CHERRY TOMATO BITES
Fresh, unbaked bites that remind you of a BLT. Quick, easy, and cheap, if you grow your own tomatoes. This can be made a day ahead if tomatoes were drained. Perfect for a picnic.

Steps:
- Cut off the top 1/4 of each tomato and a very small slice off of the bottoms, if needed, to sit upright. Scoop out pulp using a baby spoon or grapefruit spoon. Place tomatoes cut-side down on paper towels to drain.
- Combine salad dressing, bacon bits, green onions, Parmesan cheese, and parsley in a bowl. Spoon evenly into tomatoes. Cover and chill in a refrigerator until ready to serve.

- Cut a thin slice off the top of each tomato. Scoop out and discard pulp. Invert the tomatoes on a paper towel to drain. Meanwhile, combine remaining ingredients in a small bowl. Spoon into tomatoes. Refrigerate until serving.

STUFFED CHERRY TOMATO BLT BITES
Steps:
- In a small pan, fry the diced bacon until crisp. With a fork, extract fried bacon from pan and drain on a paper towel.
- In a small bowl add Kraft Parmesan Cheese, diced fresh green onion, Miracle Whip, and fried bacon bits. Mix ingredients until mixture is blended well.
- Allow mixture to sit approximately 20 minutes in refrigerator.
- Wash and drain the cherry tomatoes. With a pairing knife cut the tops off the cherry tomatoes and remove the seeds. Turn the cherry tomatoes upside down on a paper towel to drain the liquid juice from the cherry tomatoes. Stuff the cherry tomatoes with the refrigerated mixture.

- First, Make the herbed cream cheese: in a stand mixer, mix the softened cream cheese with the ranch dressing and herbs. Mix until well combined. Spoon into a piping bag with a star tip. Prepare the cucumber, remove peel, and using a fork, score the sides. Slice into 1 inch pieces. Using a melon baller, remove a portion of the center of one side of the piece of cucumber, leaving a half moon crater. Pipe the Herb Cream Cheese into the crater. Enough to stick out of the top about 1/2 inch. Add a half Cherry Tomato partially buried into the Herb Cream Cheese Sprinkle additional salt, herbs and spice mix for additional color. Chill in the fridge until ready to serve. Serve chilled and enjoy!
