SUNNY'S EASY BACON CHEESEBURGER SALISBURY STEAKS

1 1/2 pounds ground chuck (80 percent meat, 20 percent fat)
1/2 cup Italian breadcrumbs
1/4 cup yellow mustard
1/4 cup ketchup
2 tablespoons red onion pulp (grate an onion on a rasp grater or the small side of a box grater)
1 1/2 teaspoons kosher salt
Freshly ground black pepper
2 strips bacon
2 cups beef stock
2 cups heavy cream
5 to 6 slices yellow American cheese (4 ounces)
One 12-ounce bag egg noodles
1/2 cup loosely packed fresh parsley, chopped

Steps:

  • For the Salisbury steaks: In a large bowl, add the chuck, breadcrumbs, mustard, ketchup, onion pulp, salt and a few hefty grinds of black pepper and gently mix to combine. Divide into fourths and make four 1/2- to 3/4-inch-thick oval burgers; set aside.
  • In a large pan with straight sides on medium heat, add the bacon and cook until crisp, 8 to 10 minutes. Remove to a paper towel-lined plate, leaving the bacon fat in the pan. Cool the bacon, then chop.
  • In the same pan, turn the heat to high and add the formed burgers. Sear on one side for a few minutes, then remove to a plate.
  • For the sauce: In the same pan, add the beef stock and scrape up any bits. Add the heavy cream and American cheese and stir. Bring to a boil. Stir in the noodles. Nestle the burgers into the noodles and sauce, cover, lower the heat to a simmer and cook until the burgers are done and the noodles are cooked, about 10 minutes. Stir in the parsley and bacon.
  • Serve family style or place a burger on a plate with noodles and serve topped with sauce.

3 3/4 qt milk
2 3/4 lb bread
1 1/2 dozen eggs
1/2 c sea salt
2 tsp black pepper
1/4 c worcestershire sauce
2 onions chopped
2o lb ground beef
1/2 tsp sage, dried

Steps:

  • 1. Add bread to beaten eggs and milk mixture. Soak.
  • 2. Addto ground beef, mix in Worcestershire sauce, salt, pepper, onions, and sage. mix well
  • 3. Make into loaves and bake in 350 degree oven for 1 hour.
  • 4. Remove from oven and slice. Pour hot mushroom sauce over loaf. Serve.

This is great for a crowd, or to have planned-overs! We like it served with mashed potatoes, noodles, rice, or mac-n-cheese and an in-season vegetable. The kids like it with creamed style corn, or corn pudding.

2 can(s) condensed french onion soup
1 c oatmeal
3/4 c egg beaters
3 lb ground chuck
1/2 tsp sea salt
1 Tbsp mrs. dash garlic seasoning
1/2 tsp freshly ground black pepper
GRAVY
3 Tbsp all-purpose flour
remaining onion soup
1/2 c ketchup
3 Tbsp steak sauce (you can substitute worcestershire sauce)
1 tsp dry mustard
1/3 c dry red wine

Steps:

  • 1. Preheat oven to 350.
  • 2. In large bowl, combine the ground beef, oatmeal, egg substitute, salt, Mrs. Dash Garlic Seasoning, pepper and 2/3 Cup of the condensed onion soup.
  • 3. Shape into 10=12 oval patties. Spray non-stick pan with olive oil, or use just enough oil to cover bottom of pan. Brown on both sides over medium high heat. You do not want to crowd the pan when browning, so only do 3-4 steaks at a time, remove from and keep warm while you finish browning the rest. Keep warm while you make the gravy.
  • 4. In medium bowl blend flour and the remaining soup til smooth; add the ketchup, red wine, steak sauce and dry mustard.
  • 5. Place steaks in lightly greased 9X12 baking dish. Pour gravy over the steaks. Bake covered with foil for 25 minutes. Remove foil and bake an additional 10 minutes, or until steaks are done, and gravy has thickened.

5 pounds lean ground beef
3 large eggs
1 tablespoon olive oil
3 large bell peppers, minced
1 large onion, minced
3 cups shredded Cheddar cheese
2 cups panko bread crumbs
½ cup Worcestershire sauce
3 tablespoons steak sauce (such as A1®)
3 tablespoons ketchup
2 tablespoons salt
1 ½ tablespoons ground black pepper
1 ½ tablespoons garlic powder

Steps:

  • Mix ground beef and eggs together in a very large bowl.
  • Heat oil in a large skillet over medium heat; stir in bell peppers and onion. Cook and stir until vegetables are tender, 5 to 7 minutes.
  • Add cooked vegetables, Cheddar cheese, panko, Worcestershire sauce, steak sauce, ketchup, salt, pepper, and garlic powder to the beef mixture; mix until well combined.
  • Pinch off a piece of the meat mixture and form it into a quarter-sized patty. Fry it in the same skillet until done, 2 to 3 minutes per side. Taste and adjust seasonings to remaining mixture, if needed.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Form meat mixture into 25 equal-sized patties. Brown several patties at a time in the skillet, being careful not to burn them, 3 to 5 minutes per batch. Transfer patties to baking sheets.
  • Bake in the preheated oven until cooked through, 10 to 20 minutes. An instant-read thermometer inserted into the center should read at least 155 degrees F (63 degrees C).

Shape into 4 oval patties. , In a large skillet over medium heat, cook patties for 5-6 minutes on each side or until no pink remains and a thermometer reads 160°. , Remove patties and keep warm. Add the gravy, mushrooms and water to skillet; cook for 3-5 minutes or until heated through. Serve with patties and noodles if desired.
