CHEESY SPOON BREAD
Spoon bread can't be sliced and buttered. This pudding-like casserole made with dry milk and corn meal is so soft and creamy, it has to be eaten with a spoon. Serve as a main dish or as a side dish with pork chops, sliced tomatoes and a cold drink.

- 1. Heat oven to 375^. Grease a 1 1/2 quart casserole dish. Combine dry milk powder and corn meal in a large saucepan. Stir in water. Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens. Remove from heat. Stir in 3/4 cup cheese, egg yolks, margarine and baking powder. Beat egg whites in small mixer bowl until stiff peaks form Fold into corn meal mixture, gently but thoroughly. Pour into prepared dish. Sprinkle with remaining cheese. Bake 30-35 minutes or until golden brown and fill is set. serve warm.

Steps:
- Mix the wet ingredients and the dry ingredients in separate bowls, and then combine them. Add salt and fresh cracked pepper to taste.
- Pour into a greased 8-9 inch square pan or 10 inch cast iron skillet, or 1-1/2 quart casserole baking dish. Top with small dabs of butter (about 2 or 3 tablespoons).
- Bake at 350ºF. for 50-55 minutes, or until golden brown and get set in the middle, (To test, give it a shake, it shouldn't jiggle too much in the middle when it's ready).
- UPDATE NOTE: I made the correction in Step 2 for the baking size pan for 12 servings, and added optional ingredients according with a review posted below.

MEXICALI SPOON BREAD CASSEROLE

Steps:
- Brown beef, onions, green pepper, and garlic over medium heat.
- Drain off any fat.
- Add remaining ingredients.
- Heat through.
- Pour meat mixture into baking dish; I use a 13"x 9" pan.
- Make Cornmeal Topping: Mix milk, cornmeal, and salt in saucepan.
- Cook and stir over medium heat until mixture thickens.
- Remove from heat and stir in cheese and eggs; mix well.
- Immediately pour onto beef mixture and spread evenly.
- Bake at 375 for about 40 minutes, until golden.
- Serve with sour cream and any other of your favorite Mexican garnishes!

- In a large saucepan, heat 3 cups milk over medium heat until bubbles form around sides of pan. , Meanwhile, in a small bowl, combine the cornmeal, sugar, salt and remaining milk until smooth. Slowly whisk cornmeal mixture into hot milk. Cook and stir until mixture comes to a boil. Reduce heat; simmer for 5 minutes, stirring constantly. , Remove from the heat. Sprinkle baking powder over the cornmeal mixture, then stir it in with the butter. In a small bowl, beat egg yolks; stir in a small amount of hot cornmeal mixture. Return all to the pan and mix well. , In a small bowl, beat egg whites until stiff peaks form. Fold a fourth of the egg whites into the cornmeal mixture. Fold in remaining egg whites until blended. , Transfer to a greased 2-1/2-qt. baking dish. Bake, uncovered, at 350° for 40-45 minutes or until puffed and golden brown. Serve immediately.

- In a skillet, sauté onion in butter until tender; set aside.
- In a bowl, beat eggs; add sour cream, both cans of corn, salt and pepper.
- Stir in corn bread mix just until blended.
- Fold in sautéed onion, jalapeño and 1 1/2 cup cheese.
- Transfer to a greased shallow 3-quart baking dish.
- Sprinkle with the remaining cheese.
- Bake, uncovered, at 375°F for 35-40 minutes or until a toothpick inserted near the center comes out clean; cool slightly.
