125g butter
125g golden caster sugar
225g plain flour
½ egg or 1 egg yolk
125g butter , at room temperature
125g golden caster sugar
3 medium eggs
1 lemon , zested
125g finely ground almonds or almond flour
120g Fabbri amarena cherries (see tip)
icing sugar , for dusting (optional)

Steps:

  • Mix together the butter, sugar, flour, a pinch of salt and the egg in a food processor to make a dough, then wrap and leave to rest in the fridge for 30 mins. The dough should be cold but still easy to work with by the time you roll it out.
  • Meanwhile, make the frangipane filling. Melt the butter in a pan over a low heat, then set aside to cool slightly. Beat the sugar with the eggs and lemon zest in a bowl until creamy. Pour in the melted butter while continuing to beat, then add the ground almonds (or almond flour) and fold into the mixture. Heat oven to 175C/155C fan/gas 3½.
  • Line a buttered tart tin or ring mould (approximately 23cm) with the rolled-out pastry dough, then trim any overhanging edges. Spread the frangipane evenly into the tin and arrange the cherries on top with some of their syrup, so the top of the tart is covered in a thin layer.
  • Put the tart in the oven and bake for about 40-45 mins until golden brown, puffed and firm to the touch. Leave to cool on a rack. Dust with some icing sugar, if you like, before serving in slices.

1/4 cup quick-cooking oats
3 tablespoons all-purpose flour
2 tablespoons brown sugar
1 tablespoon slivered almonds

Steps:

  • Press pastry onto the bottom and up the sides of an ungreased 9-in. fluted tart pan with removable bottom; trim edges., In a large saucepan, combine the sugar, cornstarch and salt. Stir in cherries; bring to a boil over medium heat, stirring constantly. Cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in extract. Pour into crust., For topping, combine the oats, flour, brown sugar and almonds. Cut in butter until mixture resembles coarse crumbs. Sprinkle over filling. 6 tablespoons orange juice
3/4 cup dried tart cherries (about 4 ounces)
1 cup plus 2 tablespoons all purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 7-ounce package almond paste, crumbled
6 tablespoons (3/4 stick) unsalted butter, melted, hot
3 large eggs
1 1/2 teaspoons grated orange peel

Steps:

  • Position rack in center of oven and preheat to 375°F. Butter ten 1/3-cup metal muffin cups. Bring juice to simmer in small saucepan. Remove from heat. Add cherries; let stand until softened, about 10 minutes.
  • Mix flour, sugar, baking powder and salt in medium bowl. Using electric mixer, beat almond paste and melted butter in large bowl until well blended (mixture will still have some small pieces of almond paste). Add eggs 1 at a time, beating well after each addition. Mix in cherry mixture and orange peel. Add flour mixture and mix just until blended.
  • Divide batter among prepared muffin cups. Bake until tester inserted into center of muffins comes out clean but slightly moist to touch, about 20 minutes. (Can be prepared 2 days ahead. Cool. Wrap muffins in foil and store at room temperature. Rewarm in foil in 350°F oven 5 minutes.) Serve warm.

I had never know about frangipane until I read this month's Bon Appetit. I have a fig tree and am collecting recipes to use them fresh. I decided to just enter this as a standard so I can use it with whatever fruit is in season. I adore almond anything so this will become a well used recipe.

1 egg yolk
1 tablespoon heavy cream
1 1/3 cups flour (plus what is needed)
6 tablespoons sugar
1/4 teaspoon salt
1 cup butter, chilled and diced (more as needed)
3/4 cup half-and-half
1/4 cup sugar
2/3 cup sugar
3 eggs
1 tablespoon flour
1 teaspoon vanilla
1 3/4 cups almonds, ground (this is the resultant amount)
1/2 cup butter, room temperature
12 ounces fruit (Stemmed, seeded and quartered or sliced as needed)

Steps:

  • Whisk egg yolk and cream in small bowl.
  • Mix flour, sugar and salt in a mixer with paddle.
  • Add 1 cup butter and mix on low until coarse meal forms.
  • Add egg mix and blend just until moist clumps form.
  • Gather into a ball and flatten into a disk. Wrap in plastic and chill 1 hour.
  • Butter tart pan.
  • Roll out dough to 13" round on a lightly floured surface and transfer to pan. Press onto bottom and up the sides of the pan. Trim excess dough.
  • Chill 30 minutes.
  • Bring half and half to a simmer in a small saucepan. Whisk 1st quantity of sugar, 1/3 of eggs and flour in a small bowl.
  • Gradually whisk in half and half.
  • Return to saucepan. Whisk constantly over medium heat until mixture thickens and boils, about 3 minutes.
  • Transfer to a small bowl.
  • Stir in vanilla.
  • Set over a bowl of ice water and stir pastry cream until cold. Remove from ice bath and set aside.
  • Grind almonds with half of 2nd quantity of sugar in a food processor being careful NOT to take it to a paste.
  • Using electric mixer, beat butter and remaining sugar until smooth.
  • Add remaining eggs 1 at a time, beating well between additions.
  • Gradually beat in almond mixture.
  • Add 1/2 cup pastry cream (reserve remaining for another use).
  • Cover and chill until firm, about 4 hours.
  • Preheat oven to 375.
  • Spread filling over crust. Arrange fruit (if fig cut side up)in concentric circles over filling.
  • Place tart on a rimmed baking sheet.
  • Bake until filling center is golden and set -- about 1 hour 15 minutes.
  • Let cool completely in pan on wire rack.

Filling
2 ounces crumbled almond paste (about 3 packed tablespoons)
6 tablespoons sugar, divided
3 1/2 tablespoons unsalted butter, room temperature
1 large egg
3 tablespoons cake flour
9 medium apricots (about 22 ounces), pitted, quartered
20 cherries, pitted, halved

Steps:

  • For crust:
  • Blend first 3 ingredients in processor until almonds are finely ground. Using electric mixer, beat butter and powdered sugar in medium bowl until blended. Beat in egg. Add flour mixture; beat until blended. Gather dough into ball; flatten into square. Wrap in plastic; refrigerate 1 hour.
  • Roll out dough on floured surface to 10-inch square. Transfer to 9-inch square tart pan with removable bottom; press crust over bottom and up sides of pan. Trim any excess dough. Pierce crust all over with fork; chill at least 2 hours. (Can be made 1 day ahead. Cover; keep chilled.)
  • For filling:
  • Preheat oven to 350°F. Using electric mixer, beat almond paste and 4 tablespoons sugar in medium bowl until fine meal forms, about 3 minutes. Add butter; beat until almost smooth. Add egg; beat until smooth. Beat in flour. Spread filling evenly in unbaked crust. Arrange apricot quarters on sides with rounded side up in rows atop filling. Place cherry halves between apricots. Sprinkle remaining 2 tablespoons sugar over fruit.
  • Bake tart 30 minutes. Reduce oven temperature to 325°F. Bake until crust is golden and filling is puffed and golden, about 30 minutes longer. Cool tart in pan on rack at least 1 hour. Serve tart warm or at room temperature.

375g block dessert pastry
about 700g/1lb 9oz cherries , stoned
100 g/ 4 oz unsalted butter at room temperature
100 g/ 4 oz golden caster sugar
100 g/ 4 oz ground almond
1 egg
splash of Disaronno or Marsala, if you have it
2 x 250g tubs mascarpone
zest and juice 1 lemon
140 g/ 5 oz icing sugar , plus extra for dusting

Steps:

  • Roll out the pastry on a lightly floured surface to just thinner than a £1 coin. Use to line a 22cm loose-bottomed tart tin, leaving an overhang on the sides. Leave to chill in the fridge on a baking sheet. To make the frangipane, whizz everything together in a food processor until combined.
  • Heat oven to 200C/180C fan/gas 6 and line the tart case with baking parchment and beans. Bake for 20 mins, then remove parchment and beans, lightly prick the base with a fork and continue to bake for 10 mins until pale biscuity. Spread the frangipane over the base and return to the oven for 15 mins until cooked. Remove from the oven, trim the sides of the pastry and leave to cool completely.
  • Beat the mascarpone with the lemon zest and juice and the icing sugar. Spread over the frangipane. Arrange the cherries on top, dust heavily with icing sugar, remove from the tin and serve.

1 (4 by 4-inch) square frozen store-bought puff pastry, preferably all-butter (such as Dufour brand), defrosted
3 tablespoons unsweetened dried cherries
3 teaspoons Mulled Wine Syrup (page 6), made with red wine
2 tablespoons sliced almonds
2 tablespoons low-fat Greek-style yogurt, whisked smooth

Steps:

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • On a lightly floured countertop, roll out the puff pastry to about 6 inches square. Pierce the dough every 1/2-inch with a fork; this helps the pastry rise more evenly. Mound the cherries in the center of the dough and drizzle 2 teaspoons of the red wine syrup over them (but not the pastry). Lightly moisten the edges of the dough with water, pull it up, and fold it over to the edges of the cherries, forming pleats so that it cradles the fruit. Scatter the almonds on top.
  • Transfer the tart to the prepared baking sheet and bake for 20 to 25 minutes, until the pastry has puffed and turned golden brown. Remove it from the oven and let cool for a few minutes. Transfer to a dessert plate, drizzle with the remaining 1 teaspoon of red wine syrup, spoon on a dollop of yogurt, and eat.

A generous cherry tree loaded us with buckets full of fresh fruit. Looking for creative ways to use the cherries, I modified an Argentine tart recipe to create this satisfying summer dessert. My family loved it, and it would be just divine with almost any fresh summer fruit.

CRUST
3 cup(s) all purpose flour
6 teaspoon(s) baking powder
3/4 cup(s) sugar
1 3/4 stick(s) butter, cold
2 - eggs, cold
- pinch of salt
4 tablespoon(s) sour cream
1 tablespoon(s) lemon juice
FILLING
3 cup(s) fresh cherries (or other fruit), pitted and halved.
1 1/2 cup(s) sugar
2 tablespoon(s) lemon juice
4 tablespoon(s) corn starch
3/4 cup(s) slivered almonds or coconut

Steps:

  • Sift the flour, baking powder, sugar, and salt.
  • Cut the cold butter into little squares and make a fine crumble with previous ingredients. (You can use a food processor, etc for this, but if you use your hands/pastry cutter, make sure you don't heat up the butter.)
  • Mix the sour cream with the lemon juice before adding, then add the eggs and mix dough slightly to form a ball. Be careful not to over-knead the dough, as it should be crumbly. (This is to maintain a flaky consistency when baking.)
  • Cover the ball of dough with plastic wrap and refrigerate it for at least 15 minutes.
  • Preheat oven to 350 degrees F.
  • Prepare the fruit and mix it with the sugar. Then, mix the lemon juice and corn starch together until smooth and add to the fruit mixture. Cover and let stand.
  • When the dough is ready, pull it out of the fridge and divide it in half, spreading each half evenly into the bottom of two 9-inch pie pans, and grooving the dough upwards along the sides of the pans. (I used deep dish pans.)
  • Bake at 350 degrees F. for 10 minutes.
  • As soon as you put the crusts in the oven, pour the fruit mixture into a saucepan and simmer on medium heat until it begins to boil, stirring frequently. Once mixture begins boiling, remove pan from heat and allow it to cool, uncovered, until oven timer beeps.
  • Remove pastries from oven and quickly spoon fruit mixture evenly over the top of the pastries. Then sprinkle nuts/coconut over the tarts and spoon any remaining liquid from fruit mixture over top.
  • Immediately return pies to oven and bake for another 15 minutes, or until nuts are golden and pastry tests done.
  • Allow to cool for at least 30 mins before serving. Delicious served warm or cold, with a dollop of whipped cream or mascarpone.

1 large egg

1 cup(s) gluten-free all purpose flour mix, without gums
1/4 teaspoon(s) kosher salt
2 ounce(s) bittersweet chocolate, finely chopped
1 1/4 pound(s) cherries, pitted and halved
2 tablespoon(s) dark brown sugar(splenda has this too)
1 cup(s) organic heavy cream

Steps:

  • Heat the oven to 350 degrees F. In the bowl of a food processor,pulse sugar,almond butter, butter and egg together until well combined. Add the extracts. Beat to combine. In a separate bowl,mix flour with salt. Pulse flour mixture into butter mixture until fully incorporated.
  • Press the dough into the bottom and up the sides of a 9-inch tart pan with removable bottom. It may help to wet your hands a bit. Chill the dough for 30 minutes. Poke the tart with a fork many times across the bottom. Line inside of tart shell tightly with nonstick foil.
  • Adhering it to the bottom and sides of the crust to support it during baking. Place on a sheet pan. Bake for about 15 minutes,or until the sides of the dough look dry. Remove foil and bake for about 12 more minutes,or until the center of tart looks dry and the edges begin to brown.
  • Remove from sheet pan to cool slightly. (If you don't own a tart pan, roll dough out on parchment into a 1/2-inch thick square, place on sheet pan with parchment, chill for 30 minutes, poke all over with fork, and bake until edges are golden and crust is dry looking (about 20 minutes.)
  • While tart is still warm,remove from the tart ring and place on a serving platter. Melt the chocolate in a bowl over gently simmering water. Paint chocolate with a pastry brush to coat inside of crust.
  • Let cool completely,until chocolate is set. Toss cherries with brown sugar and let sit for 15 minutes. Whip the cream to soft peaks just before serving. Spoon into shell,top with cherries and serve!
