MOM'S CHICKEN ASPARAGUS CASSEROLE
This is my favorite dish of my mother's. I still request it every year for my birthday dinner. We serve it over egg noodles. The "goop" is delicious!

I looked in my fridge and pantry and made up this recipe. I'm sure there are others similar as the ingredients are so common. But, to me... it is DELICIOUS and light!

Steps:
- Heat pan on medium heat (5.5). Add oil and swirl. Brown onions for about 8 minutes. Remove from pan and reserve.
- In the same pan, brown chicken breast (cook it almost all the way through). Deglaze with the lemon juice. Add asparagus stems. Cover and cook until almost done then add tips and water chestnuts. Return cover.
- From time to time, you may have to spash some chicken stock in the pan.
- Add 1 cup minute rice. Toss. Add 1 - 1/4 cup chicken stock. Toss and pat mixture down, even in the pan. Cover. Bring to a boil then remove from heat.
- Allow to stand for 5 minutes with the lid on to cook the rice, before serving.

- In a large bowl, whisk the eggs, milk and butter. Combine flour and salt; add to egg mixture and mix well. Refrigerate for 1 hour., Heat a lightly greased 8-in. nonstick skillet over medium heat; pour 1/4 cup batter into center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. When cool, stack crepes with waxed paper or paper towels in between., Saute asparagus and onion in oil until tender. Add mushrooms and cook 2 minutes longer. Remove from the heat and stir in chicken. Set aside., For sauce, in a small saucepan, melt butter over medium heat. Stir in the flour, salt and pepper until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened., Spread about 1/2 cup filling down the center of each crepe; top with 2 tablespoons sauce and 1 piece of Swiss cheese. Roll up and place seam side down in each of two greased 11x7-in. baking dishes. Sprinkle with mozzarella cheese., Bake, uncovered, at 350° for 20-25 minutes or until a bubbly.

BIG OLE BILL'S CHICKEN ASPARAGUS BAKE

- Preheat oven to 350 degrees.
- Rub Chicken with a Tablespoon of Olive Oil. Season with Salt and Pepper. Place on a baking sheet and bake for 30 to 40 minutes or until cooked through. Let cool and chop.
- Cook Egg Noodles according to package, drain and set aside.
- Preheat oven to 350 degrees. Lightly grease a 13x9 inch baking dish and set aside.
- Drain Chopped Asparagus and set aside.
- Heat the 2 teaspoons of Olive Oil in a medium skillet over medium heat. Add the chopped Bell Pepper, Onion and Garlic. Cook until crisp-tender.
- Mix Soup, Eggs, Ricotta, salt, pepper and 1 cup Cheddar Cheese in a large bowl mix well.
- Add Onion mixture, Chicken, Asparagus and Noodles; mix well.
- Spread evenly in greased baking dish. Sprinkle evenly with remaining Cheddar Cheese.
- Bake until center is set and cheese is bubbly, about 30 minutes.
- Remove from oven a and let stand for 5 minutes.
- Serve with Red Bell Pepper strips or Fresh Italian Parsley if desired.
CHICKEN WITH GARLIC POTATOES AND ASPARAGUS

- Put a rimmed baking sheet on the lowest oven rack and preheat to 425 degrees F. Toss the potatoes and garlic cloves with 1 tablespoon olive oil, 1/4 teaspoon salt and a few grinds of pepper in a bowl; set aside.
- Season the chicken with 1/2 teaspoon salt and a few grinds of pepper. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the chicken; cook until browned, 1 1/2 to 2 minutes per side. Transfer to the hot baking sheet. Scatter the potatoes and garlic around the chicken; reserve the bowl. Bake until the chicken is just cooked through, about 5 minutes. Transfer the chicken to a plate and tent with foil; leave the potatoes and garlic on the baking sheet.
- Add the asparagus and tomatoes to the reserved bowl; toss with the remaining 1 tablespoon olive oil and 1/4 teaspoon salt. Add to the baking sheet with the potatoes. Bake until the vegetables are tender and the tomatoes start to burst, 13 to 15 minutes.
- Remove the baking sheet from the oven; switch the oven to broil. Toss the parmesan, parsley and lemon zest in a small bowl. Nestle the chicken in the vegetables and sprinkle everything with the parmesan mixture. Broil until golden, 1 to 2 minutes.

- If desired, partially cook asparagus; drain. Place the asparagus in a greased 9-in. square baking dish. In a skillet over medium heat, brown the chicken in oil on both sides. - In a large skillet, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry., Flatten chicken to 1/4-in. thickness. Spread mustard over one side of each chicken breast. Down the center of each, place two sage leaves, a cheese slice, ham slice and four asparagus spears. - Season pounded chicken breasts lightly with salt and freshly ground pepper.
- Place 2-3 asparagus spears on each chicken breast half.
- Roll up tightly; secure with toothpicks, if necessary.
- Set aside.
- Combine flour, garlic, 1/2 tsp salt, 1/2 tsp thyme and paprika.
- Roll chicken in flour mixture.
- Place onions and diced tomatoes on bottom of 13x9" pan, reserving 8 slices of onion for top.
- Place chicken breasts over vegetables; top with reserved onion and tomato slices.
- Combine broth with remaining salt and thyme; pour around chicken.
- Cover pan loosely with foil and bake at 350 degrees for 30 minutes.
- Uncover and bake until tender, about 10-15 minutes.
