This is a delicious twist to broccoli, rice, and cheese casserole, and is VERY easy to make. You can also cut this in half. I use the 1 can cream of mushroom soup when I make half. You can also leave out the onion. It just gives it a little added flavor, but is still very good without it.

2 cups water
2 cups uncooked instant rice
2 (10 ounce) cans chunk chicken, drained
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
¼ cup butter
1 cup milk
1 (16 ounce) package frozen chopped broccoli
1 small white onion, chopped
1 pound processed cheese food

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan, bring the water to a boil. Mix in the instant rice, cover, and remove from heat. Let stand 5 minutes.
  • In a 9x13 inch baking dish, mix the prepared rice, chicken, cream of mushroom soup, cream of chicken soup, butter, milk, broccoli, onion, and processed cheese.
  • Bake in the preheated oven for 30 to 35 minutes, or until cheese is melted. Stir halfway through cooking to help cheese melt evenly.

3/18/13. I've updated this recipe to include alternate choices for the canned chicken the original recipe called for. Lately, I've been using store bought rotisserie chicken. I've seen a lot of recipes for broccoli, cheese and rice casseroles. However, this takes it from a side dish to a main meal casserole. It fills up the sink with dirty dishes, but that is the only draw back. You can make umpteen variations to customize the taste to your liking. I will offer substitution possibilities in the instructions.

1 1/2 cups cooked chicken (bake it yourself, rotisserie or canned)
3 cups cooked rice (1 cup uncooked)
2 cups frozen chopped broccoli
1 (8 ounce) can cream of chicken soup
1 (8 ounce) can cream of mushroom soup
1/2 cup margarine
1/2 cup chopped onion
6 ounces shredded cheddar cheese

Steps:

  • Drain 2 cans of chicken breast meat (You can substitute home boiled chicken or rotisserie- just chop it small).
  • Boil broccoli till tender; drain.
  • Boil rice. (You can substitute a packet of broccoli cheese rice mix such as Lipton's. Depending on amount of rice you want, might want to make two packets).
  • Melt margarine in large frying pan. Saute onions till glassy. Add both soups and stir well. Add cheese and mix till melted. Remove from heat.
  • Lightly grease a 13 x 9 glass dish.
  • Spread rice evenly over bottom of dish.
  • Spread broccoli over rice layer.
  • Pour 1/3 of cheese sauce over the broccoli and rice and spread evenly.
  • Spread chicken on top of cheese sauce and top with remaining sauce.
  • If desired, sprinkle more shredded cheese on top.
  • Bake at 350 for 30 minutes.

1/4 cup all-purpose flour
2 cups low-sodium chicken broth
Kosher salt and freshly ground black pepper
3/4 cup shredded sharp Cheddar
4 cups medium broccoli florets
Cooking spray
3 cups frozen brown rice, thawed
1 rotisserie chicken, skinned, white and dark meat shredded (about 4 cups)
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Put the flour and broth into a large saucepan and whisk until the flour is dissolved. Place the saucepan over medium heat and whisk continuously until the mixture comes to a boil; continue to whisk until the mixture is thick enough to coat the back of a spoon, 10 to 12 minutes. Remove the saucepan from the heat and whisk in 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Add the Cheddar and whisk until melted. Add the broccoli florets and stir to coat.
  • Spray a 3-quart flameproof casserole dish with cooking spray. Toss the brown rice and chicken in a large bowl. Pour the broccoli-cheese sauce on top and mix well. Spread the mixture in the casserole dish and top with the Parmesan. Cover with foil and bake until bubbling and hot, about 25 minutes. Remove the foil and broil until the top is nicely browned, 2 to 5 minutes Serve hot.
  • Make-Ahead Tip: Freeze the baked casserole for up to 2 weeks. Cover in foil and reheat at 350 degrees F until hot, 35 to 45 minutes.

2 quarts water
1 teaspoon salt
2 cups elbow macaroni
1/4 cup butter
1/4 cup all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon dry mustard
2 cups milk
1/4 cup pimiento, chopped
1/4 cup green pepper, chopped
2 cups cheddar cheese, coarsely grated
1 cup chicken, slivered and cooked
1 large tomatoes, cored and cut into wedges

Steps:

  • Preheat oven to 375.
  • Put water in a large sauce pot, add salt, and bring to a rolling boil over high heat.
  • Add macaroni all at once and stir with a fork.
  • Return water to a boil and reduce heat to moderately low. Simmer 4 to 5 minutes or until tender. Do not overcook. Drain.
  • Meanwhile, put butter in a medium-sized saucepan and heat over moderate heat.
  • When butter is melted, remove from heat and stir in flour, salt, pepper, and mustard.
  • When mixture is smooth, gradually add milk, stirring until no lumps of flour remain.
  • Return saucepan to heat and cook over moderately high heat, stirring constantly, until milk mixture comes to a boil and thickens slightly.
  • Add chopped pimiento and chopped green pepper and reduce heat to low and simmer 1 minute longer.
  • Stir 1 1/2 cups of the grated cheddar cheese, the cooked and drained macaroni, and the slivered chicken into the milk mixture.
  • Pour into a shallow 2 quart round or oval or round baking dish.
  • Sprinkle the rest of the grated cheddar cheese over the top of the macaroni mixture.
  • The casserole can be prepared to this point 1 to 2 days before you plan to bake and serve it. You can cover and store in refrigerator until ready to bake.
  • Place casserole on center oven rack in oven and bake for 20 minutes (longer if casserole has been chilled), or until macaroni is hot and bubbly and the cheese is melted.
  • Remove from oven and arrange tomato wedges on top of casserole and serve.

2 large boneless skinless chicken breasts, cut horizontally
8 oz cream cheese, softened
2 cup spinach, rinsed
1 tablespoon olive oil
4 oz Mozzarella cheese, shredded
3 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon red pepper flakes, optional
1/2 teaspoon Italian seasoning, optional

Steps:

  • Add olive oil, garlic, Italian seasoning, and red pepper flakes into a Ziplok bag along with 1 teaspoon of salt and ½ teaspoon black pepper. Seal the bag and shake until mixed. Add the chicken breasts, seal, and massage so the chicken is covered in the marinade, set aside for 10-15 minutes while you prep the remaining ingredients. Position a rack in the center of the oven and preheat the oven to 400ºF (200°C). 2. Quickly wilt the spinach in a skillet with 1 tablespoon olive oil, set aside. 3. Arrange chicken breasts drained from the marinade in a baking dish. Spread the softened cream cheese over the chicken and lay spinach on top of the cream cheese. Finally, sprinkle mozzarella over the top. 4. Bake the chicken casserole for 20-30 minutes. Chicken is done when cooked through to an internal temperature of 165˚F (75°C). 1 ½ slices grated Monterey Jack cheese
¾ cup milk

Steps:

  • Place bacon pieces in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels. Crumble once cool enough to handle.
  • Season chicken pieces lightly with salt and pepper.

1 bag(s) (16 ounces) frozen broccoli florets (petite size)
1 can(s) (10 ounce) cream of mushroom soup
1 c milk
1/2 c shredded mozzarella cheese
1/2 c shredded sharp cheddar cheese
1/2 c fine bread crumbs
1/4 c butter

Steps:

  • 1. Parboil the broccoli florets until still crisp-tender and then drain well. Place the prepared broccoli florets in a 3 quart casserole dish.
  • 2. In a small bowl, mix together the soup, milk and 1/2 cup Mozzarella cheese. Pour soup mixture over the broccoli and spread evenly. Sprinkle 1/2 cup Cheddar cheese over the top of the soup mixture.
  • 3. Melt butter in saucepan. Mix butter and bread crumbs together. Spread bread crumb mixture over the top of the casserole to cover.
  • 4. Bake at 350 degrees for 30 minutes, uncovered. You can also add cubed chicken to this recipe (2 cups). Place the chicken over the broccoli layer and then pour the soup mixture over that.
  • 5. You can serve it over rice.

1 box Kraft Mac and cheese (the kind with gooey cheese
1 can cream of chicken soup
1 can cheddar cheese soup
1.5 pounds uncooked diced chicken breast
1 bag (16 oz.) frozen broccoli, thawed
Salt, pepper
1/2 cup shredded cheese

Steps:

  • Boil pasta halfway, rinse with cold water, then add cheese package to pasta.
  • Preheat oven to 400 degrees F. In baking dish combine all ingredients, except shredded cheese; Mix evenly.
  • Bake approx. 20 minutes, then pull out and top with shredded cheese. Bake additional 20 minutes or until chicken is done. Let cool before serving.

Just a quick casserole I threw together with what I had in the kitchen. I figured I'd put it on Zaar to get the nutritional info.

2 cups rotini noodles
1 1/2 cups diced cooked chicken breasts
1 teaspoon butter
1/2 cup onion, chopped
1 cup celery, chopped
1 (10 ounce) can cream of mushroom soup
1/2 cup skim milk
1 3/4 cups light cheddar cheese, grated, divide into 1 cup and 3/4 cup
1 teaspoon ground pepper

Steps:

  • Oven at 375f.
  • Cook noodles as per package directions. Drain and set aside.
  • In a small saucpan, melt butter and sautee onions and celery, until onions are tender. Add cream of mushroom soup and milk.
  • Stir until bubbling. Add one cup of grated cheese and pepper. Stir until melted.
  • In a casserole dish, combine noodles, chicken and cream of mushroom soup mix. Stir until blended. Top with 3/4 cup of cheese.
  • Bake for 30-35 minutes.

2 cups cut-up cooked chicken
1 can (11 oz.) Green Giant® Mexicorn® whole kernel corn with red and green peppers, drained
1 can (10 3/4 oz.) condensed cream of chicken soup
2 cups shredded Monterey Jack cheese (8 oz.)
1 2/3 cups Original Bisquick® mix
2/3 cup milk

Steps:

  • Preheat oven to 375°F. In 8-inch square (2-quart) glass baking dish, mix chicken, corn, soup and cheese.
  • In medium bowl, stir Bisquick mix and milk with fork or wire whisk until soft dough forms. Place dough on surface dusted with Bisquick mix. Knead 10 times. Roll into 7 1/2-inch round, 1/2 inch thick. With 2 1/2-inch round cutter, cut 6 biscuits. Place on chicken mixture.
  • Bake 20 to 25 minutes or until biscuits are golden brown.

4 c cooked chicken chopped into piece
2 c croutons
1 1/2 c shredded swiss cheese
1 bunch green onions chopped
1 c frozen peas
1 c miracle whip
1 c heavy cream

Steps:

  • 1. Mix all ingredients except miracle whip and milk. Mix the miracle whip and milk together and pour over chicken mixture. Stir until well incorporated.
  • 2. Pour into greased casserole dish. Bake at 350 degrees 30 minutes
