Agua de Limón con Chía (Limeade With Chia Seeds) image

This limeade is made using the whole lime, which gives it a slight bitterness, but trust me: it's so good you won't want to make it any other way.

3 large limes, quartered
4 cups water
1/2 cup sugar, or more if needed
1/4 cup chia seeds

Steps:

  • Put the limes, water, and sugar in a blender and pulse 3 to 4 times, just enough to extract the juice from the limes but not crush the skins (which would make the drink too bitter). Strain through a fi ne-mesh sieve into a pitcher. Taste and add more sugar if you like.
  • Whisk in the chia seeds and refrigerate for at least 30 minutes, until completely chilled. Stir before serving, then serve over ice.

3 tablespoons chia seeds
1/2 cup sugar
1 cup fresh lime juice
1/4 cup fresh mint leaves, loosely packed

Steps:

  • In a medium bowl, mix the chia seeds with 1 cup cold water. Let stand 15 minutes. Drain and rinse the seeds.
  • Mix 4 cups cold water and the sugar in a medium pitcher, stirring until the sugar dissolves. Add the lime juice and stir to combine. Mix in the chia seeds. Garnish with mint leaves and serve over ice.

2 cups fresh lime juice
1 1/2 cups superfine sugar

Steps:

  • Whisk chia seeds and 5 cups water in a pitcher; let sit until seeds soften, about 10 minutes.
  • Add lime juice and sugar and stir until sugar dissolves. Add more sugar to taste if sweeter limeade is desired.
  • Fill glasses with ice; divide limeade among glasses.
