1 pound processed cheese, cubed
1 tablespoon dried dill, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 9 x 13 inch casserole dish combine green beans, processed cheese and dill.
  • Stirring occasionally, bake until heated through and cheese is bubbling, about 30 minutes.

This recipe came from Southern Cuisine on About.com - but I modified it a little to suit my taste. Huge hit at my family's Christmas dinner.

2 lbs fresh green beans (snapped and cleaned)
1/4 teaspoon salt
1 dash paprika (or cayenne pepper)
1 -2 cup of shredded cheddar cheese
4 tablespoons butter, cut into small pieces
1 pint heavy cream

Steps:

  • Butter baking dish (I used a 9 x 13 baking dish).
  • Boil water with dash of salt.
  • Cook green beans until tender - about 10-15 minutes.
  • Place green beans in baking dish.
  • Sprinkle salt and paprika over beans.
  • Add 1/2 the cheese over top of beans.
  • Dot with butter half of required butter.
  • Pour cream over beans.
  • Add remaining cheese and butter.
  • Bake at 400°F for 20 minutes.

Cheese and bacon liven up plain green beans. This dish can be served immediately after preparing, but I often refrigerate it overnight to let the flavors blend together, then reheat it in a 350 degrees F (175 degrees C) oven until heated through.

10 slices bacon
2 (16 ounce) packages frozen cut green beans
1 cup water
1 pound sliced fresh mushrooms
¾ cup chopped onion
¾ teaspoon ground black pepper
1 (16 ounce) jar processed cheese sauce

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside. Reserve 1/4 cup of bacon drippings in the skillet.
  • Place green beans and water in a medium saucepan, and bring to a boil. Reduce heat, cover, and simmer 6 minutes, or until tender but crisp; drain.
  • Place mushrooms and onion into the skillet with the reserved bacon drippings. Cook and stir over medium-high heat for 10 minutes; drain. Reserving 2 tablespoons for topping, mix the crumbled bacon into the skillet. Stir in the green beans. Season with pepper, and transfer to a 2 quart baking dish.
  • Melt the cheese sauce in the microwave, and pour over the green bean mixture. Sprinkle with reserved bacon, and serve.

This is one of the best green bean recipes I have tried and its so easy because you prepare it in the crock pot. This comes from my Crockery Dinners cookbook. Enjoy.

2 (16 ounce) packages frozen cut green beans (I used fresh that we put in the freezer last summer)
1/2 cup finely chopped onion
1 (4 ounce) jar sliced pimiento, drained
1 (4 ounce) can sliced mushrooms, drained
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 1/2 cups shredded cheddar cheese (about 6 oz)
1/4 teaspoon pepper
6 slices bacon, crisp-cooked, drained and crumbled

Steps:

  • In a 31/2 to 4 quart crock pot, combine green beans, onion, pimiento, mushrooms, soup, cheese and pepper.
  • Sprinkle top with crumbled bacon.
  • Cover, cook on low-heat setting for 4-5 hours or on high for 21/2- 3 hours.
  • Stir before serving.

1/2 lb bacon (approx.)
16 ounces frozen green beans
1/2 lb sliced mushrooms
3/4 cup chopped onion
3/4 teaspoon black pepper
1 (16 ounce) jar Cheese Whiz

Steps:

  • Fry bacon until crisp.
  • Drain bacon, reserving 1/4 cup drippings.
  • Crumble bacon and set aside 1/4 cup.
  • Microwave beans as directed on package, drain well.
  • Add onion and mushrooms to reserved bacon drippings and saute them in skillet over medium heat for 10 minutes.
  • Drain, Add bacon, hot cooked green beans and pepper,mixing all lightly.
  • Spoon into 2 quart serving dish.
  • Microwave Cheez Whiz as directed on label.
  • Pour over green bean mixture.
  • Sprinkle top with 1/4 cup of previously reserved bacon.

2 Tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic salt
1/3 cup grated Parmesan cheese
1/2 cup shredded Mozzarella cheese
1 teaspoon parsley

Steps:

  • Preheat your oven to 350 degrees
  • Wash your green beans, getting rid of any leaves or long stems. I like to cut off the ends of mine.
  • Lightly grease a 9 x 13 inch pan and lay your green beans down in the pan. It's okay that they over lap or stack on top of each other.
  • Drizzle 2 Tablespoons of olive oil over your green beans.
  • Sprinkle salt, pepper, garlic salt, and Parmesan cheese over your green beans and toss until well incorporated in the pan.
  • Top green beans with 1/2 cup Mozzarella cheese and sprinkle with parsley.
  • Bake for 15 minutes or until beans are cooked through and cheese begins to bubble.

3 Tbsp butter
1/4 c onion, chopped fine
3 Tbsp flour
1 c milk
12 oz package american cheese slices, chopped or your favorite melting cheese
1/2 tsp mustard
1/4 tsp worcestershire sauce
1/8 - 1/4 tsp cayenne pepper
6 slice bacon, cooked and crumbled
2 -3 can(s) 14 ounce green beans, drained - or could use fresh that's been steamed or boiled
handful french fried onions, crumbled
paprika

Steps:

  • 1. Preheat oven to 350 degree F. Spray a 1 1/2 quart casserole or other dish or pan. Melt butter in a large saucepan or skillet; add onions and cook until transparent.
  • 2. Add flour and stir until absorbed; gradually stir in milk. Cook over medium heat, stirring constantly, until thickened.
  • 3. Stir in cheese until melted. Add mustard, beans, Worcestershire sauce, cayenne and bacon.
  • 4. Pour into prepared dish.
  • 5. Sprinkle about a handful of crumbled french fried onions evenly on top. Sprinkle with a pinch of paprika.

How to make Cheesy Green Beans and Fennel

2tablespoons butter, softened
1 1/2teaspoons fennel seeds, crushed
1 1/2teaspoons finely shredded lemon peel
3/4teaspoon ground black pepper
1/2teaspoon salt
3fennel bulbs
2cups water
1/2teaspoon salt
2pounds fresh green beans, trimmed and cut into 2-inch pieces
1cup shredded Gruyere cheese (4 ounces)
1cup crumbled goat cheese (chevre) (4 ounces)
1cup seasoned fine dry bread crumbs
1/4cup butter, melted

Steps:

  • In a large bowl stir together 2 tablespoons melted butter, fennel seeds, lemon peel, pepper, and 1/2 teaspoon salt. Set aside.
  • Cut off and discard fennel stalks. Remove any wilted outer layers; cut a thin slice from base of each bulb. Cut bulbs into quarters; remove cores. Cut fennel lengthwise into 1/4-inch strips.
  • Preheat oven to 375 degrees F. In a 4-quart Dutch oven combine the water and 1/2 teaspoon salt. Bring to boiling. Add green beans. Return to boiling; reduce heat. Cook, covered, for 4 minutes. Add fennel. Cook , covered, for 4 to 6 minutes more or until vegetables are crisp-tender; drain. Add fennel and beans to butter mixture; toss gently to coat.
  • Transfer bean mixture to a 3-quart rectangular baking dish. Sprinkle with Gruyere cheese, goat cheese, and bread crumbs. Drizzle with 1/4 cup melted butter. Bake for 10 to 12 minutes or until crumbs are light brown and crisp. Serve warm.

1 lb thick sliced bacon
12 oz squeezable cheez whiz
1 lb mushrooms, fresh
3/4 c onion, chopped
3/4 tsp black pepper

  • 1. Cook the bacon in a large skillet on medium heat until crisp. Drain the bacon and reserve 1/4 cup of the drippings.Crumble bacon keeping 2 tablespoons
  • 2. Microwave the green beans as directed on package,drain well.
  • 3. Add mushrooms and onion to the reserved 1/4 cup drippings in skillet. Cook and stir on medium-high heat for 10 minutes, drain.

  • 4. Bake for 20 minutes until vibrant and tender-crisp.
  • 5. Remove from oven and top with the mozzarella cheese. Return to oven and broil (or grill) until the cheese melts and becomes golden (about 4-5 minutes).
