An easy peasy recipe with healthy chicken and brocolli and simple to make.

Steps:

  • Cook the chicken breasts for 20 minutes in a deep sided large casserole at 350F or Gas 4
  • While chicken is part cooking mix throughly all the sauce ingredients
  • When the chicken has been cooking for 20 minutes arrange the frozen brocolli around the chicken in the casserole.
  • Pour the sauce evenly over the chicken breasts and brocolli and sprinkle with the grated cheese.
  • Place back into the oven for a further 40 minutes or until golden brown. Enjoy with baby new potatoes and peas and carrotts.

ROTISSERIE CHICKEN/CAULIFLOUR/BROCOLLI BAKE



Rotisserie Chicken/Cauliflour/Brocolli Bake image

Ever have half a rotisserie chicken left over and wonder what to do with it? This is a wonderful option.

Number Of Ingredients 12

1 pkg fresh brocolli/cauliflour, 12 oz
3 c leftover, rottiserie chicken, bite size pieces
salt and pepper, to taste
SAUCE
3 Tbsp mayonaise
1/4 c half and half milk
1/4 c chicken broth
1 tsp dry mustard
1 c sharp cheddar cheese
TOPPING
1/2 c panko bread crumbs
1/4 c olive oil

Steps:

  • 1. Pre-heat oven for 375 degrees. Steam the veggies for about 2 or 3 minutes, then place in the bottom of large casserole dish that's been sprayed with oil.
  • 2. Layer the bite-size chicken over the veggies. Salt and pepper to taste.
  • 3. In a large bowl, mix all of the sauce ingredients, including the cheese and pour evenly over the chicken. Mash down on the top to make sure the liquid is dispersed.
  • 4. Sprinkle the top with panko bread crumbs and drizzle with a little olive oil. Bake for approximately 30 minutes.
