1 medium onion, chopped
1/4 cup butter
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (8 ounces) mushroom stems and pieces, drained
1 can (5 ounces) evaporated milk
2 tablespoons chopped pimientos
2 teaspoons soy sauce
1/2 teaspoon pepper
1/4 teaspoon hot pepper sauce
2 cups shredded cheddar cheese
5 to 5-1/2 cups cubed cooked chicken
1 package (10 ounces) frozen cut asparagus, thawed
3 tablespoons chopped almonds

Steps:

  • In a large saucepan, saute onion in butter until tender. Stir in the soup, mushrooms, milk, pimientos, soy sauce, pepper and pepper sauce. Stir in cheese until melted., In a greased shallow 2-1/2-qt. baking dish, layer half of the chicken, asparagus and cheese sauce. Repeat layers. Sprinkle with almonds. Bake, uncovered, at 350° for 25-30 minutes or until bubbly.

1 chicken breast supreme, skin removed
Sea salt and freshly ground black pepper
Olive oil
3 slices smoked pancetta
8 medium-sized spears asparagus, woody ends trimmed off
8 cherry tomatoes, halved
5 kalamata olives, stones left in
Small knob unsalted butter
Handful basil leaves
Splash white wine

Steps:

  • Slice the chicken into 3 finger size pieces, but ensure that you keep it as 1 piece (fan it out). This will help to cook the chicken much faster. Season with salt and pepper.
  • Heat a medium-sized frying pan, add some oil, and brown the chicken on all sides. Place the pancetta on top of the chicken and the asparagus around it, let it char a little, then put the pancetta on the bottom of the pan to crisp up and turn the chicken over. Turn up the heat, throw in the tomatoes, olives, basil, and a good knob of butter. Take off the heat once the butter has melted and add a splash of wine to make a sauce, squishing in a few of the tomatoes to finish it off.

1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup

  • Cut chicken into bite sized pieces and brown.

8 boneless skinless chicken breast halves, pounded thin
1 lb fresh asparagus, trimmed and washed
1/8 cup flour
2 garlic cloves, minced
1 teaspoon salt, divided
1 teaspoon leaves thyme, divided
1 teaspoon paprika
2 cups white onions, sliced 1/4 thick
1 (15 ounce) can diced tomatoes, drained
1 large tomatoes, sliced 1/2 thick
1/2 cup chicken broth

Steps:

  • Season pounded chicken breasts lightly with salt and freshly ground pepper.
  • Place 2-3 asparagus spears on each chicken breast half.
  • Roll up tightly; secure with toothpicks, if necessary.
  • Set aside.
  • Combine flour, garlic, 1/2 tsp salt, 1/2 tsp thyme and paprika.
  • Roll chicken in flour mixture.
  • Place onions and diced tomatoes on bottom of 13x9" pan, reserving 8 slices of onion for top.
  • Place chicken breasts over vegetables; top with reserved onion and tomato slices.
  • Combine broth with remaining salt and thyme; pour around chicken.
  • Cover pan loosely with foil and bake at 350 degrees for 30 minutes.
  • Uncover and bake until tender, about 10-15 minutes.

1 1/2 lbs chicken breasts, cubed
1 cup Minute Rice
1 bunch asparagus (big, fat ones -remove bad ends and slice in 1 - 2 inch pieces)
1 onion, medium chopped
8 ounces sliced water chestnuts
1 tablespoon olive oil
1 1/4 cups chicken stock
lemon juice (One big fresh squeeze from 1/2 lemon)
1 1/2 teaspoons roasted garlic
salt (at the addition of every ingredient)
pepper (at the addition of every ingredient)

Steps:

  • Heat pan on medium heat (5.5). Add oil and swirl. Brown onions for about 8 minutes. Remove from pan and reserve.
  • In the same pan, brown chicken breast (cook it almost all the way through). Deglaze with the lemon juice. Add asparagus stems. Cover and cook until almost done then add tips and water chestnuts. Return cover.
  • From time to time, you may have to spash some chicken stock in the pan.
  • Add 1 cup minute rice. Toss. Add 1 - 1/4 cup chicken stock. Toss and pat mixture down, even in the pan. Cover. Bring to a boil then remove from heat.
  • Allow to stand for 5 minutes with the lid on to cook the rice, before serving.

2 boneless skinless chicken breast halves, cut into 1-inch cubes
2 lbs fresh asparagus, cut into 1-inch pieces & blanched
1 (10 3/4 ounce) can cream soup
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon curry powder
pepper
1 cup shredded cheese

Steps:

  • Preheat oven to 350°F.
  • Saute chicken; season with pepper.

4 (6 -8 ounce) boneless skinless chicken breast halves
1 tablespoon fresh thyme leave, chopped

  • Preheat a large nonstick skillet over med-high heat with 2 tablespoons olive oil.

1 1/2 cup(s) chicken, cooked and chopped
20 ounce(s) frozen chopped asparagus, thawed
8 ounce(s) egg noodles
2 teaspoon(s) olive oil
1 cup(s) chopped red bell pepper
1 medium onion, chopped
3 clove(s) garlic, minced
1 (10 3/4) ounce(s) can cream of asparagus soup
2 large eggs
8 ounce(s) ricotta cheese
1 teaspoon(s) salt
1 teaspoon(s) black pepper
2 cup(s) shredded cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees.
  • Rub Chicken with a Tablespoon of Olive Oil. Season with Salt and Pepper. Place on a baking sheet and bake for 30 to 40 minutes or until cooked through. Let cool and chop.
  • Cook Egg Noodles according to package, drain and set aside.
  • Preheat oven to 350 degrees. Lightly grease a 13x9 inch baking dish and set aside.
  • Drain Chopped Asparagus and set aside.

  • Add Onion mixture, Chicken, Asparagus and Noodles; mix well.
  • Spread evenly in greased baking dish. Sprinkle evenly with remaining Cheddar Cheese.
  • Bake until center is set and cheese is bubbly, about 30 minutes.
  • Remove from oven a and let stand for 5 minutes.
  • Serve with Red Bell Pepper strips or Fresh Italian Parsley if desired.
