These no bake confections are great! They are a Christmas tradition in our home.

½ cup butter, softened
1 ¾ cups confectioners' sugar
1 teaspoon orange juice
1 ½ cups shredded coconut
1 (10 ounce) jar maraschino cherries, drained

Steps:

  • in a medium bowl, cream together butter, confectioners' sugar and orange juice; mix in coconut.
  • Wrap coconut mixture around each cherry to cover completely. Store in refrigerator in a tightly covered container until ready to serve.

1 cup margarine, softened
1/2 cup powdered sugar
2 egg yolk
2 cups sifted flour
1/8 teaspoon salt
2 teaspoons almond flavoring
1 (9 1/4-ounce) bottle maraschino cherry, drained (reserve juice)

Icing:
1 tablespoon shortening
1 tablespoon cherry juice
1 tablespoon water
1/8 teaspoon salt
1 1/3 cups powdered sugar

Steps:

  • Cream margarine and sugar. Add egg yolks. Blend in flour and salt. Add flavoring. Chill until firm enough to handle, about 2 hours. Pinch off pieces of dough with floured hands, insert cherry, and cover with the dough. Bake in 325° oven about 25 minutes, until lightly browned. When cool, ice with the following. Icing: Melt shortening, add juice and water, beat in salt and powdered sugar. Beat until spreading consistency. Spread on tops of cookies.
