This sparkling salad was as popular at my sister's party as the cherry-flavored cola was back in the 1950s.-Judy Nix, Toccoa, Georgia

1 can (20 ounces) crushed pineapple
1/2 cup water
2 packages (3 ounces each) cherry gelatin
1 can (21 ounces) cherry pie filling
3/4 cup cola

Steps:

  • Drain pineapple, reserving juice; set fruit aside. In a saucepan or microwave, bring pineapple juice and water to a boil. Add gelatin; stir until dissolved. Stir in pie filling and cola. , Pour into a serving bowl. Refrigerate until slightly thickened. Fold in reserved pineapple. Refrigerate until firm.

Jello salad is taken to a new level with this salad! I got this recipe years ago from one of the ladies at church and it is a favorite at the holidays, funerals and potlucks. Note: Prep time includes chilling time. I like to make this a day ahead of serving so it has time to thoroughly set.

1 can(s) (20 oz.) crushed pineapple, drained, but juices reserved
1 can(s) (14.5 oz.) sweet bing cherries or dark sweet cherries in heavy syrup, drained, but syrup reserved
1 box (8 serving size) cherry flavored jello
1 can(s) (12 ounce) chilled coca-cola or cherry coke or dr. pepper (depends what you have on hand!)
1/2 c chopped pecans or walnuts
TOPPING
1 pkg (8 ounce) cream cheese, softened to room temperature
1/2 c powdered sugar
2 c thawed cool whip

Steps:

  • 1. Drain the cherry syrup and pineapple juices into a saucepan. Set the fruit aside in the refrigerator to chill. Bring fruit juices to a boil, remove from heat and whisk in the Jello powder until fully dissolved.
  • 2. Transfer to a 4 cup glass measuring cup and add enough Coca-Cola to equal a total of 4 cups of liquid. You can also substitute additional Dr Pepper or cherry coke to make up the full 4 cups; transfer to a bowl and stir in the pineapple, cherries, and nuts. Can also pour into 9x13 glass pan if desired.
  • 3. Allow to fully set for at least 3 to 5 hours or longer - do not stir! Once it is set, mix the topping ingredients and frost the salad.
  • 4. For the topping, cream together the cream cheese and sugar; stir in the Cool Whip until well combined. Carefully frost the set-up salad with the topping. Cover with Saran wrap and refrigerate until ready to serve.

I was looking for something a little different to take to a family BBQ and found this in my Taste of Home 2003 annual recipes cookbook. The thing I like most about this recipe is the ingredients are usually in my cupboards. Very pretty if you make it in a glass serving bowl. Makes a great dessert, too.

1 (30 ounce) can dark sweet cherries (large can)
1 (3 ounce) package cherry Jell-O
1 (3 ounce) package strawberry Jell-O gelatin dessert
1 (8 ounce) package cream cheese
10 ounces Coke
1 (6 ounce) can crushed pineapple

Steps:

  • Boil juice from cherries, dissolve jello in juice, cool.
  • Blend cream cheese with small amount of the jello mixture.
  • Pour coke into rest of jello mixture.
  • Blend cheese mixture with coke stuff.
  • Add cherries and drained pineapple.
  • Mold and chill.

1/4 cup sugar
1/2 cup water
1 (6 ounce) package cherry Jell-O
1 (12 ounce) can Coke
1 can pineapple chunks, cut in half or 1 can pineapple tidbits

Steps:

  • Place pie filling, sugar, water, and juice from the pineapples in a saucepan.
  • Bring to a boil.
  • Add Jello and Coke.
  • Simmer over low heat until all foam is gone.
  • Add pineapple to top mixture Chill until set.
  • Remember to use a large pan!

I have been making this for my family since I was 8...I'm not sure where I first found this recipe(in 1978) but I remember being tickled that it had Cherry Coke in it and have been making it ever since...

1 small pkg black cherry jello (or cherry)
1- 16oz bottle cherry coke (now i buy a 20oz and measure)
1 c black pitted cherries (or maraschino cherries)
1 c pecans, chopped (optional)

Steps:

  • 1. Heat 1 cup cherry coke to a boiling point and add jello and stir to dissolve.
  • 2. Add remaining one cup of cherry coke which has been chilled. Stir.
  • 3. Add cherries and pecans. Pour into a shallow mold or bowl.
  • 4. Chill until firm. Best if you hide it in the back of the fridge and wait til everyone is asleep and eat it all yourself. :-) When I do this I top with a half a tub of cool whip.
