My husband and children would literally die without this for the holidays! And it is SO easy! My husband says it is a side dish. I say it is a dessert.

1 (14 ounce) can sweetened condensed milk
1 (20 ounce) can crushed pineapple, drained
1 cup pecans, chopped (optional)
1 cup small marshmallow (optional)
1 (12 ounce) container frozen whipped topping, thawed

Steps:

  • Combine all ingredients and mix well.
  • Serve chilled. Your family and friends will go nuts.

I honestly have no idea where I got this recipe. I have made it for all family gatherings since I was sbout 13 years old. As a matter of fact, this is what I am taking to our Thanksgiving dinner tomorrow. It was requested.

1 (20 ounce) can chunk pineapple, Drained
14 ounces flaked coconut
16 ounces fat-free whipped topping
1 cup pecan halves

1 cup sugar
1/3 cup all-purpose flour
1/8 teaspoon salt
2 cans (14-1/2 ounces each) pitted tart cherries, well drained
2 cans (8 ounces each) crushed pineapple, well drained
3 drops almond extract
Pastry for double-crust pie (9 inches)
2 tablespoons butter
1 tablespoon milk
Additional sugar

Steps:

  • In a large bowl, combine sugar, flour and salt. Stir in cherries, pineapple and extract. , Line a 9-in. pie pan with the bottom crust. Add filling; dot with butter. Top with lattice crust. Brush with milk and sprinkle with sugar. Bake at 375° for 50-60 minutes or until bubbly and golden brown.

This easy rrecipe combines cherry pie and traditional pineapple upside down cake. With only 6 ingredients it's simple and tasty. I came up with this idea when I realized I had no oil in my pantry to make the cake. I hope you enjoy it as much as I did! Note: feel free to use basic white or yellow cake mix if you can't find the pineapple mix. Happy cooking!

1 box(es) your choice of boxed cake mix (i used pineapple)
3 large eggs
1 can(s) cherry pie filling
1/2 stick(s) butter
1 1/4 cup(s) brown sugar
1 can(s) sliced pineapple, drained

Steps:

  • Combine first three ingredients in a mixing bowl
  • Preheat oven to 350 degrees. Place butter into a 10 inch cast iron skillet and warm in the oven until completely melted
  • Remove skillet from oven and sprinkle in the brown sugar evenly, stirring to combine butter and sugar
  • Place drained pineapple slices into skillet
  • Pour cake mix over pineapple slices and spread to cover completely
  • Bake approximately 40 to 48 minutes until a toothpick inserted in center comes out clean
  • Remove from oven and let sit 5 minutes. Run a knife gently around the edge of the skillet to unstuck any cake. Carefully invert into a large platter

THE FILLING:
2 pie crusts
10-oz bag frozen cherries
16-oz bag frozen pineapple chunks
3-4 cups water
2 tbsp corn starch
1 cinnamon stick
1 tbsp maple syrup
THE TOPPING:
1/4 cup sugar
1 tsp vanilla
1/4 tsp cardamom

Steps:

  • In a medium saucepan, combine the cherries, pineapple, and enough water to just cover the fruit. Add the corn starch, cinnamon stick, and maple syrup. Stir together, bring to a boil over high heat, then reduce the heat to low and simmer, uncovered, until the fruit is somewhat tender and the filling is nice and thickened. Remove from the heat and set aside. Place one pie crust i n 9 inch pie plate. Pour the filling into the crust. Cut second pie crust into strips and lattice shape over the top of the filling. Then, in a ramekin, combine the vanilla, sugar, and cardamom. Stir vigorously to combine, then sprinkle over the lattice top. This sweet topping helps to give a little more crunch.
