted butter
water or milk

Steps:

  • Melt the butter, add the flour, salt, pepper and a dash of nutmeg. Add enough of the cold water to bring to a soft but non sticky dough. Do not knead the dough, just bring together.
  • Roll out really thin on a floured board and cut into 2 inch squares.
  • Drop into boiling soup broth or a thin stew and replace lid on pot. Cook at least twenty minutes.

I created this recipe when I was craving chicken enchilada soup and chicken and dumplings at the same time. I decided to combine the ideas and used what was available in my pantry. My family and I were so pleased with the results. Serve with a bit of shredded cheese and sour cream as a garnish.

1 ½ pounds skinless, boneless chicken breast
10 cups water, divided, or more as needed
1 (12 ounce) can tomato paste
1 medium onion, chopped
8 cubes chicken bouillon, crushed
2 tablespoons chili powder
1 tablespoon chopped garlic
1 cup masa flour
½ cup all-purpose flour
1 tablespoon dried parsley
1 teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon salt
1 pinch ground black pepper

Steps:

  • Place chicken in a pot and add 8 cups water, or enough to cover; bring to a boil. Reduce heat to a simmer and cook until chicken is no longer pink in the center and the juices run clear, about 10 minutes. Remove chicken to a plate.
  • Transfer cooking liquid and more water (enough so total liquid measures 10 cups) to a 6-quart Dutch oven. Add tomato paste, onion, bouillon cubes, chili powder, and garlic. Cook over medium-high heat until onion is translucent and liquid is almost boiling, 5 to 10 minutes.
  • Meanwhile, cut chicken into bite-sized cubes. Grind enough chicken in a food processor to get 3 cups. Set aside ground chicken, and add remaining chicken cubes to the soup.
  • Prepare dumplings: Ladle out a small amount of soup and let cool for a few minutes. Combine ground chicken, masa, all-purpose flour, parsley, chili powder, cumin, salt, and pepper in a bowl. Add a small amount of cooled soup at a time and mix by hand to form a soft dough. (You can also mix in a food processor.)
  • Drop spoonfuls of dough into the hot soup. Cook, uncovered, until dumplings are cooked through, 8 to 10 minutes. They will be a bit on the dense side and will not puff up a lot like traditional dumplings.

1 roasting chicken
2 teaspoons tarragon
2 teaspoons thyme
2 garlic cloves, minced
2 cups celery, chopped
1 large onion, diced
3 large carrots, grated
3 cups flour
5 teaspoons baking powder
1 1/2 teaspoons salt
8 tablespoons canola oil
1 1/2 cups milk
6 cups water
salt and pepper

Steps:

  • Place chicken in a large stock pot. Add enough water to just cover chicken. Simmer covered, until chicken is cooked through.
  • Remove Chicken and debone, discard bones and skin. Chop remaining meat.
  • Add the rest of Soup ingredients, including chopped chicken, to the broth in the stock pot. Simmer uncovered, 2-3 hours, until veggies are tender.
  • For the dumplings, mix together flour baking powder and salt in a large bowl. Add oil and milk, mix until just combined.
  • Drop by heaping tablespoonfuls onto simmering soup. Do not mix. Cook for 10 minutes uncovered, then 10 minutes tightly covered. Serve hot by carefully scooping into bowls keeping dumplings intact.
