Roasted Cherry Tomatoes With Goat Cheese image

This salad may look fancy, but it is so simple and easy to make. It is a great way to use up a lot of cherry tomatoes you have in your fridge. It can be served at room temperature or chilled. 2 cups cherry tomatoes
1 tablespoon olive oil
1 teaspoon balsamic vinegar
salt and pepper
2 tablespoons goat cheese, crumbled
6 basil leaves, chiffonaded

Steps:

  • Preheat oven to 375ºF/180ºC degrees.
  • Place cherry tomatoes in an oven-proof shallow pan.
  • Drizzle olive oil and roast for about 15 minutes until tomatoes are soft.
  • Transfer the tomatoes to a bowl. Add balsamic vinegar, salt and pepper and toss gently. You can refrigerate it at this point if serving it chilled.
  • Transfer to a plate and top with goat cheese and basil leaves.
  • Infuse love and serve!

8 ounces anchovies packed in oil, drained, coarsely chopped
2 tablespoons fresh white breadcrumbs
1/2 cup butter
1 pinch ground cinnamon
1 pinch ground ginger
1 pinch ground black pepper

Steps:

  • Using a mortar and pestle, pound the anchovies and butter until they resemble a smooth paste. You could also use a food processor.
  • Stir in the breadcrumbs, spices and pepper and spoon the paste into a large ramekin. Cover and chill before serving.

2 pounds red and yellow cherry tomatoes
3 tablespoons extra virgin olive oil
2 teaspoons kosher salt
6 ounces fresh goat cheese
1 pound penne
1 cup loosely packed fresh basil leaves, torn into pieces
Additional kosher salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 250°F and line 2 large baking sheets with parchment paper. Halve each tomato and place cut side up in one flat layer on the baking sheets. Drizzle the tomatoes with 1 tablespoon of the olive oil and sprinkle on the salt. Roast until the tomatoes are dried around the edges but still moist, about 2 hours.
  • Crumble the goat cheese into large chunks and refrigerate until ready to serve the pasta.
  • Cook the pasta in salted boiling water according to the package directions. Remove 1 cup of the cooking liquid and reserve. Drain the pasta well and return to the pot. Add the tomatoes, goat cheese, basil, reserved cooking liquid, and remaining 2 tablespoons olive oil. Toss well and season with salt and pepper. Serve warm.

2 teaspoons finely diced onions
1 teaspoon finely chopped fresh basil leaf
1/2 teaspoon the lady's house seasoning
1 (8 ounce) package miniature phyllo cups
1/2 cup packed shredded mozzarella cheese
1/4 cup mayonnaise
4 tablespoons hormel real bacon bits (or more)

Steps:

  • Preheat oven to 350 degrees F.
  • Placed the diced tomatoes in a colander. Sprinkle with the oinions, basil, and House Seasoning, and toss to coat. Allow to drain, stirring occasionally.
  • Fill each phyllo shell with a scant tablespoon of the tomato mixture.

4 tablespoons bacon, pieces (or more)

  • Directions.
  • Preheat the oven to 350 degrees F.
  • Place the diced tomatoes in a colander. Sprinkle with the onions, basil, and House Seasoning, and toss to coat. Allow to drain, stirring occasionally. 36 firm but ripe cherry tomatoes about an inch in diameter
1/2 cup sour cream or creme fraiche
1/2 ounce sturgeon, salmon or whitefish caviar (see note)

Steps:

  • Remove any stems from the cherry tomatoes. Turn them stem-side down on a cutting board or other work surface. Carefully slice off the top third of each tomato, reserving these pieces for another use.
  • Stir the sour cream or creme fraiche to make it smooth. Using a small spoon, dab a scant teaspoon of the cream carefully and neatly on the top of each tomato.
  • Using the tip of a knife, place a tiny dab of the caviar on the cream. Arrange the tomatoes on a platter and serve, or refrigerate for up to one-half hour before serving.
