1-1/2 cups sugar
1/2 cup butter, softened
1/2 cup shortening
1 teaspoon almond extract
1 teaspoon vanilla extract
1/2 teaspoon baking powder
4 large eggs
3 cups all-purpose flour
1 can (21 ounces) cherry pie filling
GLAZE:
1 cup confectioners' sugar
1 to 2 tablespoons whole milk

Steps:

  • In a large bowl, combine the sugar, butter, shortening, extracts, baking powder and eggs. Beat on low speed until blended; beat on high for 3 minutes. Stir in flour. , Spread two-thirds of the batter into a greased 15-1/2-in. x 10-1/2-in. x 1-in. baking pan. Spread pie filling over batter; drop remaining batter by tablespoonful over filling. Bake at 350° for 40-45 minutes or until golden. Combine the confectioners' sugar and milk; drizzle over coffee cake. Serve warm.

This is a sweet and delicious cake. The recipe was on the side of a cake mix box several years ago. I can't remember what it was called back then. Edited on July 6, 2004: From my own recent and personal experience, try to avoid using store/off brand canned pie filling. They tend to have more of the glaze rather than cherries. The cake won't have as many cherries in it as it would with Comstock or other name brand Pie Filling.

1 (18 1/4 ounce) box white cake mix or 1 (18 1/4 ounce) box yellow cake mix
3 large eggs
1 cup water
1/4 cup oil
1 (23 ounce) can cherry pie filling

Steps:

  • Preheat oven to 350.
  • Grease and flour bottom and sides of a 9x13x2" cake pan.
  • In a large bowl, mix cake mix, eggs, water and oil with a mixer until well blended.
  • Pour batter into prepared cake pan.
  • Smooth evenly in pan.
  • Drop spoonfuls of the pie filling on top of the cake batter.
  • With a knife, swirl the cherry pie filling into the cake batter.
  • Be careful not to touch the bottom of the cake pan with the knife.
  • This might remove some of flour/shortening coating, causing the cake to stick.
  • Bake for 40-45 minutes or until cake is golden brown on top and a knife inserted in the center comes out clean.
  • Allow to cool for 10 minutes.
  • May be served warm or cooled.
  • May be served with ice cream or whipped topping.

18 1/4 ounces white cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 egg whites
1 (21 ounce) can cherry pie filling
1 (8 ounce) container Cool Whip Topping

Steps:

  • Preheat oven to 350°F.
  • Mix cake mix according to package directions using the water, oil and egg whites. Pour into prepared 9 X 13 inch cake pan. Spread evenly.
  • Drop cherry pie filling on top by spoonfuls and then swirl it through the cake with a knife. Do not mix too much. You want the swirled effect.
  • Bake for 30 minutes or until cake tests done.
  • Cool completely.
  • Top with the Cool Whip topping and chill at least 2 hours before serving. Keep leftovers chilled.
  • Variations: try other pie fillings.

There's nothing like a little piece of sweet coffee cake to go with your coffee or tea in the morning! And this is a great one if you like cherries and almond flavor together. If you're like me, you can even go with 2 tsp almond extract and skip the vanilla. You can also use other pie fillings to change the taste, although cherry is my favorite. This comes from one of my favorite and most used cookbooks, The Best of Mennonite Fellowship Meals.

1 1/2 cups sugar
1/2 cup margarine, softened
1/2 cup Crisco shortening (I use butter flavored)
1 1/2 teaspoons baking powder
1 teaspoon vanilla
1 teaspoon almond extract
4 eggs
3 cups flour
21 ounces can cherry pie filling
1 cup powdered sugar
1 -2 tablespoon milk

Steps:

  • Mix all cake ingredients except pie filling.
  • Stir until just mixed.
  • Generously grease jelly roll pan or two 9-inch cake pans.
  • Spread 2/3 of batter into pan.
  • Spread pie filling over batter.
  • Drop remaining batter by tablespoonsful onto pie filling.
  • Spread tablespoons of batter together as much as possible.
  • (Not all of pie filling will be covered.).
  • Bake at 350 degrees F for 30-40 minutes or until done.
  • Combine glaze ingredients and drizzle over cake while still warm.

4 c original bisquick mix
1/2 c sugar
1/4 c butter, melted
1/2 c milk
1 tsp vanilla
1 tsp almond extract ( i use 1/2 teasp. more)
3 eggs
1 can(s) (21 oz.) cherry pie filling
GLAZE
1 c powdered sugar
1-2 Tbsp milk

Steps:

  • 1. Heat oven to 350 degrees. Grease bottom and sides of 1 (15x10x1 inch) pan or 2 (9-inch) square pans with shortening or cooking spray.
  • 2. In a large bowl, stir all coffee cake ingredients except the pie filling; beat vigorously with spoon for 30 seconds.
  • 3. Spread about 2 1/2 cups of the batter in the prepared 15x10 pan or 1 1/4 cups in the 9 inch-pan . Spread pie filling over batter ( filling may not cover batter completely). Note: I have made this in a "larger" 9x13 pan, it is an old pan and works well but it takes a bit longer to bake, but is soooo good! Of course you can cut it into as many servings as you wish...
  • 4. Drop remaining batter by tablespoonfuls onto pie filling.
  • 5. Bake 2o to 25 minutes or until light brown. Test with a toothpick.
  • 6. Meanwhile, in a small bowl, stir glaze ingredients until smooth and thin enough to drizzle. Drizzle over warm cake. Serve warm or cool.

2 c flour
1-1/2 c sugar
3 tsp baking powder
1 tsp salt
1/2 c oil
4 egg yolks, room temperature
1/2 c maraschino cherry syrup
4 Tbsp water
1 tsp vanilla
2 tsp almond extract
1 c egg whites, room temperature, about 7 to 8 large eggs
1/2 tsp cream of tartar
1 c finely chopped maraschino cherries
FROSTING
2 c powdered sugar
1/4 c softened butter
3 Tbsp maraschino cherry juice
1/4 tsp almond extract

Steps:

  • 1. Wash angel food tube pan in hot soapy water to ensure it is totally grease free.
  • 2. Sift flour, sugar, baking powder and salt into a bowl. Make a well in center. Into well, put oil, egg yolks, cherry syrup, water, vanilla and almond extract. Set aside. Do not beat yet.
  • 3. Beat egg whites and cream of tartar until very stiff. Set aside.
  • 4. Using same beaters, beat egg yolk-flour mixture until smooth. Fold 1/4 at a time gently into egg whites.
  • 5. Add cherries. Fold in. Pour into ungreased 10 inch angel food tube pan. Bake at 325 degrees for 50 to 55 minutes. Invert pan until cake is cooled. If iced, use cherry icing and is just as good without icing .
  • 6. FROSTING:
  • 7. Beat all ingredients together in a bowl until smooth.
