Number Of Ingredients 4

2 tablespoons butter or 2 tablespoons oleo
2 tablespoons flour
1/2 teaspoon salt
1 cup milk

Steps:

  • Melt butter over low heat in sauce pan.
  • Blend in flour and seasoning over low heat, stirring constantly, until mixture is smooth and bubbly.
  • Allow to cook for at least 1 minute to eliminate raw flour flavor.
  • Remove from heat, SLOWLY add milk, stirring constantly to make a smooth paste; stir in remaining milk.
  • Return to heat, stirring constantly.
  • Bring to a boil again and keep stirring until thickened.
  • If you want cheesy white sauce, add 1/2 cup shredded cheese (you can add as much cheese as you like to make it as cheesy as you wish).
  • Cover pan with tight fitting lid to prevent film formation until sauce is to be used.
  • Use on creamed and scalloped foods, sauces, gravies and in vegetable dips.

1/3 cup butter
1/3 cup flour
3 cups half-and-half cream (use 3-1/2 cups for a thinner texture)
1 -2 tablespoon fresh minced garlic (or to suit taste, I like lots!)
1/8 teaspoon ground nutmeg
1/2-1 teaspoon dried thyme (or to suit taste)
fresh ground black pepper
1/2-3/4 cup grated parmesan cheese
2 cups grated swiss cheese (Swiss is best) or 2 cups cheddar cheese (Swiss is best)
salt (to taste)

Steps:

  • In a heavy-bottomed saucepan, over medium heat, melt the butter.
  • Add in the chopped garlic, thyme, nutmeg and black pepper; cook for 1 minute.
  • Add in 1/3 cup flour; whisk/mix for 2 minutes.
  • Slowly whisk in the cream; bring to a light boil over medium heat stirring constantly for 2-3 minutes, until the mixture is thick and bubbly (at this point you may add more cream if you desire a thinner sauce) .
  • Reduce the heat to low; add in the grated Parmesan cheese and Swiss cheese; mix well until the cheese are completely melted.
  • Season with salt to taste.

1 pound Gnocchi (homemade or store-bought, my store-bought Gnocchi said cooked in 2 minutes)
1/4 cup + 2 tablespoons freshly grated Parmesan cheese
1 cup grated Fontal (or Gruyere) cheese
fresh thyme
WHITE SAUCE
1 tablespoon butter
1 cup milk (I used 2%)
1 tablespoon flour
pinch salt
dash of oregano, basil and pepper

Steps:

  • 1.Pre-heat oven to 425°, lightly oil an 8 x 6 inch baking dish. 2.In a large pot of boiling salted water add the Gnocchi, remove as soon as the Gnocchi float (no more than 30 seconds) and drain well. 3.In a medium pot over medium heat melt butter, then add flour and salt, combine with a whisk, add milk slowly and continue to stir until thickened (but not too thick, if it becomes too thick add a little extra milk), stir in oregano, basil and pepper. Remove from heat. Stir in half the Fontal (or Gruyere cheese) and ½ the Parmesan cheese, then gently add the Gnocchi. 4.Place in baking dish, sprinkle with remaining Fontal cheese and Parmesan cheese, top with fresh thyme if desired. Bake for 3-5 minutes then broil for another 3-5 minutes. Let sit a couple of minutes before serving. Enjoy!

1 pinch cayenne pepper (optional)
1 (8 ounce) package cream cheese, very soft
1/2 cup milk (or use 1/4 cup cream and 1/4 cup milk)
1 1/4 cups grated parmesan cheese
fresh ground black pepper

Steps:

  • In a heavy saucepan melt the butter over medium-high heat; add in garlic and cayenne and cook stirring for about 2 minutes.
  • Add in the soft cream cheese and stir until melted.
  • Add in milk; bring to a simmer over low heat whisking until combined, smooth and heated through.
  • Stir in Parmesan cheese, then season with black pepper to taste.
