FILLING:
2-1/2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 cup cold butter, cubed
7 to 8 tablespoons cold water
2 cans (21 ounces each) cherry pie filling
1 cup fresh or frozen raspberries
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
TOPPING:
1 cup yellow cake mix
1/2 cup chopped pecans, toasted
1/2 cup flaked coconut
1/4 cup butter, melted
2 tablespoons 2% milk
2 tablespoons sugar

Steps:

  • Place the flour, sugar and salt in a food processor; cover and pulse until blended. Add butter; cover and pulse until mixture resembles coarse crumbs. While processing, gradually add water until dough forms a ball. Divide dough in half so that one portion is slightly larger than the other; wrap each in plastic wrap. Refrigerate for 30 minutes or until easy to handle. On a lightly floured surface, roll out larger portion of dough to fit a 9-in. deep-dish pie plate. Transfer pastry to pie plate; trim pastry to 1/2 in. beyond edge of plate. Combine the filling ingredients; spoon into crust. Sprinkle with dry cake mix, pecans and coconut. Drizzle with butter. Roll out remaining pastry to a 13-inch circle; cut into strips for a lattice top. While creating the lattice top, twist the pastry strips for a decorative effect. Seal and flute edges of pie. Brush lattice top with milk; sprinkle with sugar. Cover edges loosely with foil. Bake at 375° for 55-65 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack.

1 1/3 cups sugar

1/2 teaspoon lemon juice
2 eggs
1 cup sour cream

1/3 cup sugar
1 (19 ounce) can cherry pie filling
1/3 cup chopped pecans
1/2 teaspoon cinnamon
1/2 cup flour
1/2 cup butter, softened
1 teaspoon cinnamon
1 teaspoon vanilla

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking pan.
  • In a bowl, combine all streusel topping mixture; set aside.
  • In a bowl, combine the butter with 1-1/3 cups sugar, vanilla and lemon juice; beat in the 2 eggs, then stir in sour cream.
  • In another bowl, sift together flour, baking powder, baking soda and salt.
  • Add to the butter/sourcream mixture; mix well to combine.
  • Combine the pie filling with 1/3 cup sugar, pecans and cinnamon.
  • Spread 1/2 of the batter into a prepared baking dish, then spoon the cherry mixture over the batter.
  • Spread the remaining batter on top of the cherry mixture.
  • Sprinkle with the streusel topping.
  • Bake for 45 minutes.
  • Serve warm.

Suggested by a pie that Publix used to sell, one that was better than either a cherry or blueberry pie alone. This one starts with LubyLubyLuby's Best Cherry Pie recipe (thank you, Luby) and finishes with a streusel topping. If you don't have a pie crust handy, just bake the filling and streusel in a glass or ceramic baking dish and serve it as a crisp/cobbler/crurmble-esque dessert with a scoop of vanilla ice cream.

2/3 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1/2 tablespoon butter, softened
1 (14 1/2 ounce) can pitted tart cherries
2 -3 drops almond extract
1/4 teaspoon vanilla
1 (21 ounce) can blueberry pie filling (Comstock is what I find locally.)
1 single-crust 9 inch pie shell, homemade...or not. I use not.
1 1/4 cups flour
6 tablespoons light brown sugar
1/4 cup granulated sugar
3/4 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter, soft, but not melted
1/4 teaspoon vanilla

Steps:

  • Preheat oven to 400 degrees.
  • FILLING: Combine sugar, cornstarch and salt in a mixing bowl.
  • Drain cherries, pouring 1/4 cup of the juice into a small bowl or measuring cup. Set the cherries aside. Add almond extract and vanilla to the juice in the cup.
  • Add the liquid to the dry ingredients in the mixing bowl and mix well. Add the butter and use the back of a fork to smoosh it up into smaller pieces that will spread themselves around the mixture.
  • Stir in the cherries and let the mixture stand for 15 minutes. While it's sitting there, taunting you, make the streusel:.
  • STREUSEL: Combine all dry ingredients in a bowl, then add the butter and vanilla. Cut the butter into the dry ingredients with a pastry blender or two knives until mixture looks crumbly - like a bowl of gravel. (Bad analogy. Sorry.) Set the streusel aside. *Note to self: Next time, make the streusel with cold butter and the food processor, do it ahead of time, and store it in the refrigerator. That way, you can stand around and watch the cherries in that bowl and won't miss out on any of the action.*.
  • Back to the FILLING: Stir the blueberry pie filling into the cherries.
  • Pour filling into pie crust and sprinkle the streusel as evenly as possible over the top. Bake for 50 to 55 minutes.
  • Note: if you decide to go make it without the pie crust, less baking time is required. It will be done when it's bubbly and the streusel is browned - 40-45 minutes.

1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/2 cup coarsely chopped pecans
4 tablespoons cold unsalted butter, cut in small pieces
1/2 cup unsalted butter, melted
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups granulated sugar
1 cup low-fat sour cream
2 large eggs
1/2 teaspoon vanilla extract
1 1/2 cups dried cherries
1 cup coarsely chopped pecans

Steps:

  • Preheat oven to 350°F Butter and flour six mini loaf pans (each 5 3/4 by 3 inches). Make streussel topping: in a bowl, mix streusel ingredients with fingertips until most clumps form. Place in freezer.
  • Make cherry-pecan batter: In a medium bowl, mix flour, baking powder, salt and baking soda. In a large bowl, whisk butter, sugar, sour cream, eggs and vanilla until smooth. Mix in dry ingredients until moistened. Fold in dried cherries and pecans.
  • Divide batter evenly among prepared pans; spread to fill corners. Place pans on a baking sheet. Bake 15 minutes, then remove from oven and quickly sprinkle loaves with streusel topping.
  • Return loaves to oven; bake until golden and a toothpick inserted in center comes out with only a few moist crumbs attached, 20 to 25 minutes. Cool loaves 10 minutes in pans; turn out of pans, and cool completely, streusel side up, on a rack.

15 miniature phyllo cups

Steps:

  • Pre heat oven 350°F.
  • Combine streusel ingredients in a mini chopper or food processor.
  • Pulse until coarsely chopped.
  • Spoon approximately 1 tsp of pie filling into each phyllo shell.
  • Put 1/2 tsp of streusel topping on top of each little pie.
  • Bake for 15-20 minutes.
  • Serve immediately.

1 pouch Betty Crocker™ oatmeal cookie mix
1/2 cup butter, melted
1 egg
3/4 cup (8 oz) tart cherry preserves
2 cups Cascadian Farm® organic oats & honey granola
2 cups powdered sugar
1/4 cup heavy whipping cream
1/2 cup fresh blueberries, blackberries or cherries, if desired

Steps:

  • Heat oven to 350°F. Lightly grease 13x9-inch pan with shortening or cooking spray. In large bowl, mix cookie mix, melted butter and egg until thick dough forms. Press dough evenly in pan.
  • Spread preserves over cookie dough layer. Sprinkle granola evenly over preserves.
  • Bake 30 to 35 minutes or just until cookie layer is set. Cool completely, about 1 hour.
  • Cut into 4 rows by 3 rows to make 12 bars, or 4 rows by 4 rows to make 16 bars. Gently remove bars from pan; place on cooling rack or serving platter.
  • In small bowl, stir together powdered sugar and whipping cream until thin icing forms. Pour icing into small resealable food-storage plastic bag; seal bag. Cut off 1 bottom corner of bag; drizzle icing over bars. Top each with a few fresh berries. Let icing set before serving. If not serving immediately, cover tightly and store in refrigerator until serving time.

STREUSEL TOPPING
1/4 c all purpose flour
3 Tbsp brown sugar
3 Tbsp butter, cut into small pieces
1/2 c coarsely chopped walnuts
CAKE BATTER
1 stick butter, melted
1/2 c brown sugar, firmly packed
2 large eggs
1 1/2 tsp vanilla extract
1/2 tsp almond extract
2/3 c sour cream, lite, fat free or regular
2 c all purpose flour
1 1/2 tsp baking powder
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg
1/2 c fresh blueberries
1/2 c fresh bing cherries, pitted and coarsely chopped
ICING
3/4 c powdered sugar
2 Tbsp milk
Few dash(es) almond extract

Steps:

  • 1. Preheat oven to 350 degrees. Place oven rack in center position. Spray a standard size loaf pan with a good baking spray or grease and flour.
  • 2. With clean fingers, mix together the streusel topping and set aside. In a medium bowl, beat together the first six cake batter ingredients in order given. Sift together the next four dry ingredients. Stir with widen spoon into batter. Fold the fruit into the thick cake batter and spoon into the loaf pan. Batter will be quite thick.
  • 3. Sprinkle the streusel topping onto the top of cake batter. Gently press down on the streusel to ensure sticking to cake around edges of the pan. Bake for 1 hour or until toothpick tests done. Cool for 10 minutes on a rack in the pan. Gently remove loaf from the pan USING CAUTION AS THE BERRY JUICES ARE VERY HOT! I use heatproof silicon mitts. Cool loaf for one hour, then glaze and allow to dry.
  • 4. Prepare the glaze. Add all ingredients to small bowl and stir until glaze reaches drizzling consistency. A few more groups of milk may be added if too thick. Using a soon, drizzle glaze over cake. Allow to cool. Cover loosely and store at room temperature or in refrigerator.
