Broccoli Cheese Stuffed Chicken image

This cheesy broccoli chicken is the perfect comfort food on a cold day. By buying thin-sliced chicken cutlets, you save yourself the work of slicing them yourself, however feel free to cut regular-sized chicken breasts if you prefer. Slice in half horizontally, then pound thin to about a 1/4-inch thickness. Feel free to change up the flavor of The Laughing Cow® cheese for variety.

3 thin chicken breast cutlets
salt and ground black pepper to taste
3 wedges spreadable garlic and herb cheese (such as The Laughing Cow®), softened
1 cup frozen broccoli florets, thawed and finely chopped
¼ cup shredded sharp Cheddar cheese
8 toothpicks, or as needed
1 ½ tablespoons all-purpose flour
½ teaspoon paprika
1 tablespoon olive oil

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Pound chicken cutlets to 1/4-inch thickness between two pieces of plastic wrap. Sprinkle both sides of cutlets with salt and pepper. Set aside.
  • Mash cheese wedges with a fork in a small bowl and stir to a creamy consistency. Add broccoli and shredded Cheddar cheese and stir to combine.
  • Spread broccoli filling evenly over the middle of each cutlet. Start from one end, roll cutlets up and secure edges with toothpicks.
  • Combine flour and paprika in a shallow bowl. Dredge chicken rolls in the mixture.
  • Heat olive oil in a oven-safe skillet over medium-high heat. Place chicken rolls into skillet and cook until browned, 2 to 3 minutes. Turn over and brown the other side for an additional 2 to 3 minutes.
  • Place skillet into the preheated oven and bake until chicken is no longer pink in the center and juices run clear, 14 to 16 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove toothpicks and serve.

3-4 chicken breasts (boneless skinless (about 2 pounds))
1/2 tsp garlic powder
salt & pepper ( to taste)
12.6 oz frozen broccoli florets (thawed (1 package))
2 cans Campbell's condensed broccoli cheese soup
1 cup sharp cheddar cheese (shredded)
fresh parsley

Steps:

  • Preheat oven to 375˚F.
  • Lay the chicken breasts flat in a large baking dish. Sprinkle the garlic powder, salt and pepper over the chicken breasts to season them, then spread the broccoli florets on top.
  • Pour the broccoli cheese soup over the broccoli and chicken so that it is evenly covered and then top with the shredded cheddar cheese.
  • Bake for 45-55 minutes or until the chicken is cooked through (165˚F internal temperature.)
  • Garnish with parsley and serve over rice, mashed potatoes or your with your favorite side!

1 refrigertaed Pizza Crust (Pillsbury)
1 Cup of Cooked chicken
(any method -boiled or baked)
1 cup approx.Broccolli with Cheese Sauce (Green Giant Frozen)
Or make your own -Steam Broccolli and add Cheese Sauce
Shredded Cheese (optional)-Cheddar or Mozzarella
1 egg
Sesame seeds (optional)

Steps:

  • Roll out Pizza dough on parchment paper sprayed with non stick spray. Extend it to lenght you want ,this will make thickness of bread thinner when it bakes.In the middle of this rectangle of dough place the cooked chicken and broccolli with cheese sauce and shredded cheese. Cut dough on opposite sides of the filling at a \ slant /on the left side and \ on the right side. starting at the top fold over the middles section over the filling so there are openings on the top for steam to escape. once you are done with this procedure , Beat 1 egg with 1 tablespoon of water or milk. Brush this over the entire pizza dough. Sprinkle with sesame seeds. Bake in oven for approx. 25 minutes at 350 degrees.

Chicken With Broccoli and Cheese image

This is a tried and true recipe I've made for years and one of my favourites both for ease and very few dishes to wash. It's also a family favourite and it is time to get it written down so I don't forget how to make it :). Even my non-broccoli kids will eat this one. It's really lovely served with egg noodles.

15 ml extra virgin olive oil
3 chicken breasts
3 garlic cloves, minced
sea salt, to taste
fresh ground pepper, to taste
284 ml cheddar cheese soup
125 ml chicken broth
250 ml broccoli florets
125 ml swiss cheese, shredded
80 -125 ml half-and-half cream (optional)

Steps:

  • Sprinkle both sides of chicken breasts with sea salt & fresh ground pepper.
  • Cut chicken into strips or cubes, your preference.
  • Preheat a large heavy fry pan or electric fry pan to medium high.
  • Heat oil in pan, lightly brown meat, remove from pan (I use the lid of my electric fry pan, it's deep enough and less dishes too :D ).
  • Saute minced garlic for approximately 2 minutes.
  • Add chicken broth to pan (you can substitute milk for a lower fat content) and deglaze chicken bits from bottom of pan.
  • Add can of cheddar cheese soup and stir well.
  • Stir in chicken pieces and broccoli florets (if using frozen, thaw broccoli and save until last 5 minutes of simmer time).
  • Reduce heat, cover pan and simmer for 20 minutes, stirring occasionally (remember to add the thawed broccoli after 15 minutes if using frozen).
  • Uncover pan, increase heat to medium, stir in shredded swiss cheese and cook an additional 5 minutes, reducing sauce. You can also add 80- 125 ml (1/3 to 1/2 cup) of half an half at this point for a creamier sauce).
  • Serve over noodles or rice.
