1 medium carrot, peeled and diced
1/2 onion, chopped
1 stalk celery, chopped
1 tablespoon butter or 1 tablespoon canola oil
1 lb fresh chestnuts, peeled
3 cups chicken bouillon
1/4 cup apple juice
1/4 cup fresh parsley, chopped
1 pinch ground nutmeg
1/4 teaspoon salt
fresh ground pepper
1/2 teaspoon dried tarragon
nonfat sour cream (optional) or yogurt (optional)

Steps:

  • Melt the butter in a large saucepan over medium heat.
  • Add carrots, onion, and celery, and saute until soft, about 7 minutes.
  • Add chestnuts and continue cooking 5 minutes, stirring occasionally.
  • Add stock and bring to a boil.
  • Reduce heat to simmer and add apple juice, parsley, nutmeg, salt and pepper.
  • Simmer 15 minutes.
  • Add tarragon and continue cooking 5 minutes.
  • Puree the soup in a blender.
  • Return to saucepan and reheat.
  • Adjust seasonings as needed.
  • Serve with a dollop of yogurt or sour cream, if desired.

1 tablespoon unsalted butter
4 stalks celery, thinly sliced
1 small white onion, thinly sliced
1 clove garlic
2 quarts chicken or beef stock
2 1/2 cups frozen chestnuts, defrosted
1/4 cup dry sherry, plus more as desired
1/4 cup heavy cream, plus more as desired
1 bay leaf
1 sprig fresh thyme
1/2 cup creme fraiche
1/4 teaspoon pumpkin pie spice
Kosher salt and freshly cracked black pepper

Steps:

  • Place a Dutch oven over low heat. Add the butter and melt. Add the celery, onion and garlic and sweat until tender and translucent, 8 to 10 minutes.
  • Add the stock, chestnuts, sherry, heavy cream, bay leaf and thyme, bring to a gentle simmer and cook until the chestnuts are very tender, 10 to 15 minutes.
  • In the meantime, whisk together the creme fraiche and pumpkin pie spice in a small bowl until combined. Set aside for garnish.
  • Remove the thyme sprig and bay leaf from the soup. Carefully transfer the soup to a blender and puree on high speed until very smooth (raise the speed of the blender gradually and leave the lid ajar to allow the steam to escape). Sprinkle with salt and pepper to taste, thinning with more heavy cream as desired and a splash of the sherry. Serve warm, garnished with the spiced creme fraiche.

1 pound chestnuts
1/4 pound bacon, finely minced
2 tablespoons butter
3/4 cup minced red onion
3/4 cup minced carrot
3 shallots, minced
1/2 cup brandy
3/4 cup white wine
7 cups vegetable or chicken broth
2 cups heavy cream
1 cup cooked wild rice
Salt and freshly ground pepper to taste

Steps:

  • Preheat the oven to 350 degrees. Use a paring knife to score an X on each chestnut, place on a cookie tray and roast for 10 to 15 minutes, until the chestnuts can be easily peeled. Remove the chestnuts from the oven, let cool and peel. Chop roughly and set aside.
  • In a soup pot over medium heat, cook the bacon and the butter until the bacon is crisp, about 5 minutes. Reduce the heat to very low, add the red onion, carrot and shallots, stir, partially cover the pan and allow the vegetables to cook very slowly, without browning, for 5 minutes. Add the chestnuts, stir well and cook an additional minute. Increase the heat to medium and add the brandy, scraping the pan well, and then add the white wine and vegetable or chicken broth and simmer for 20 minutes.
  • Use a food processor or blender to puree the chestnut mixture and then return to low heat. Add the heavy cream and the wild rice. Season to taste with salt and freshly ground black pepper and serve.

Am I glad I found this recipe again. I cut it out of a Williams Sonoma catalog 2 years ago and made it for my work buddies for a Thanksgiving potluck, they loved it! I'm going to make it again for them this year. You can add 1/2 lb. bulk pork sausage, but I omit it because I'm vegetarian.

3 cups unsalted vegetable stock
1 cup dried cranberries
2 tablespoons unsalted butter
1 yellow onion, chopped
1 celery, chopped
1 carrot, peeled and chopped
1 egg, lightly beaten
1 lb sourdough bread or 1 lb country bread, crusts removed, cut into 1/2-inch pieces, toasted in a 325 degree oven for 10 minutes
2 cups chestnuts, halved
2 tablespoons fresh sage, chopped
1 teaspoon fresh thyme, chopped
2 tablespoons fresh parsley, chopped
salt and pepper, to taste
1/2 cup walnuts, chopped (optional)
1/2 lb pork sausage (optional)

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Butter a 2 1/2 - 3 quart backing dish.
  • In a small saucepan over medium heat, warm the stock until steam starts to rise, 3-5 minutes. Remove from heat and add dried cranberries. Set aside.
  • In a large frying pan over medium heat, melt the butter and add onion, celery and carrots and saute, stirring occasionally, until tender and translucent, about 2-3 minutes. Using a slotted spoon, transfer to a bowl.
  • If using, in same pan, saute the sausage, stirring and crumbling with a fork, until lightly browned and cooked through, about 10 minutes. Using a slotted spoon, transfer to the bowl with vegetables.
  • In a large bowl, stir the egg while slowly pouring in the stock and cranberries. Add the bread and toss until well blended. Let standing, stirring occasionally, until the stock is absorbed, 6-8 minutes.
  • Add the vegetable mixture, chestnuts, sage, thyme and parsley. Season with salt and pepper and stir well to mix. Transfer to prepared baking dish and bake until browned and crispy, about 45-50 minutes.

Stuffing with made from eggy brioche and roasted chestnuts is a Thanksgiving classic. This one, seasoned with celery, onion and sage, and a little diced fennel for sweetness and depth, sticks relatively close to tradition. Use it to stuff a turkey, if you like, but it's even better baked separately in a shallow casserole dish, so the top can get nice and crisp. If you'd like to bake it ahead, you can do so up to 6 hours in advance. Just before serving, reheat it in a 350-degree oven.

1 (14- to 16-ounce) brioche loaf, torn into 1-inch pieces
8 tablespoons unsalted butter (1 stick), plus more for the pan
1 large onion, diced
2 large celery ribs, thinly sliced
1/2 cup diced fennel (about 1/2 small fennel bulb)
1 1/2 teaspoons kosher salt, plus more as needed
1 tablespoon fresh thyme, chopped
1 tablespoon fresh sage, chopped
5 ounces roasted, peeled chestnuts, roughly chopped
1/2 teaspoon ground black pepper
2 1/2 cups turkey or chicken stock
2 large eggs
1/4 cup chopped parsley

Steps:

  • Arrange brioche pieces in a single layer on a rimmed baking sheet. Let them dry out overnight, or place them in a 200-degree oven for an hour or two. (They'll be ready when they feel stale to the touch but haven't taken on any color.)
  • Heat oven to 375 degrees, and butter a shallow, 2-quart casserole or gratin dish. On a pot on the stove or in the microwave, melt 4 tablespoons butter. Put bread in the prepared baking dish and toss with melted butter. Bake until golden and toasted, 8 to 10 minutes. Let cool, then transfer toast to a large bowl. (Don't wash the baking dish; you'll use it again for the stuffing.)
  • In a 12-inch skillet, melt remaining 4 tablespoons butter over medium heat. Stir in onion, celery, fennel and 1/2 teaspoon salt; cook until soft and just starting to brown, about 12 minutes. Stir in thyme and sage, and cook for 1 minute. Remove from heat and transfer to bowl with brioche. Gently fold in chestnuts and pepper and let cool.
  • In a medium bowl, whisk together 1 1/2 cups stock, eggs, parsley and remaining 1 teaspoon salt. Fold gently into bread mixture, then scrape it all back into prepared baking dish. Drizzle on remaining 1 cup stock until the mixture is moist but not squishy; you may not need all the stock.
  • Cover dish with foil and bake until lightly springy, about 25 minutes. Remove foil and continue to bake until golden brown, another 20 to 30 minutes.

1/2 pound bacon, sliced or cut into 1/2-inch dice
1 onion
1 stalk celery, cut into 1/2-inch dice
1 small carrot, cut into 1/2-inch dice
1 medium parsnip, peeled and cut into 1/2-inch dice
1 medium Idaho potato, peeled, cut into 1/2-inch dice
2 pounds fresh chestnuts, boiled and peeled (storebought okay)
12 sprigs thyme, tied together
1 cup Ruby Port wine
1 cup red wine
4 cups chicken stock
1 cup heavy cream
Salt and pepper, to taste
2 ounces butter
1/2 cup chanterelles or hedgehog mushrooms, thinly sliced
1/4 cup chestnuts, sliced
1 cup dry white wine
1 carrot, peeled, diced fine
1/2 ounce chives, chopped fine
6 large celery leaves, thinly sliced
Salt and pepper, to taste

Steps:

  • SOUP: Over medium-low heat in a large heavy-bottomed saucepan, cook the bacon, stirring occasionally, until the bacon has slightly browned and has started to render its fat. Add the onion, celery and carrot and cook slowly, until soft and translucent. Add the parsnip, potato, chestnuts, thyme, port and red wine and simmer on low heat until it is almost reduced completely. Add the chicken stock and continue to cook until the chestnuts have completely softened, about 30 minutes. Finish with heavy cream, remove the thyme springs and puree in the blender. Strain the soup through a fine sieve and adjust the seasonings with salt and pepper.
  • GARNISH: In a large saute pan or nonstick skillet, heat the butter on low. Add the chanterelles, chestnuts, white wine and carrots and cook on low heat until soft, about 7 minutes. Add the chives.
  • To serve, place the warm garnish mixture in the center of a warm soup bowl. Sprinkle with celery leaves, and carefully pour the soup around the garnish mixture.
