CHERRY COUSCOUS PUDDING

1/2 cup milk
3 tablespoons sugar
1/4 cup dried cherries
1 vanilla bean, pulp scraped
1 1/2 cups steamed couscous
1 (8-ounce) container vanilla flavored yogurt
1/4 teaspoon ground cinnamon

Steps:

  • Heat milk, sugar and cherries in medium saucepan over medium heat. Bring to simmer, remove from heat, cover and let steep for 10 minutes. Add pulp from vanilla bean to milk and whisk to combine. Pour mixture over couscous in bowl and add yogurt. Stir to combine. Divide evenly among 4 custard cups, sprinkle with cinnamon and refrigerate for 1 hour.

Steps:

  • Bring 1 cup each skim milk and almond milk, 1/4 cup sugar, 1/4 teaspoon almond extract and a pinch of salt to a boil in a saucepan over medium heat. Add 3/4 cup whole-wheat couscous, 1/2 cup dried cherries and 1 cinnamon stick; cover and cook 2 minutes. Remove from the heat and let sit, covered, 8 minutes. Fluff with a fork, remove the cinnamon stick and divide among bowls. Top with toasted sliced almonds and honey, if desired.

1/2 c instant couscous
1/2 c nonfat dry milk
1/4 c dried cherries
1/4 c walnuts finely chopped
3 Tbsp light brown sugar
1/2 tsp ground cinnamon
1/8 tsp salt
1 1/4 c cup water

Steps:

  • 1. AT HOME: In an airtight plastic bag, combine all ingredients except water, Seal bag.
  • 2. AT CAMP : In a medium saucepan, bring water to a boil.
  • 3. Stir in pudding mix, cover and remove from heat. Let stand for 10 minutes. Stir with a fork.
  • 4. Serve: Makes about 1⅔ cups dry mix and 2 cups cooked pudding, for 2 servings.

Couecous is one of my favorite things. One of the reasons for this is it's versatility. It can be a side, main, dessert or snack. What ever way it's used it's always yummy.

1 cup(s) skim milk
1 cup(s) almond milk
1/4 cup(s) splenda or sugar
1/4 teaspoon(s) almond extract
1 pinch(es) salt
3/4 cup(s) whole wheat couscous
1/2 cup(s) dried cherries or other dried fruit
1 - cinnamon stick
- garnish: sliced almonds and honey, if desired.

Steps:

  • Bring the skim milk and almond milk, splenda/ sugar, almond extract and salt to a simmer in a saucepan over medium heat.
  • Add the whole-wheat couscous, dried cherries and cinnamon stick. Cover and cook 2 minutes on low.
  • Remove from the heat and let sit, covered, 8 minutes.
  • Fluff with a fork, remove the cinnamon stick and divide among bowls. Top with toasted sliced almonds and honey, if desired.
