1 can (20 ounces) crushed pineapple
1/2 cup water
2 packages (3 ounces each) cherry gelatin
1 can (21 ounces) cherry pie filling
3/4 cup cola

Steps:

  • Drain pineapple, reserving juice; set fruit aside. In a saucepan or microwave, bring pineapple juice and water to a boil. Add gelatin; stir until dissolved. Stir in pie filling and cola. , Pour into a serving bowl. Refrigerate until slightly thickened. Fold in reserved pineapple. Refrigerate until firm.

Nonstick cooking spray, for the cake pan
One 15.25-ounce box devil's food cake mix, such as Duncan Hines
One 3.9-ounce package instant chocolate pudding mix
4 large egg whites
3/4 cup cherry cola, such as Cherry Coke ®
1/2 cup vegetable oil
1/2 cups finely chopped maraschino cherries
5 1/4 cups confectioners' sugar
6 sticks (1 1/2 pounds) unsalted butter, at room temperature
1/4 teaspoon kosher salt
5 tablespoons maraschino cherry liquid plus 1 cup finely chopped maraschino cherries
8 ounces semisweet chocolate, chopped
3/4 cup heavy cream
1 1/2 cups whole maraschino cherries with stems

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Coat two 8-inch round cake pans with cooking spray, then line with parchment and spray the parchment.
  • Combine the cake mix and pudding mix in a stand mixer fitted with the paddle attachment and mix on low speed to blend. With the mixer still running, add the egg whites, cherry cola and vegetable oil and mix until combined. Raise the speed to medium and mix until increased in volume, lighter in color and smooth, about 5 minutes. Fold in the maraschino cherries. Divide the batter between the prepared baking pans; smooth into even layers using an offset spatula.
  • Bake until a skewer inserted in the center comes out clean and the edges pull away from the sides of the pan, about 15 minutes. Transfer to a rack and let cool in the pans, about 10 minutes, then turn out onto racks and let cool completely, about 1 hour.??
  • For the frosting: Mix the confectioners' sugar, butter and salt together in a stand mixer fitted with the whisk attachment. Mix on low speed until well blended, then increase the speed to high and whip until light and fluffy, 3 to 5 minutes. Add the maraschino cherry liquid and continue to whip until bright pink and spreadable. Add the chopped cherries and mix on low speed until evenly distributed.
  • Using a serrated knife and sawing in long, even strokes, carefully halve the cake layers horizontally. Place 1 layer, cut-side up, on a platter or cake stand; spread 1 1/2 cups frosting on top. Stack another cake layer on top and spread another 1 1/2 cups frosting on top. Repeat with the remaining 2 cake layers, then cover the top and sides with a thin layer of frosting (this is the crumb coat) and use a bench scraper or large offset spatula to smooth out the sides and top (it's okay if some cake shows through). Refrigerate 15 minutes, then add another 1/2-inch layer of frosting to the top of the cake and smooth out to make a perfectly flat top. Refrigerate until ready to cover with ganache.
  • For the ganache: Meanwhile, place the chocolate in a heatproof bowl and heat the cream in a small saucepan over medium-high heat until beginning to boil. Pour the cream over the chocolate and let sit, stirring occasionally, until the mixture is completely smooth and the chocolate is melted, about 5 minutes. Let cool 30 minutes, then pour over the chilled cake so that the top is completely coated and chocolate drips decoratively down the sides. Let set at room temperature 30 minutes, then top with the whole cherries in the center of the cake and serve.

I came up with this recipe after playing around with some different recipes using soda instead of eggs and oil in cake mix. They're amazing and super easy!

1 (15.25 ounce) package chocolate cake mix
1 can cherry-flavored cola (such as Cherry Coke®)
2 cups heavy whipping cream
¼ cup confectioners' sugar
1 (12.5 ounce) can cherry pie filling
12 maraschino cherries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 12 muffin cups with paper liners.
  • Mix cake mix and cherry-flavored cola together in a bowl until batter is smooth. Spoon batter into prepared muffin cups about 2/3 full.
  • Bake in the preheated oven until muffins spring back when lightly touched, 18 to 23 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.
  • Beat cream in a large bowl using an electric mixer until frothy; beat in confectioners' sugar until stiff peaks form. Lift your beater or whisk straight up: the frosting will form sharp peaks; refrigerate.
  • Cut a well out of the top center of each cupcake and fill with 2 to 3 cherries from the cherry pie filling. Transfer frosting to a piping bag or a plastic bag with 1 corner cut off. Frost cupcakes and top each with a maraschino cherry.

Jello salad is taken to a new level with this salad! I got this recipe years ago from one of the ladies at church and it is a favorite at the holidays, funerals and potlucks. Note: Prep time includes chilling time. I like to make this a day ahead of serving so it has time to thoroughly set.

1 can(s) (20 oz.) crushed pineapple, drained, but juices reserved
1 can(s) (14.5 oz.) sweet bing cherries or dark sweet cherries in heavy syrup, drained, but syrup reserved
1 box (8 serving size) cherry flavored jello
1 can(s) (12 ounce) chilled coca-cola or cherry coke or dr. pepper (depends what you have on hand!)
1/2 c chopped pecans or walnuts
TOPPING
1 pkg (8 ounce) cream cheese, softened to room temperature
1/2 c powdered sugar
2 c thawed cool whip

Steps:

  • 1. Drain the cherry syrup and pineapple juices into a saucepan. Set the fruit aside in the refrigerator to chill. Bring fruit juices to a boil, remove from heat and whisk in the Jello powder until fully dissolved.
  • 2. Transfer to a 4 cup glass measuring cup and add enough Coca-Cola to equal a total of 4 cups of liquid. You can also substitute additional Dr Pepper or cherry coke to make up the full 4 cups; transfer to a bowl and stir in the pineapple, cherries, and nuts. Can also pour into 9x13 glass pan if desired.
  • 3. Allow to fully set for at least 3 to 5 hours or longer - do not stir! Once it is set, mix the topping ingredients and frost the salad.
  • 4. For the topping, cream together the cream cheese and sugar; stir in the Cool Whip until well combined. Carefully frost the set-up salad with the topping. Cover with Saran wrap and refrigerate until ready to serve.

4 chicken breasts
2 tablespoons olive oil
1/2 cup flour
1/4 teaspoon poultry seasoning
1/4 teaspoon salt
3 -5 dashes fresh ground pepper
1/2 cup chopped yellow onion
2 cloves minced garlic
1 cup Coke (or 1/2 c. Coke and 1/2 c. chicken stock)
1/2 cup dried cherries or 1/2 cup mixed dried berries (I use a mix of dried cherries, blueberries and cranberries)
2 tablespoons balsamic vinegar
1 teaspoon cornstarch
2 tablespoons water

Steps:

  • In a bowl, mix the flour, poultry seasoning, salt and pepper.
  • Butterfly the chicken breasts and pound them to about 1/2" thickness.
  • Dredge them lightly in the flour mixture.
  • In a large skillet over medium heat, saute the onions in the olive oil until soft.
  • Add the chicken to the skillet and cook until browned on one side, about 4 minutes.
  • Turn chicken and brown the other side for a few minutes more.
  • Add the Coke, cherries, garlic and balsamic vinegar.
  • Cover, reduce heat and simmer for 15 minutes or until chicken is cooked through.
  • Remove chicken and keep warm.
  • Dissolve corn starch in water, then add to sauce mixture, and simmer until sauce is thickened and glossy.
  • Pour over chicken and serve.

bone-in fully cooked ham
1/2 c whiskey
3 c Cherry Coke
1/2 c brown sugar
whole cloves
salt and pepper
pinch of each: garlic powder, paprika, ground thyme, cayene pepper and oregano

Steps:

  • 1. Preheat oven to 325 degrees. Score the ham on the diagonal along the fat side and insert whole cloves in the corners of each slice.
  • 2. Season the ham with salt, pepper, and the pinches of each herb. I mix it all together in a rub it all over the ham.
  • 3. Cover the ham with brown sugar and pour 1 cup of Cherry Coke in the bottom of the roasting pan.
  • 4. Cook the ham for about an hour to an hour and a half.
  • 5. Mix the remaining Cherry Coke and whiskey.
  • 6. Baste the ham with the mixture often throughout the cooking process. When you are out of the whiskey and cola mixture, use the pan juices. It will have some of the brown sugar and ham juices yummy. When the ham reads 140 on a thermometer it's done. Take it out of the oven. It should be a gorgeous mahogany color. Tent it for about 15 minutes.
  • 7. Remove the cloves. Slice and serve with candied carrots and garlic mashed potatoes. So so good!

1 jar(s) maraschino cherries 10oz drained (1/4 cup juice reserved)
1 c cherry coke
1/2 c vegetable oil
3 eggs
12 oz container whipped vanilla frosting
1 c marshmallow cream
24 maraschino cherries with stems

Steps:

  • 1. Preheat oven 350 degrees. Grease and flour 13x9 cake pan. Chop up cherries reserving 1/4 cup of the juice.
  • 2. In a large bowl mix cake mix, coke, cherry juice, oil and eggs on med speed for 2 mins. Stir in chopped cherries.
  • 3. Pour into pan and bake for 35 mins or until toothpick comes out clean. If making cupcakes fill 3/4 of the way full and bake 18-21 minutes. Makes 24 cupcakes. Let cool completely.
  • 4. For frosting mix whipped frosting and marshmallow cream until smooth. Top each piece of cake or cupcakes with a well drained maraschino cherry.

I have been making this for my family since I was 8...I'm not sure where I first found this recipe(in 1978) but I remember being tickled that it had Cherry Coke in it and have been making it ever since...

1 small pkg black cherry jello (or cherry)
1- 16oz bottle cherry coke (now i buy a 20oz and measure)
1 c black pitted cherries (or maraschino cherries)
1 c pecans, chopped (optional)

Steps:

  • 1. Heat 1 cup cherry coke to a boiling point and add jello and stir to dissolve.
  • 2. Add remaining one cup of cherry coke which has been chilled. Stir.
  • 3. Add cherries and pecans. Pour into a shallow mold or bowl.
  • 4. Chill until firm. Best if you hide it in the back of the fridge and wait til everyone is asleep and eat it all yourself. :-) When I do this I top with a half a tub of cool whip.

3 c all-purpose flour
6 Tbsp baking cocoa
1 tsp baking soda
1/2 tsp salt
1 1/2 c granulated sugar
1 c unsalted butter, room temperature
2 large eggs
1 c buttermilk
1 1/2 c cola, don't use diet
3 tsp pure vanilla extract
1 can(s) cherry pie filling
for the glaze:
1 1/2 c powdered sugar
3-4 Tbsp coke
for the icing:
1 1/2 c heavy cream
6 Tbsp powdered sugar
1 tsp whip-it* optional
marachinocherries for garnish

Steps:

  • 1. For the Cake: Preheat the oven to 350 degrees and line muffin pans with cupcake liners. Mix together flour, baking soda, salt and cocoa in a bowl and set aside.
  • 2. In a mixing bowl, combine sugar and butter and beat on medium-high until light and fluffy. Mix in the eggs one at a time, beating well after each and scraping down the sides if needed. In a small bowl, combine buttermilk, Coke and vanilla extract, making sure to let the foam calm down after you mix it in. Foam will do us no good here.
  • 3. Beginning with the your flour mixture, add to the butter mixture, alternating with the Coke mixture in 4 parts. Beat each addition just until incorporated.
  • 4. Fill each muffin tin about 2/3 of the way full. Bake for 18-20 minutes until the tops spring back when touched lightly and a toothpick inserted in the center cupcake comes out clean. Cool 5 minutes in the pan and then transfer the cupcakes to a wire rack to cool completely.
  • 5. Once cooled, use a paring knife to cut out a cone shape in the middle of each cupcake. Add a spoonful of cherry pie filling to each cupcake. You may want to try to chop the cherries up a bit. The whole cherries were a bit hard to fit in each cupcake. Strain and reserve the liquid, give the cherries a quick chop, and then toss them back in the liquid before filling each cupcake.
  • 6. For the Glaze: Mix together powdered sugar and coke with a whisk in a small bowl until no lumps remain adding more or less sugar if needed. You want a thicker constancy, one that will glaze the cupcake but not disappear down the sides or into the cupcake.
  • 7. For the Icing: Chill your mixing bowl for 10 to 15 minutes before you are ready to make your icing. Beat cream in a chilled bowl with whisk attachment or hand mixer on low speed. If using, add the Whip-it then begin to add the powdered sugar, 1 spoonful at a time, increasing speed as the cream comes together. Whip the cream until it holds stiff peaks. Using your favorite tip, pipe the whipped cream onto cupcakes and top with maraschino cherries.
