SUGARED CHERRY JEWELS
The texture and crunch of the sugar coating make these chewy cookies extra special. I love the bright cherry center and the fact that they look lovely in a holiday gift box or tin.

Steps:
- In a large bowl, cream butter and sugar until light and fluffy. Beat in the corn syrup, egg yolks and vanilla. Gradually add the flour and mix well. Cover and refrigerate for 1 hour or until easy to handle. , Roll into 1-in. balls; roll each ball in additional sugar. Place 2 in. apart on ungreased baking sheets. Using the end of a wooden spoon handle, make an indentation in the center of each. Press a cherry half in the center. , Bake at 325° for 14-16 minutes or until lightly browned. Remove to wire racks to cool.

A nice cookie any time. (Note these are a slice and bake cookie. Prep time does not include refrigeration time to set the dough.)

Steps:
- Mix butter, eggs, brown sugar, and flour until well combined.
- Add baking powder, baking soda, cinnamon, vanilla, cherries, and nuts.
- Roll dough into logs that are approximately 1 inch around. Wrap in waxed paper and place in the refrigerator until ready to bake.
- When you are ready to bake, preheat oven to 350 degrees.
- Slice logs into 1 inch rounds and place on an ungreased cookie sheet.
- Bake 12 minutes or until golden brown.
- Cool 5 minutes before transfering to a cooling rack.
CHERRY NUT COOKIES
A PRETTY cookie which will make your cookie tray at Christmas look good! The cherry and nut combination in a buttery base is delicious! A rolled type dough which can be made and baked later. These cookies freeze very well for make ahead plans. This basic cookie dough I have tried many times substituting different ad-ins.

Steps:
- Mix softened butter and sugar until fluffy. Add eggs and vanilla, mixing well.
- Combine flour, baking soda and salt in a separate bowl and add to creamed mixture. Stir in candied cherries and pecans.
- Shape dough into long rolls about 2 inches in diameter. Wrap in wax paper and chill at least 4 hours. (May be made days ahead before baking and stored in refrigerator or freezer. Let dough thaw slightly before slicing.).
- Unwrap and cut into 1/4 inch slices; place on ungreased cookie sheet.
- Bake in a 350 degree oven for approximately 10 minutes.

LITTLE GEM COOKIES
Steps:
- Preheat oven to 325 degrees. Line baking sheet with parchment paper. Combine first 3 ingredients using a food processor. Cut in butter until the mixture resembles coarse meal. In a small bowl, beat the yolks with the vanilla extract and add to the flour mixture. Beat until completely blended. Pinch off pieces of dough and roll into balls. Place on the lined cookie sheet. Make indentation with thumb, fill the hole with preserves and press on a pecan half. Bake for 20 to 25 minutes.

- Preheat oven to 350.
- Drain cherries, reserving juice. Halve any large cherries.
- In a medium mixing bowl beat butter with an electric mixer, on medium to high speed, for 30 seconds.
- Add the sugar, baking powder, baking soda, and 1/4 teaspoon of salt. Beat until combined, scraping sides of bowl.
- Beat in egg and vanilla until combined.
- Beat in cocoa powder, and as much of the flour as you can with mixer.
- Stir in remaining flour using a wooden spoon.
- Shape dough into 1" balls.
- Place balls about 2" apart on an ungreased cookie sheet.
- Press your thumb into the center of each ball. Place a cherry in each center.
- For Frosting:.
- In a small saucepan combine chocolate pieces and sweetened condensed milk.
- Cook and stir, over low heat, until chocolate is melted.
- Stir in 4 teaspoons reserved cherry juice.
- Spoon 1 teaspoon frosting over each cherry, spreading to cover (frosting may be thinned with additional cherry juice, if necessary).
- Bake for 10 minutes, or until edges are firm. Cool 1 minute on cookie sheet.
- Transfer to a wire rack, and let cool.
- Note:
- For best results DO NOT substitute imitation chocolate pieces.

- Sprinkle almonds in ungreased heavy skillet. Cook over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are light brown. Cool 10 minutes. In food processor, process almonds until finely chopped; set aside.
- In large bowl, beat butter, granulated sugar and brown sugar with electric mixer on medium speed until smooth and creamy. Add egg and almond extract; beat on medium speed until smooth. On low speed, beat in flour, baking powder and salt until dough forms. Stir in cherries and chopped almonds.
- Form dough into 2 (8-inch) logs. Wrap in plastic wrap or waxed paper. Refrigerate at least 2 hours.
- Heat oven to 375°F. Cut dough into 1/8- to 1/4-inch slices. On ungreased cookie sheets, place slices 2 inches apart.
- Bake 7 to 9 minutes or until edges start to turn golden brown. Cool 1 minute; remove from cookie sheets to cooling racks.
