1 cup chicken broth
3 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon ground ginger
2 tablespoons vegetable oil
4 large skinless, boneless chicken breast halves, cubed
2 cloves garlic, minced
1 ½ cups sliced fresh mushrooms
2 (8 ounce) cans sliced water chestnuts, drained
3 cups snow peas
1 tablespoon sesame seeds

Steps:

  • Whisk the chicken broth, soy sauce, cornstarch, and ginger together in a small bowl; reserve.
  • Heat oil in a large skillet or wok. Cook and stir chicken and garlic in the oil until chicken is cooked through, 8 to 10 minutes. Stir in mushrooms, water chestnuts, and reserved chicken broth mixture. Cook until sauce begins to thicken, 3 to 5 minutes.
  • Stir snow peas into the pan and cook until tender, 3 to 5 minutes. Transfer to a platter and sprinkle with sesame seeds before serving.

500 g chicken thigh pieces, sliced
1 tablespoon cornflour
1/3 cup dry sherry
1/3 cup chicken stock
1 tablespoon soy sauce
2 tablespoons oil
1 clove garlic, chopped
2 teaspoons ground ginger
3 small onions, quartered
snow peas, topped and tailed (a handful)
60 g unsalted cashews

Steps:

  • Mix together the cornflour, sherry, stock, and soy sauce.
  • Set aside.
  • Place oil and garlic in a wok or large fry pan, heat over medium heat until the garlic sizzles.
  • Add the chicken and stir fry until lightly brown.
  • Reduce heat, add ginger, onions and continue to stir fry for 2 minutes.
  • Add snow peas and cashew nuts and cook 1 minute more.
  • Stir the cornflour and sherry mixture and pour into the wok, continue to stir over heat until sauce thickens.
  • Pile onto serving dish and serve with rice.

2 boneless skinless chicken breasts, cut into 1 1/2-inch pieces
1 teaspoon soy sauce
1/4 cup cornstarch
1/2 cup vegetable oil for frying
1/3 cup orange juice
2 teaspoons cornstarch
1 tablespoon vegetable oil
2 cloves garlic, finely chopped
2 teaspoons finely chopped peeled fresh gingerroot
1 teaspoon grated orange peel
1/4 teaspoon crushed red pepper flakes
1/2 cup Progresso™ chicken broth (from 32-oz carton)
2 teaspoons soy sauce
2 teaspoons unseasoned rice vinegar
2 tablespoons sugar
1 tablespoon vegetable oil
3 oz snow peas, sliced (about 1 cup)
2 medium carrots, thinly sliced

Steps:

  • In medium bowl, toss chicken pieces and soy sauce.
  • In small bowl, beat orange juice and 2 teaspoons cornstarch with whisk until cornstarch is dissolved.
  • In 10-inch skillet, heat 1 tablespoon oil over medium heat. Add garlic, gingerroot, orange peel and pepper flakes; stir-fry about 30 seconds or until fragrant. Add broth, 2 teaspoons soy sauce, the vinegar and sugar; stir about 30 seconds or until sugar dissolves. Stir orange juice mixture, then add it to skillet. Heat sauce to boiling, stirring. Reduce heat to low; simmer 1 minute. Transfer sauce to bowl; wipe out skillet.
  • Line large rimmed cookie sheet with paper towels.
  • Place 1/4 cup cornstarch in shallow bowl. Toss chicken in cornstarch, coating evenly and gently knocking off any excess; transfer to plate.
  • In 4-quart Dutch oven, heat 1/2 cup vegetable oil over medium-high heat. Carefully add coated chicken to hot oil, spacing pieces apart from each other. Fry chicken 5 to 7 minutes, turning once or twice, until deep golden. Using slotted spoon, transfer chicken to paper towel-lined cookie sheet.
  • In same skillet used for sauce, heat 1 tablespoon oil over medium heat. Add snow peas and carrots; cook 3 to 4 minutes, stirring frequently, until vegetables are just tender. Add chicken and reserved sauce; stir until heated through and thoroughly coated in sauce.

4 chicken breast halves, skinless and boneless, about 1 1/4 pounds
1 tablespoon cornstarch
2 tablespoons light soy sauce
2 tablespoons dry white wine or water
3 tablespoons olive oil
1/2 teaspoon red pepper flakes (optional)
Salt and freshly ground pepper
2 large sweet red peppers, cored, seeded and cut into 1/2-inch cubes
1/4 pound snow peas, trimmed and washed
1/2 cup sliced water chestnuts or bamboo shoots
1/4 cup coarsely chopped red onion
1 tablespoon sesame seeds
1 tablespoon finely chopped garlic
1 tablespoon grated fresh ginger
3/4 cup fresh or canned chicken broth
4 tablespoons coarsely chopped fresh coriander

Steps:

  • Using a sharp knife, cut chicken breasts in half lengthwise then crosswise into slices 1/2 inch thick.
  • In a small mixing bowl, combine the cornstarch, soy sauce and white wine or water, blend well and set aside.
  • In a wok or a large nonstick skillet, add oil over high heat. Add chicken, pepper flakes and salt and pepper. Cook and stir about 1 minute. Scoop out the chicken pieces, leaving the oil. Set aside.
  • Add red peppers, snow peas, water chestnuts or bamboo shoots, onions and sesame seeds and cook over high heat, stirring, about 1 minute or until crisp and tender. Add garlic and ginger. Cook briefly over high heat. Add chicken and chicken broth. Cook stirring and tossing for 1 more minute.
  • Add cornstarch mixture, cook and stir for 15 seconds. Sprinkle with coriander and serve immediately.

4 tablespoons vegetable oil
1 lb boneless chicken thighs
2 carrots, sliced
2 celery ribs, sliced
1/2 cup shallot, chopped
2 tablespoons fresh ginger, grated
2 garlic cloves, minced
2 teaspoons curry powder
3 cups chicken stock
1/2 cup smooth peanut butter
1 cup coconut milk
2 tablespoons cornstarch
1 1/2 cups medium grain rice, cooked according to package directions
2 teaspoons saffron
1/2 lb snow peas, trimmed
1/4 cup peanuts, ground
salt and pepper

Steps:

  • In a large stockpot or Dutch oven, heat 2 tablespoons of the oil and cook all sides of the chicken pieces until lightly browned. Remove chicken from pot and season with salt and pepper.
  • Add 1 tablespoon of oil. Add carrots and celery and cook until softened.
  • Add shallots, ginger and garlic and cook until shallots soften.
  • Add curry powder, stir for 15 seconds and pour in the stock.
  • Return chicken to the pot. Add water to barely cover the chicken. Heat to a boil and then reduce heat and simmer uncovered until chicken is fully cooked (no pink). Internal chicken should be approximately 170°F.
  • Prepare rice according to package instructions. Half way through rice preparation, add the saffron.
  • Stir in peanut butter. Whisk coconut milk and cornstarch in a separate bowl. Add to pot and bring to a simmer.
  • In a sauté pan, heat the remaining tablespoon of oil. Add snow peas and toss for one minute. Add 2 tablespoons of water and cook until crispy.
  • To serve, place chicken on top of rice and spoon with sauce. Place snow peas on top and garnish with the peanuts.

  • In a bowl stir together 1 teaspoon of the cornstarch, 1 1/2 teaspoons of the soy sauce, 2 teaspoons of the vinegar, 1/2 teaspoon of the sesame oil, and 1 tablespoon of the water until the cornstarch is dissolved, add the chicken, and let it marinate for 15 minutes. In a small bowl stir together the remaining 1 tablespoon cornstarch, 2 tablespoons soy sauce, 2 tablespoons vinegar, 1 teaspoon sesame oil, and 1/3 cup water with the sugar, the salt, and the broth until the cornstarch is dissolved and reserve the mixture. In a wok or large heavy skillet heat the vegetable oil over moderately high heat until it is hot but not smoking, in it stir-fry the chicken mixture until the chicken is opaque and just cooked through, and transfer the chicken with a slotted spoon to a sieve set over a bowl. Discard all but about 2 tablespoons of the oil remaining in the wok and in it stir-fry the scallion, the garlic, and the gingerroot for 10 seconds, or until the mixture is fragrant. Add the bell pepper and the snow peas and stir-fry mixture for 1 minute. Add the reserved broth mixture and the chicken and stir-fry the mixture for 1 minute, or until the chicken is heated through. Serve the chicken stir-fry over the rice.

Add the snow peas and cook 15 seconds, then remove from the boiling water using a skimmer or slotted spoon and transfer to the ice water. Allow the peas to sit in the ice water for a few minutes, then drain.
  • Heat a wok or a large skillet over high heat. Add the peanut oil. 2 cans (14.5 ounces each) reduced-sodium chicken broth
1 piece fresh lemongrass (3 inches), smashed, or 3 sticks dried lemongrass
1 piece peeled fresh ginger (1 inch), cut into matchsticks
2 boneless, skinless chicken breast halves (6 to 8 ounces each), thinly sliced crosswise
8 ounces snow peas, trimmed and halved
2 tablespoons fresh lime juice, plus lime wedges for serving
1/4 cup fresh mint leaves
Asian chile sauce (such as Sriracha), for serving (optional)

Steps:

  • In a large pot of boiling salted water, cook noodles according to package instructions. Drain noodles. In a saucepan, combine chicken broth, lemongrass, ginger, and 3 cups water. Bring to a boil; reduce to a simmer, cover, and cook until fragrant, 10 minutes.

4 garlic cloves, peeled and minced
2 tablespoons soy sauce

2 -3 tablespoons cornstarch (UK cornflour)

2 tablespoons peanut oil
20 snow peas, ends and strings removed
1 cup sliced water chestnuts, drained

Sweet and Spicy Ginger Chicken Drumsticks With Snow Peas and Mus image

I decided to try my hand at "Ready Set Cook". I chose 5 ingredients off the list, and this is what I came up with. Serve it over rice and you have a very tasty meal. I hope you all enjoy. Please Note: Prep time does not include marination time needed for chicken.

1 1/4 cups sweet chili sauce (found in the Asian food isle at your local grocery store)
1 cup soy sauce
1/8 cup fresh ginger, cut into strips
1 tablespoon sesame seeds
3 spring onions, green portion only, chopped
2 teaspoons red pepper flakes
8 chicken drumsticks
3 1/2 cups snow pea pods, fresh
8 ounces sliced mushrooms
1 (8 ounce) can water chestnuts, drained
2 tablespoons peanut oil or 2 tablespoons vegetable oil

Steps:

  • With your potato peeler peel a portion of skin off of the ginger. Continue to peel strips of the cream flesh of the ginger until you have approximately 1/8 cup. If desired, you can take a knife and cut the ginger into smaller pieces at this point. My family happens to like ginger, so I leave it in long strips. Place remaining ginger in a freezer bag and place in freezer for later use.
  • Add the sweet chili sauce, soy sauce, fresh ginger, sesame seeds, spring onions, and red pepper flakes to a gallon sized ziplock bag and give it a shake to combine.
  • Place chicken drumsticks into bag and seal. Place bag in the refrigerator and allow chicken to marinade for a minimum of 4 hours.
  • Once chicken has marinated, preheat oven to 400 degrees. Carefully remove chicken from bag and set marinade aside. Do Not discard.
  • Place chicken on a greased baking sheet. Cook legs 15 minutes at 400 degrees then flip and cook an additional 15 minutes.
  • While chicken is in the oven, cook rice if desired; according to package directions.
  • During the last 15 minutes of cooking the chicken, pour oil into a wok or large skillet and heat over high heat. When oil is good and hot, add the sliced mushrooms, snow pea pods, and water chestnuts and quickly stir-fry until snow peas are crisp tender. Remove vegetables to a plate and set aside.
  • Turn the heat down on on your wok or pan and add the marinade sauce. Bring the sauce to a boil and cook approximately 5 minutes. Add vegetables, and chicken drumsticks to the sauce and give a quick stir to coat all ingredients.
  • Spoon vegetables and sauce over rice and top each serving with two drumsticks.

  • In a mixing bowl add chicken meat, salt, pepper, sugar, egg white, sesame oil, oil and cornstarch and combine well and set aside for 10 minutes.

I love this recipe-very light and fast. If you wish you can sub shrimp for the chicken, and I have been known to add a can of drained mandarin oranges to the mix.

4 tsp vegetable oil,divided
1 1/2 c thinly sliced sweet red bell peppers
1 1/2 c snow peas, trimmed
1 small onion, cut into thin strips or wedges
1 lb boneless, skinless chicken breat, cut into thin strips
1/4 c white rice flour
1 tsp salt
1 c chicken stock
4 tsp fresh lemon juice
2 tsp sugar
1 tsp vegetable oil
4 tsp cornstarch
1 tsp sesame oil
1 tsp fresh lemon zest
2 clove garlic, minced
2 tsp chopped fresh parsley or cilantro

Steps:

  • 1. Prepare vegetables, set aside.
  • 2. Place rice flour and salt in a medium mixing bowl, whisk to combine.
  • 3. Thinly slice chicken, toss with rice flour. Set aside.
  • 4. In a medium saucepan combine the chicken stock, lemon juice, sugar, sesame oil, cornstarch, 1 teaspoon vegetable oil, lemon zest and garlic.
  • 5. Whisking constantly, bring sauce mixture to a boil over medium high heat.
  • 6. Cook for 3 minutes or until sauce has thickened.
  • 7. Remove from heat and set aside.
  • 8. In a large skillet or wok heat 2 teaspoons vegetable oil over medium-high heat.
  • 9. Add peppers, snow peas and onions.
  • 10. Stir/toss constantly until tender/crisp, about 2-3 minutes.
  • 11. Using a slotted spoon remove to a large serving bowl, set aside.
  • 12. Add remaining 2 teaspoons vegetable oil.
  • 13. Add coated chicken strips, stir-fry for 8 minutes or until done. (8 minutes is the longest you want to cook your chicken unless it's cut thick)
  • 14. Using a slotted spoon remove chicken and place it on top of the pepper/snow pea mixture.
  • 15. Quickly reheat sauce.
  • 16. Pour half of the sauce over the chicken mixture-stir or toss well to combine.
  • 17. Reserve the rest of the sauce to serve at the table.
  • 18. Serve over hot white rice.
  • 19. You can easily sub shrimp for the chicken if you prefer.

Steps:

1/2 teaspoon sugar
1 teaspoon cornstarch
1 teaspoon Shaoxing rice wine or dry sherry
1 tablespoon light (regular) soy sauce
3/4 pound boneless, skinless chicken breast, cut crosswise into slices 1/4 inch thick
Flavoring Sauce
1/2 teaspoon sugar
1/8 teaspoon white pepper
1 1/2 teaspoons cornstarch
1 tablespoon water
1 tablespoon light (regular) soy sauce
1 1/2 teaspoons oyster sauce
2 teaspoons sesame oil
2 tablespoons canola or other neutral oil
3 quarter-sized slices ginger, peeled and lightly bruised
1/2 small yellow onion, sliced lengthwise 1/4 inch thick
1/2 pound fresh oyster mushrooms, torn in half if large
1/4 pound snow peas, trimmed, strings removed, and cut in half on the diagonal if large

Steps:

  • To make the marinade, in a large bowl, combine the salt, sugar, cornstarch, wine, and soy sauce and stir to dissolve the sugar and cornstarch. Add the chicken and mix to coat evenly.
  • To make the flavoring sauce, in a small bowl, combine the sugar, white pepper, cornstarch, water, soy sauce, oyster sauce, and sesame oil and stir well.
  • In a wok or large skillet, heat 1 tablespoon of the oil over high heat until hot but not smoking. Add the ginger and stir-fry for about 30 seconds, or until fragrant. Add the chicken in a single layer and cook, undisturbed, for about 1 minute, or until it begins to brown. Using a spatula, flip the chicken and stir-fry for 1 to 2 minutes, or until it has taken on color but is still slightly undercooked. Transfer to a plate.
  • Add the remaining 1 tablespoon oil to the pan and heat until hot. Add the onion and stir-fry for about 1 minute, or until fragrant. Add the mushrooms, snow peas, carrot, and 2 tablespoons of the water. Stir-fry for 1 minute, or until the water has evaporated. Repeat with the remaining 2 tablespoons water.
  • Return the chicken and its juices to the pan and stir-fry briefly to finish cooking. Add the flavoring sauce and stir-fry for 1 minute. Transfer to a serving plate and serve.

2 tablespoons sugar
3 tablespoons low sodium soy sauce

1 teaspoon dark sesame oil
1 1/2 cups matchstick-cut carrots
1 cup thinly sliced red bell pepper
2 cups chopped cooked chicken breasts
2 cups snow peas, trimmed
1/4 teaspoon salt
1/3 cup dry-roasted unsalted peanuts

Steps:

  • Cook rice according to package directions, omitting salt and fat. Keep warm.
  • Combine sugar and next 4 ingredients (through ginger) in a small bowl.
  • Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add oil to pan. Add carrots and pepper to pan; sauté 2 minutes.
  • Add chicken and peas to pan; sauté 1 minute. Transfer chicken mixture to a large bowl; stir in salt.
