- Preheat oven to 350 degrees F.
- Prepare mashed potatoes according to package directions.
- Add shredded cheese (reserve enough to top mushrooms), chives and bacon.
- Remove stems from clean mushrooms and stuff caps with potato mixture.
- Spread olive oil and minced garlic on bottom of walled cookie sheet or baking dish. Place mushrooms on top.
- Sprinkle shredded cheddar over the top of the mushrooms.
- Bake for 20-25 minutes.

CHEESY STUFFED MUSHROOMS
These are delicious mushrooms my boyfriend's father made that I tweaked into my own. You can play with different cheeses and sauces including salad dressings. I have found these to be my favorites. I have taken the stems, put them in a food processor and then combined them with some butter and flour to make a steak sauce that is delicious! Nothing goes to waste!

- Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source. Line a baking sheet with aluminum foil.
- Broil the mushrooms on the baking sheet stem-side-down for 5 minutes to soften. Remove from the oven, and turn the mushroom caps over. Place a dab of the steak sauce into each cap, then place a piece of brie on top. Return to the oven, and broil until the cheese is bubbly and golden brown, about 5 minutes more.

- Lay the portabella mushrooms on the bottom of the casserole dish.

CHEESY STUFFED MUSHROOMS
Prebaking the mushrooms to extract the moisture in them is a critical step, don't stuff the mushrooms before baking them firstly! Although this recipe will make about 18-20 large stuffed mushrooms, I strongly suggest to double the amounts, you will be eating half of them just yourself, they are THAT good! These are still really good without adding the mozzeralla cheese on top, but I think they are even better with the cheese, you can even sprinkle with Parmesan cheese in place of the mozza cheese.

- Pulse the fresh bread in a food processor, then transfer to a bowl and toss with 2 tablespoons olive or vegetable oil, salt and pepper (I use about 3/4 teaspoon seasoning salt or white salt).
- Spread the mixture onto a baking sheet and bake until golden (about 6-8 minutes) transfer to a bowl.
- Carefully remove the stems from the mushroom caps and finely chop.
- Lay the mushroom caps stemmed side down on a lightly greased baking sheet (set oven rack to second-lowest position or middle rack for this) bake for about 12 minutes at 375 degrees.
- White the caps are baking, melt about 3 tablespoon butter in a heavy skillet over medium-high heat.
- Saute the chopped stems, stirring until golden (about 5-6 minutes).
- Add in onion, celery, garlic, oregano, salt and black pepper; saute stirring occasionally until the onion is golden (about 5 minutes) cool veggies slightly, then add in the bread crumb mixture with Parmesan, asiago and chopped parsley; toss well to combine.
- Remove the caps from the oven, turn over, then spoon the filling into the caps pressing gently (there might be some filling left over).
- Bake second-lowest rack or middle oven at 375 degrees or until tender and the stuffing is golden brown (about 20-22 minutes).
- Remove from oven and sprinkle the caps with grated mozzeralla cheese, return to oven (or broil) for about 5 minutes or until the cheese has melted.

- Turn your grill on to high to give it a chance to heat. Put three quarters of the butter in your largest frying pan and heat until melted. Take each mushroom and pull away the stalk then put the mushrooms in the buttery pan, flat side down. Scatter round the stalks, tearing them as you go to break them up a little. Cook over a high heat for 5 minutes, turning the mushrooms over half way through, until they are golden and juicy.
- Meanwhile toast the bread in a toaster or under the grill and when ready, spread with the remaining butter.
- Take the mushrooms from the pan (leave the stalks behind) and put them cup side up in a shallow heatproof dish. Now tip the spinach into the pan with the stalks and stir it around in the buttery juices for about a minute, just until it wilts. Pile the mixture onto the mushrooms, cover the spinach with a slice of cheddar and flash under the grill until the cheese just melts. Serve each mushroom on a slice of the buttered toast and spoon over the juices.

- Preheat the oven to 425 degrees F.
- If your mushrooms caps are very rounded, trim a very thin slice from the top of the caps to help them sit upright for baking. Toss the mushroom caps with the olive oil and 1/4 teaspoon salt in a large bowl.
- Heat the butter in a large skillet over medium-high heat. Add the chopped mushroom stems and carrot and cook, stirring occasionally, until just soft, 6 to 8 minutes. Scrape into a large bowl, season with 3/4 teaspoon salt and set aside to cool.

- 1. Preheat oven to 350 degree F. Spray baking dish large enough to hold 12 mushrooms. I used my mini muffin tin. They stay in place nicely.
- 2. In a small skillet, add about a tbsp olive oil. Over med heat; add the minced stems and onion. Saute for about 3 minutes, or until all the liquid has evaporated from the stems, and onions are soft. Add the minced garlic, continue cooking for another minute or so. Add a bit more oil if necessary. Set aside to cool.
- 3. In the meantime, clean mushrooms, brushing off any dirt softly with a paper towel.
- 4. In a medium bowl; stir softened cream cheese with remaining ingredients.
- 5. Spoon about a tablespoon full into each mushroom cap. I then dipped the top of the mushroom into the Parmesan cheese.
- 6. Bake for 18 - 20 minutes. Enjoy!

That got ideas floating across the table, hubby started it: What if you added crab meat? Then the idea got rolling full force between us! Make a light dressing/stuffing, nothing...

- 1. Open the 3 cans of crab meat, using the lids to drain off the liquid in each can. The crab meat is very fine, so press down on the opened tin lid, and drain quickly what you can of the liquid without letting the crab meat fall out. Dump what is left in a medium mixing bowl with the remainder of liquid.
- 2. Slice/chop one stalk of celery, I sliced mine about 1/8th inch thick, then cut up each slice about the same width. Add to bowl with the crab meat. Mix it around with a long tined dinner fork.
- 3. Crack the jumbo egg, or very large, large egg, or two medium eggs into the bowl. Mix that in with the long tined fork.
- 4. Add the bag of shredded cheese [if you have an 8oz package of other cheese blend than the 7.5oz Sargento's 4 State Cheddar blend I found at Sweetbay as a new product, it's okay.]
- 5. Add your preferred amount of fresh ground black pepper, or canned black pepper. Start adding by degrees the Italian seasoned bread crumbs. Stir after adding with the long tined fork. I think I used about 1C of the seasoned bread crumbs. You want to soak up the liquid in the bowl so the mixture is still damp, but will hold together so you can add generous tablespoons full to the underside of your large mushroom caps to divide the mixture evenly according to size of large mushroom cap. Use your hand to gently pack the dressing onto the mushroom cap and make the sides of the dressing patty neat around the edge of the mushroom cap.
- 6. I placed my mushroom caps in a large glass rectangular baking pan, ungreased, that the stuffed mushroom caps fit in [a bigger than 13x9, but could have fit them in the 13x9 glass baking dish]. Covered with foil. Baked at 350 degrees for 30 minutes. Removed foil, and let finish baking uncovered another 15 minutes.
- 7. Let stand 5 minutes, then you can get the cooked stuffed mushroom caps out without breaking them.
