1/4 cup butter
6 medium cooking onions, sliced
1 teaspoon sugar
1 tablespoon all-purpose flour
1 cup dry white wine
4 cups beef broth
1/4 teaspoon pepper
6 slices day-old French bread
2 cups swiss cheese, Grated
1/2 cup parmesan cheese, Grated
paprika

Steps:

  • In large Dutch oven over medium heat, melt butter.
  • Add onions and sugar.
  • Cover and cook, stirring occasionally, 30 minutes or until onions are tender but not colored.
  • Uncover pan, increase heat slightly and continue to cook, stirring regularly until onions are rich caramel colour (10 to 15 minutes) DO NOT LET ONIONS BURN.
  • Stir in flour until well blended.
  • Gradually add wine; cook, stirring constantly, until mixture boils and thickens.
  • Stir in beef broth and pepper; bring to boil.
  • Reduce heat to low.
  • Cover and simmer 15 minutes.
  • Ladle soup into 6, 1-1/2 cup oven proof bowls.
  • Top each with bread slice; sprinkle with swiss cheese and parmesan cheeses and paprika.
  • Place bowls on jelly roll pan.
  • Broil until cheese melts and bubbles.

7 tablespoons butter, divided
1 1/2 cups day-old bread, cubed
3 large onions, quartered & thinly sliced
1 1/2 cups water
4 1/2 teaspoons chicken bouillon granules
1/4 cup all-purpose flour
1 3/4 cups milk, divided
1 1/2 cups shredded swiss cheese, divided
pepper
fresh minced chives (optional) or fresh minced parsley (optional)

Steps:

  • Melt 3 tablespoons of butter; toss with bread cubes.
  • Place on a lightly greased baking sheet.
  • Bake at 350° for 7 minutes; turn and bake 7 minutes longer or until toasted.
  • Meanwhile, in a large saucepan, sauté onions in remaining butter until lightly browned, about 12 minutes.
  • Stir in water and bouillon; bring to a boil.
  • Reduce heat; cover and simmer for 15 minutes.
  • Combine flour and 1/2 cup of milk until smooth; gradually stir into onion mixture.
  • Stir in remaining milk.
  • Bring to a boil; boil for 2 minutes, stirring until thickened.
  • Reduce heat to low; stir in 3/4 cup Swiss cheese and pepper.
  • Ladle into 4 oven proof bowls; sprinkle with reserved croutons and remaining cheese.
  • Broil 4 inches from heat until cheese is melted and bubbly.
  • Garnish with chives.

2 c thin sliced sweet onions
6 Tbsp butter, divided
1 can(s) ( 14 1/2 ounces ) chicken broth
2 tsp chicken bouillon , or chicken soup starter paste
1/4 - 1/2 tsp pepper
3 Tbsp flour
1 1/2 c milk
1/4 c velveeta processed cheese, cut into small cubes
shredded cheddar cheese and parsley ( optional)

Steps:

  • 1. Gather ingredients Ignore the sour cream, had pic taken before realized it wasn't needed in the soup
  • 2. In large skillet, cook the onions in 3 tablespoons of butter over medium heat until tender.
  • 3. Add the broth, bouillon and pepper, bring to boil and remove from heat.
  • 4. In a large saucepan, melt the remaining butter. Stir in flour until smooth. Slowly blend in the milk
  • 5. Bring to a boil for 1 - 2 minutes or till thickened. Reduce heat; add processed cheese and the onion mixture. Cook and stir until the cheese is melted.
  • 6. If you want, garnish with shredded cheddar and some parsley... This is very savory and delicious!

2 tablespoons shortening (or oil)
4 onions (dice)
2 tablespoons flour
1 quart milk
1 cup American cheese (grated)
salt (to taste)
pepper (to taste)
paprika (sprinkle on top)

Steps:

  • Melt shortening in a pot and add the onions; cook till browned.
  • Add flour, stirring constantly.
  • Add milk (a little at a time), stirring constantly.
  • When soup gets HOT and THICK, add the cheese and stir till cheese is melted and soup is smooth.
  • Season with salt and pepper.
  • Shake paprika on top of soup in bowl and serve.

6 Tbsp butter
4 large yellow onions, sliced and separated into rings
1 Tbsp white sugar
2 clove garlic, minced
1/2 c cooking sherry
7 c reduced-sodium beef broth
1 tsp sea salt, or to taste
1/4 tsp dried thyme
1 bay leaf
8 slice french bread
1/2 c shredded gruyere cheese
1/3 c shredded emmental cheese (if you can't find this, you can use a good swiss cheese)
1/4 c freshly shredded parmesan cheese
2 Tbsp shredded mozzarella cheese

Steps:

  • 1. In a large heavy pot, heat butter over medium-high heat; cook and stir onions until they become translucent, about 10 minutes. Sprinkle onions with sugar; reduce heat to medium. Cook, stirring constantly, until onions are soft and browned, at least 30 minutes. Stir in the garlic and cook until fragrant, about 1 minute.
  • 2. Stir sherry into onion mixture and scrape bottom of pot to dissolve small bits of browned food from the pot. Transfer onions into a slow cooker and pour in the beef broth. Season to taste with sea salt; stir in thyme and bay leaf.
  • 3. Cover and cook on LOW for 8 to 10 hours. About 10 minutes before serving, set oven rack about 8 inches from the heat source and preheat the oven's broiler. Arrange bread slices on a baking sheet.
  • 4. Broil bread slices until toasted, 1 to 2 minutes per side.
  • 5. Combine Gruyere, Emmental, Parmesan, and mozzarella cheeses in a bowl, tossing lightly. Fill oven-safe soup crocks 3/4 full of onion soup and float a bread slice in each bowl. Top with about 2 Tbsp. of cheese mixture per serving.
  • 6. Place filled bowls onto a baking sheet and broil until cheese topping is lightly browned and bubbling, about 2 minutes.

1/2 cup unsalted butter
5 lbs vidalia onions, thinly sliced (OR substitute spanish or hawaiian onions. DO NOT USE RED SALAD ONIONS.)
7 teaspoons better than bouillon beef base or 7 cans beef broth
3 teaspoons better than bouillon chicken bouillon granules or 3 cans chicken broth
Worcestershire sauce
2 cups dry white wine
French bread, slices toasted (see below)
olive oil
parmesan cheese
cheese slice (mozzarella, swiss, or gruyere)

Steps:

  • Make stock by bringing 10 cups water to boil.
  • Add beef and chicken bouillon pastes (or heat canned beef and chicken broth).
  • Lower heat to simmer and let simmer while preparing onions.
  • Melt butter slowly (so it does not brown) in large soup pot over low heat.
  • Add thinly sliced onions.
  • Stir, cover, and cook on low heat until lightly brown, stirring occasionally, about 30 mins.
  • Add wine, bring to boil, scraping up browed bits.
  • Cook about 5 mins.
  • stirring occasionally.
  • Add about 5 good shakes of worcestershire sauce.
  • Add stock to onions.
  • Bring to boil, turn heat down to simmer and simmer uncovered about 1 1/2 hrs.
  • Season to taste with salt and pepper.
  • BREAD SLICES- BRUSH OLIVE OIL ON SLICES.
  • SPRINKLE WITH PARMESAN AND PLACE IN OVEN ON COOKIE SHEET AT 375f UNTIL LIGHTLY BROWN.
  • Ladle soup into ovenproof bowls.
  • Float bread on top of soup.
  • Top with 2 or 3 cheese slices.
  • Place in oven or microwave until cheese melts.

3 cups water
1 tablespoon packed brown sugar
1 tablespoon Worcestershire sauce
1 cup Original Bisquick™ mix
3 tablespoons grated Parmesan cheese
1/4 cup water
3/4 cup finely shredded Swiss cheese (3 oz)
Italian (flat-leaf) parsley sprigs, if desired

Steps:

  • In 3-quart saucepan, cook beef, onion soup mix and pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in remaining soup ingredients. Heat to boiling; reduce heat to medium-low. Cook uncovered 10 minutes.
  • Meanwhile, heat oven to 425°F. Spray cookie sheet with cooking spray. In medium bowl, stir Bisquick mix, Parmesan cheese and 1/4 cup water until soft dough forms. Place dough on work surface sprinkled with additional Bisquick mix; roll in Bisquick mix to coat. Shape into a ball; knead 10 times.
  • On cookie sheet, press or roll dough into 12x6-inch rectangle, 1/4 inch thick. Cut into 8 squares, but do not separate. Bake 6 to 8 minutes or until golden brown. Remove soup from heat; cover to keep warm.
  • Remove croutons from oven; sprinkle with Swiss cheese. Set oven control to broil. Cut and separate croutons slightly. Broil with tops 4 to 6 inches from heat 2 to 3 minutes or until cheese is bubbly and slightly browned.

3 sweet onions, thinly sliced
2-1/2 cups 25%-less-sodium beef broth
2 tsp. Heinz Malt Vinegar
1 tsp. Lea & Perrins Worcestershire Sauce
1 bay leaf
3 cups water, divided
1 pkg. (120 g) Stove Top Stuffing Mix for Chicken
1 cup shredded Swiss cheese
1/2 cup Kraft 100% Parmesan Shredded Cheese

Steps:

  • Bring onions, broth, vinegar, Worcestershire sauce, bay leaf and 2-1/2 cups water to boil in large saucepan; cover. Simmer over medium-low heat 25 min. or until onions are tender. About 5 min. before onions are done, combine stuffing mix and remaining water.
  • Heat broiler. Remove and discard bay leaf from soup. Ladle soup evenly into 6 ovenproof bowls placed on rimmed baking sheet.
  • Top with stuffing, adding about 1/4 cup stuffing to each bowl of soup.
