We used salmon and haddock in this creamy oven bake, but use your favourite fish of choice

2 tsp olive oil
3 leeks , halved and thinly sliced
½ small pack parsley , finely chopped
250g fish pie mix (ours contained haddock and salmon)
2 tsp wholegrain mustard
350ml pot cheese sauce
wholemeal bread to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6 and heat the oil in a large frying pan. Add the leeks and some seasoning, and cook for 10 mins until really soft. Stir in half the parsley and spoon into 2 gratin dishes.
  • Divide the fish between the 2 dishes, mix the mustard into the cheese sauce and spoon over the top of the fish. Place on a baking tray and cook for 15 mins - you can put the bread in the oven to warm through for the last few mins if it is a little stale. Remove the bread from the oven and turn the grill on to brown the tops of the gratin for 2 mins, then remove from the oven. Scatter the gratin with the remaining parsley and serve with chunks of bread to mop up.

2 tablespoons unsalted butter
1/4 cup fresh chives, finely chopped
8 oz rotini pasta
1/2 cup dry sherry or white wine
8 oz. bay scallops
8 oz. cod, cut into pieces
8 oz peeled shrimp
1-1/3 cups shredded sharp Cheddar cheese
1 (10.75-oz) can condensed cream of shrimp soup
1 (10-oz) container lobster bisque
1/2 cup panko bread crumbs
2 teaspoons Bakery Parmesan bread dip seasoning

Steps:

  • Prep - Preheat oven to 375°F. - Bring water to boil for pasta. - Cut butter into pieces; place in small bowl to soften. - Chop chives. Steps 1. Cook and drain pasta following package instructions. 2. Preheat large sauté pan on medium 2-3 minutes. Place wine, scallops, cod, and shrimp in pan; bring to a simmer. Cook 2-3 minutes or until seafood is opaque and wine has reduced by about one-half. 3. Combine in large bowl: chives, cheese, soup, bisque, pasta, and shrimp mixture until blended; transfer to 2-quart baking dish. 4. Blend bread crumbs and seasoning into butter, using finger tips, until crumbly; top seafood mixture with crumbs. Bake 20-25 minutes or until golden and bubbly. Serve. **Can also add 1-2 lobster tails, cut into pieces, if desired ** I used "ruffles" pasta which worked out great
