SWIRLED CHERRY CAKE

Swirled Cherry Cake image

This is a sweet and delicious cake. The recipe was on the side of a cake mix box several years ago. I can't remember what it was called back then. Edited on July 6, 2004: From my own recent and personal experience, try to avoid using store/off brand canned pie filling. They tend to have more of the glaze rather than cherries. The cake won't have as many cherries in it as it would with Comstock or other name brand Pie Filling.

Time 1h

Yield 1 cake, 15 serving(s)

Number Of Ingredients 5

1 (18 1/4 ounce) box white cake mix or 1 (18 1/4 ounce) box yellow cake mix
3 large eggs
1 cup water
1/4 cup oil
1 (23 ounce) can cherry pie filling

Steps:

  • Preheat oven to 350.
  • Grease and flour bottom and sides of a 9x13x2" cake pan.
  • In a large bowl, mix cake mix, eggs, water and oil with a mixer until well blended.
  • Pour batter into prepared cake pan.
  • Smooth evenly in pan.
  • Drop spoonfuls of the pie filling on top of the cake batter.
  • With a knife, swirl the cherry pie filling into the cake batter.
  • Be careful not to touch the bottom of the cake pan with the knife.
  • This might remove some of flour/shortening coating, causing the cake to stick.
  • Bake for 40-45 minutes or until cake is golden brown on top and a knife inserted in the center comes out clean.
  • Allow to cool for 10 minutes.
  • May be served warm or cooled.
  • May be served with ice cream or whipped topping.

Time 50m

Number Of Ingredients 4

30.5 ounces White cake mix (Plus the ingredients the boxed cake mix calls for.)
80 ounces Store-bought cherry pie
16 ounce Canned frosting (or homemade)
21 ounce Cherry Pie Filling (optional)

Steps:

  • If you purchase a frozen pie, bake them off the night before you want to bake the cake. They should be cool enough that you can touch them.
  • If you used store-bought pie you don't have to cook it first.
  • Use a stand mixer to make your boxed cake mix.
  • I make each box individually to ensure that the layers are even (I'm a terrible estimator).
  • Over mix the cake batter by a few minutes which help to make the batter stronger to support the pie in the layer.
  • Once batter is ready, prepare your springform pan (spray with cooking spray and a light dusting of flour) and add half of the cake batter from one boxed mix.
  • Add one of the pies then top with the other half of the cake mix.
  • Repeat with the other cake mix and pie.
  • Bake as directed on the cake mix box.
  • Let cool completely.
  • Remove from pans.
  • Stack one layer on a cake stand.
  • Top with a layer of frosting then add the second layer of pie baked into cake.
  • Frost as usual.
  • If adding, top with extra cherry pie filling.

MIX-IN-THE-PAN CHERRY CAKE

Mix-In-The-Pan Cherry Cake image

From "Cake Mix Magic." This cake uses cherry pie filling and a white cake mix to create a pretty marbled effect. The ease of preparation makes it even more enticing. The author suggests serving this cake with powdered sugar sprinkled over it or serving it warm beneath a scoop of vanilla ice cream. I think it would be good with a little cool whip, also. Using a cake with pudding in the mix may increase baking time. Prep time is an estimate.

1/4 cup vegetable oil
1 (18 1/4 ounce) package white cake mix
2 eggs
1/2 cup water
1 (19 ounce) can cherry pie filling

  • Stir all together with a fork or spoon until thoroughly blended, about 2 minutes. Scrape sides and spread batter evenly in pan. Drop spoonfuls of pie filling randomly on top. With a fork or knife, fold pie filling into batter just enough to create a marble effect.
