1 tablespoon extra-virgin olive oil
2 onions, diced (about 2 cups)
6 cloves garlic, sliced
11 ounces Mexican pork chorizo
2 tablespoons ground New Mexican chili powder
8 cups chicken stock
28 ounces canned crushed tomatoes
25 ounces canned hominy
2 boneless, skinless chicken breasts
2 limes, juiced
1 1/2 tablespoons kosher salt
Green cabbage, shredded
Jalapeno, sliced
Red radish, sliced
Ripe avocado, sliced
Fresh limes wedges
Fresh cilantro

Steps:

  • Heat the olive oil in a large pot over medium heat until the oil begins to smoke. Add the onions, garlic, chorizo and chili powder and cook until the onions are translucent and the pork is cooked, 4 to 5 minutes.
  • Add the chicken stock, crushed tomatoes and hominy and bring to a simmer.
  • Cut the chicken breasts into very thin slices. Place in a bowl with a pinch of salt and the lime juice. Mix together and let sit until the broth comes up to a simmer. Add the chicken to the soup and continue to simmer until cooked through, about 5 minutes. Season with salt.
  • Serve the soup in bowls topped with the shredded cabbage, shaved radish and jalapeno, sliced avocado, fresh lime wedges and cilantro.

2 cups sliced fresh carrots
1 medium onion, chopped

3 medium sweet potatoes, peeled and cubed
1 package (10 ounces) frozen corn
1 medium sweet red pepper, chopped
1 carton (32 ounces) reduced-sodium chicken broth
1 can (16 ounces) butter beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
1 can (5-1/2 ounces) reduced-sodium V8 juice
1 teaspoon hot pepper sauce
2 cups fresh spinach, chopped

Steps:

  • Crumble chorizo into a Dutch oven. Add the carrots, onion and garlic. Cook over medium heat until chorizo is fully cooked. Drain; remove and set aside., In the same pan, saute the chicken, salt and pepper in oil until no longer pink. Add sweet potatoes, corn and red pepper; cook 5 minutes longer., Stir in the chorizo mixture, broth, beans, tomatoes, V8 juice and pepper sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until vegetables are tender. Stir in spinach; cook until wilted.

1 teaspoon paprika

1 (14.5 ounce) can water
6 green onions, sliced

1 pound boneless skinless chicken breasts, cubed
2 tablespoons olive oil
1 medium onion, chopped
3 garlic cloves, minced
2 chipotle peppers in adobo sauce
2 cans (14-1/2 ounces each) chicken broth, divided
1 can (15 ounces) hominy, rinsed and drained
1 can (4 ounces) chopped green chilies
1 teaspoon dried oregano

Steps:

  • In a large skillet, brown chicken in oil. With a slotted spoon, transfer chicken to a 3- or 4-qt. slow cooker. In the same skillet, saute onion and garlic in drippings until tender; add to chicken., Place chipotle peppers and 1/4 cup broth in a blender or food processor; cover and process until blended. 1 pound chicken tendersSalt and pepper3/4 pound chorizo sausage (in packaged meats case near kielbasa at the grocery store)2 tablespoons extra virgin olive oil (EVOO)3 cloves garlic, smashed1 red bell pepper, chopped1 medium onion, chopped6 small red potatoes, diced1 can fire-roasted chopped tomatoes (15 ounces), such as Muir Glen brand1 can dark red kidney beans (15 ounces), drained2 teaspoons hot sauce1 quart chicken stock1 sack red or blue corn tortilla chips2 cups shredded pepper jack or smoked cheddarSuggested garnishes: chopped scallions, chopped cilantro or fresh thyme leaves

Steps:

  • Pre-heat medium soup pot over medium-high heat.Chop tenders into bite-size pieces. Wash up after handling raw meat, then season chicken with salt and pepper.Dice chorizo. Add EVOO and chicken to pot. Lightly brown chicken two minutes, then add the chorizo and garlic. Cook another 2-3 minutes, then add peppers, onions and potatoes. Cook five minutes, then stir in tomatoes, kidney beans and hot sauce. Half Lb Chorizo or Andouille Sausage, casings removed, cut in half, then sliced into half moons
1.5 Lb Chicken Tenders or Breasts, cut into bite size pieces
1 tsp Ground Cumin
1 tsp Ground Coriander
1 Bay Leaf
1 Med Onion, chopped
3 Garlic Cloves Chopped or 1 Tbs prepared Garlic
3 Celery Ribs, Chopped (aprox 3 oz)
1 Chipotle Chili in Adobo, finely chopped
1/2 Bunch of Kale, Washed, Trimmed of thick stems, leaves coarsly chopped
1 15oz can of Hominy, drained
32 oz Chicken Stock
Salt & Pepper to taste

Steps:

  • Preheat a soup pot over med high heat with EVOO. Add the chorizo and cook for 2 minutes. Add the cumin, coriander, bay leaf,onions, garlic, celery, chipotle, and cook for aprox 5 mintues stirring frequently. Add the kale, pushing it down into the pan to make it fit, then add the hominy and chicken stock and bring to a slow boil. Simmer for 10 minutes. At the chicken pieces and simmer for 5 minutes until cooked through. Remove bay leaf, add salt & pepper to taste.

6 oz chorizo sausage, finely chopped
1 carrot & 1 celery stalk chopped
2 cloves garlic smashed
1 tbls ground cumin
1 32oz container chicken broth
1 29oz can white hominy, rinsed
1/2 cup finely chopped cilantro
4 corn tortillas, warmed

Steps:

  • 1. In a large saucepan, heat the olive oil over med/high heat. Add the Chorizo, carrots, celery and garlic.
  • 2. Cook until the vegetables are slightly softened about 5 min. Add the cumin and stir occasionally for 3 min.
  • 3. Stir in the chicken broth and hominy and simmer for 20-25min, or until the vegetables are tender. Top with cilantro and serve with the warm tortillas.

This vibrant, hearty weeknight chicken soup is reminiscent of pozole, and achieved in record time. It starts with a base of onion and poblano pepper spiced with cumin, coriander and oregano. Broth is added, chicken thighs are simmered, then shredded, and cooked hominy is added for heft (though cooked rice would work equally well). The toppings stray from tradition: Crumbled tortilla chips provide crunch, as do snappy radishes; richness comes in the form of avocado or sour cream. 1 large yellow onion, finely chopped
1 large poblano chile, deseeded and finely chopped

1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon dried oregano, preferably Mexican oregano
1/2 teaspoon red-pepper flakes (optional)
Kosher salt and black pepper
6 cups homemade or store-bought low-sodium chicken stock
3/4 pound boneless, skinless chicken thighs
1 (15-ounce) can hominy, drained and rinsed, or 2 cups cooked rice
1 lime, quartered, for serving
Crumbled tortilla chips, thinly sliced radishes, diced avocado, roughly chopped cilantro, thinly sliced scallions or sour cream, for garnishing

Steps:

  • Heat the oil in a large stock pot or Dutch oven over medium. Add the onion and poblano and cook, stirring occasionally, until they have softened without taking on any color, 4 to 6 minutes. Add the garlic, cumin, coriander, oregano and red-pepper flakes, if using, and cook, stirring frequently, until the garlic and spices are fragrant, about 1 minute more. Season well with salt and pepper.
  • Add the stock and chicken and bring to a simmer. Cook until the chicken has cooked through and is no longer pink, 10 to 12 minutes. Using tongs or a slotted spoon, transfer the cooked chicken to a cutting board. When cool enough to handle, shred the meat.
  • Add the shredded chicken back to the pot along with the hominy and allow everything to simmer together for 5 to 10 minutes more. Season to taste with salt and pepper.
  • Ladle into soup bowls. Serve with limes, for squeezing on top, and bowls of optional garnishes.
