Cheese and bacon liven up plain green beans. This dish can be served immediately after preparing, but I often refrigerate it overnight to let the flavors blend together, then reheat it in a 350 degrees F (175 degrees C) oven until heated through.

Steps:
- Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside. Reserve 1/4 cup of bacon drippings in the skillet.
- Place green beans and water in a medium saucepan, and bring to a boil. Reduce heat, cover, and simmer 6 minutes, or until tender but crisp; drain.
- Place mushrooms and onion into the skillet with the reserved bacon drippings. Cook and stir over medium-high heat for 10 minutes; drain. Reserving 2 tablespoons for topping, mix the crumbled bacon into the skillet. Stir in the green beans. Season with pepper, and transfer to a 2 quart baking dish.
- Melt the cheese sauce in the microwave, and pour over the green bean mixture. Sprinkle with reserved bacon, and serve.

This recipe came from Southern Cuisine on About.com - but I modified it a little to suit my taste. Huge hit at my family's Christmas dinner.

- Butter baking dish (I used a 9 x 13 baking dish).
- Boil water with dash of salt.
- Cook green beans until tender - about 10-15 minutes.
- Place green beans in baking dish.
- Sprinkle salt and paprika over beans.
- Add 1/2 the cheese over top of beans.
- Dot with butter half of required butter.
- Pour cream over beans.
- Add remaining cheese and butter.
- Bake at 400°F for 20 minutes.

- Fry bacon until crisp.
- Drain bacon, reserving 1/4 cup drippings.
- Crumble bacon and set aside 1/4 cup.
- Microwave beans as directed on package, drain well.
- Add onion and mushrooms to reserved bacon drippings and saute them in skillet over medium heat for 10 minutes.
- Drain, Add bacon, hot cooked green beans and pepper,mixing all lightly.

- Microwave Cheez Whiz as directed on label.

CHEESY GARLIC GREEN BEANS

- Preheat your oven to 350 degrees
- Wash your green beans, getting rid of any leaves or long stems. I like to cut off the ends of mine.
- Lightly grease a 9 x 13 inch pan and lay your green beans down in the pan. It's okay that they over lap or stack on top of each other.
- Drizzle 2 Tablespoons of olive oil over your green beans.
- Sprinkle salt, pepper, garlic salt, and Parmesan cheese over your green beans and toss until well incorporated in the pan.
- Top green beans with 1/2 cup Mozzarella cheese and sprinkle with parsley.
- Bake for 15 minutes or until beans are cooked through and cheese begins to bubble.

- 1. Preheat oven to 350 degree F. Spray a 1 1/2 quart casserole or other dish or pan. Melt butter in a large saucepan or skillet; add onions and cook until transparent.
- 2. Add flour and stir until absorbed; gradually stir in milk. Cook over medium heat, stirring constantly, until thickened.
- 3. Stir in cheese until melted. Add mustard, beans, Worcestershire sauce, cayenne and bacon.

- In a large bowl stir together 2 tablespoons melted butter, fennel seeds, lemon peel, pepper, and 1/2 teaspoon salt. Set aside.
- Cut off and discard fennel stalks. Remove any wilted outer layers; cut a thin slice from base of each bulb. Cut bulbs into quarters; remove cores. Cut fennel lengthwise into 1/4-inch strips.
- Preheat oven to 375 degrees F. In a 4-quart Dutch oven combine the water and 1/2 teaspoon salt. Bring to boiling. Add green beans. Return to boiling; reduce heat. Cook, covered, for 4 minutes. Add fennel. Cook , covered, for 4 to 6 minutes more or until vegetables are crisp-tender; drain. Add fennel and beans to butter mixture; toss gently to coat.
- Transfer bean mixture to a 3-quart rectangular baking dish. Sprinkle with Gruyere cheese, goat cheese, and bread crumbs. Drizzle with 1/4 cup melted butter. Bake for 10 to 12 minutes or until crumbs are light brown and crisp. Serve warm.

- 1. Preheat oven to 425 F. Lightly grease a baking sheet with nonstick cooking oil spray.
- 2. Arrange green beans on baking sheet in a single layer. Set aside.
- 3. In a small bowl mix together olive oil, parmesan, garlic, salt and pepper. Drizzle the oil mixture over the green beans and toss to evenly coat.
- 4. Bake for 20 minutes until vibrant and tender-crisp.
- 5. Remove from oven and top with the mozzarella cheese. Return to oven and broil (or grill) until the cheese melts and becomes golden (about 4-5 minutes).
- 6. Season with salt and pepper if desired. Serve immediately.
