Steps:
- Make a roux with the equal parts butter and flour.
- Melt the remaining butter in a sauce pan with the olive oil.
- Add the onion, saute until tender.
- Add the garlic, saute until lightly brown. Deglaze with Whiskey.
- Add milk, bring to very gently simmer, low heat.
- Add the roux until sauce starts to thicken, you may not need all the roux.
- When thick, remove from heat and stir in cheese.
- Pour over desired side or main dish and ENJOY!

- In a heavy-bottomed saucepan, over medium heat, melt the butter.
- Add in the chopped garlic, thyme, nutmeg and black pepper; cook for 1 minute.
- Add in 1/3 cup flour; whisk/mix for 2 minutes.
- Slowly whisk in the cream; bring to a light boil over medium heat stirring constantly for 2-3 minutes, until the mixture is thick and bubbly (at this point you may add more cream if you desire a thinner sauce) .
- Reduce the heat to low; add in the grated Parmesan cheese and Swiss cheese; mix well until the cheese are completely melted.
- Season with salt to taste.

CHEESY CHICKEN WITH CREAMY GARLIC PEPPERCORN SAUCE
Chicken breasts stuffed with cheese with a creamy garlic peppercorn sauce to top it off. Great recipe I got from my brothers girlfriend who is a chef.

Steps:
- Take your chicken breasts, cut using your knife on a slant so that you have butterfly wings/pockets. Do this for each individual chicken breast.
- Wrap in tinfoil and cook for 30mins in oven.
- Carefully unwrap chicken breasts and stuff pockets with a little cheese then cook for a further 10mins or until cheese is melted.
- For the sauce, grind lots of black pepper into a medium sized pot with 6-7cubes of unsalted butter (The more butter the better). Melt butter on a low heat.
- Add in crushed garlic and mushrooms (optional) Cook for a couple of mins until mushrooms are soft.
- Making sure your still cooking on a low heat, add 1 cup of chicken stock.
- Simmer for 5mins then add some of your cornflour mix until at the right consistency (Not too watery but not too thick).
- Add some of the double cream until you feel its nice and creamy. If your sauce has gone a bit watery, add some more of the cornflour mix to get the right consistency again. This might take a while to get right but you will know yourself.
- Serve your chicken with a slice of bacon on top then drizzle the sauce on top of the chicken. I usually serve this dish with some potato wedges to make a nice, filling meal.

CHEESY GARLIC SAUCE FOR VEGETABLES
After looking for a cheese sauce and coming up short, I created this fantastic recipe that the whole family LOVED! You can use any kind of cheese you like, but I prefer an old/sharp cheddar. The cayenne pepper only adds flavour, not heat, so if you want it hot you'll have to increase it.

- Combine milk, flour and dried cayenne pepper in a medium saucepan.
- Add butter and cream cheese and melt over medium-high heat.
- Add lemon juice and cheddar cheese.
- Melt cheese and stir constantly over medium heat until mixture thickens slightly.
- Reduce heat to minimum or remove from burner and continue to stir until slightly cooled.
- Serve warm over lightly cooked broccoli, cauliflower or your favourite vegetables!
