2 cup flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon chili powder ((optional))
1.5 teaspoons sugar
1 cup cheddar cheese ((grated))
1/2 cup parsley ((chopped))
1 large egg
2 tablespoons vegetable oil
2 tablespoons unsweetened applesauce
1 1/2 cups buttermilk ((or kefir))

Steps:

  • Preheat the oven to 400F.
  • In a large bowl, combine the flour, baking powder, baking soda, salt, pepper, chili powder (if using), and sugar. Whisk thoroughly.
  • Add the grated cheese and chopped parsley to the flour mixture and mix until all incorporated.
  • Add the egg, vegetable oil, applesauce, and buttermilk (or kefir) and mix with a spatula just until no flour is visible. Do not overmix.
  • Line medium sized muffin pan with muffin liners AND SPRAY WITH COOKING OIL (this is important!)Alternatively: You don't have to line with paper liners, you can just spray the muffin tin with cooking oil directly.
  • Evenly divide the batter between 16 cups.
  • Bake for 25-30 minutes or until a toothpick inserted in the middle of a muffin comes out clean.
  • If you are not using muffin liners, then run a butter knife around the muffins while they are still hot to loosen them from the pan.

4 tablespoons butter
1 1/2 cups all-purpose flour
2 teaspoons baking powder
2 tablespoons sugar
1/4 teaspoon salt
1 teaspoon paprika
2 eggs
1/2 cup milk
1 teaspoon dried thyme
2 ounces sharp cheddar cheese, diced into cubes

Steps:

  • Preheat oven to 375°F.
  • Generously grease 9 muffin cups or use liners.
  • Melt butter and set aside.
  • In a large bowl, sift together flour, baking powder, sugar, salt and paprika.
  • In a separate bowl, combine eggs, milk, melted butter and thyme until just moistened (do NOT be over-enthusiastic and mix until smooth).
  • Place a heaped spoonful into prepared muffin cups, place a few pieces of cheese cubes, then top with another layer of batter (If you have any empty muffin cups, fill it with water for even baking).
  • Bake until puffy and golden, approximately 25 minutes.
  • Stand 5 minutes before unmolding onto a rack.

Recipe video above. They taste like cheesy garlic bread - in muffin form! If you want lovely high domes as pictured, this makes 11 muffins. It's irritating, I know, but such is life. See notes for Add In options!

3 tbsp / 50g salted butter (unsalted + salt)
2 garlic cloves (, crushed)
2 cups / 200g grated cheddar cheese ((Note 1))
2 cups / 300g plain flour (all purpose flour)
1 1/2 tsp baking powder
1/2 tsp baking soda / bi-carb soda ((Note 2))
1/2 tsp salt
1 egg (large, about 60g / 2 oz) (, lightly whisked)
1 cup milk (full or low fat)
1/4 cup / 60 g sour cream ((or plain yoghurt))
1/3 cup / 85 ml vegetable oil ((or any plain oils, not olive oil))
1/4 cup finely chopped fresh parsley ((Note 3))
1 garlic clove (, crushed)

Steps:

  • Preheat oven to 180C/350F (standard) or 160C/320F (fan).
  • Place butter and garlic in a microwave proof bowl and melt in 30 second bursts. Mix.
  • Brush a 12 hole standard muffin tin generously with butter, being sure to slather with some garlic. Reserve some butter to brush tops.
  • Whisk Dry ingredients in a bowl.
  • Whisk Wet ingredients in a separate bowl.
  • Pour Wet into the Dry ingredients bowl. Mix 8 times. Add cheese, mix as few times as possible just to incorporate remaining bits of flour - no more than 7 big stirs (secret to soft muffs).
  • Divide between 11 holes in muffin in (I use an ice cream scooper). Batter should be thick and fill muffin tin to top (if in ball shape due to scooper, leave as is). See video.
  • Bake for 22 - 25 minutes or until the muffins are golden and crusty and spring back when touched in the centre.
  • Remove onto cooling rack, brush with remaining butter (microwave again if needed) and cool slightly before getting stuck into them!

This muffin recipe is very simple, and produces a heap of tasty muffins that can be served either hot or cold. I prefer them hot, 5-10mins after they are pulled from the oven. They are perfect as a snack, lunch, brunch, afternoon tea, etc., and also particularly good for picnics (e.g. used as a substitute for bread, served alongside salads and cold meats). This recipe has by and large been taken from Alison Holst's cookbook "Meals Without Meat," however I have tweaked it here and there to improve the flavour :) Enjoy!

2 cups grated cheese (cheddar preferable, however other mild-tasting cheeses would be suitable also)
1 1/2 cups self-raising flour (preferably wholemeal)
1/2 teaspoon salt
1 tablespoon raw sugar
1 pinch cayenne pepper
1/2 teaspoon paprika
1/2 teaspoon smoked paprika
1 teaspoon garlic granules
1 teaspoon dried herbs
1 egg
1 cup milk
2 tomatoes (each sliced into 6)
1 tablespoon melted butter

Steps:

  • Preheat oven to 210°C.
  • Put the grated cheese, flour, salt, sugar, cayenne pepper, paprika, smoked paprika, garlic granules, and herbs into a large bowl.
  • Mix lightly with your fingertips to combine. Make a well in the center.
  • In another container, beat the egg and milk until evenly combined.
  • Pour all the liquid onto the dry ingredients.
  • Fold the two mixtures together, drawing in all the flour from the sides of the bowl until all ingredients are incorporated. Try not to overmix.
  • Grease your deep muffin pan well.
  • Spoon mixture off a tablespoon, helping it off with another spoon, into the pan. Fill each hole with as much as is needed to use up all of the batter.
  • Place a slice of tomato on top of each muffin. Lightly brush each slice with a little melted butter or oil.
  • Sprinkle with additional salt, cheese or paprika if desired.
  • Bake at 210C for about 12 minutes, or until tomato slices are cooked (they'll look a bit shrivelled), muffins spring back when pressed, and muffins look golden brown.
  • Remove from oven and set aside to cool for 5-10 minutes before removing from pan.
  • To easily remove from pan, slide a butterknife around the sides of each muffin, and then lift. Tip: If muffins are stuck, put a plate or rack on top of muffin tray and flip tray over. Smooth a wet teatowel or sponge over the base of each muffin cavity for 1 or so minutes, then give the tray a light shake. Keep spongeing and lightly shaking until all muffins have come out. This method should release your muffins from their tray without breaking.
  • Serve!

  • Preheat oven to 400º.

I like them spread with additional cream cheese or just plain, but you can use them in which ever way you like. Feel free to add or leave out ingredients to adjust them to your likings.

280 g flour (2 1/4 cups)
3 teaspoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
2 teaspoons fresh ground black pepper (or more if you like)
2 large eggs
200 g plain yogurt (7oz)
6 tablespoons oil (I use sunflower)
150 g cream cheese with garlic and herbs (2/3 cup)
1 garlic clove, minced (more if you like)

Steps:

  • Combine flour, baking powder, baking soda, salt and black pepper in a bowl. Make a well in the centre.
  • In a second bowl combine eggs, oil, yoghurt, minced garlic and cream cheese. Pour into the well and stir until just combined (do not overmix).
  • Fill dough into prepared muffin tins (well greased or paper-lined) and bake in the preheated oven at 200°C/400°F for 20 minutes or until well risen and golden bown.

1/2 cup lukewarm whole milk
One 1/4-ounce envelope active dry yeast
1/4 cup plus 2 teaspoons sugar
3/4 teaspoon kosher salt
2 large eggs
3 cups all-purpose flour, plus additional for dusting
5 tablespoons unsalted butter, cut into cubes, at room temperature
Nonstick cooking spray, for the bowl and muffin tin
2 tablespoons olive oil
1 1/2 teaspoons red chile flakes
4 cloves garlic, minced
1 1/2 cups shredded Gruyere
1/2 cup pine nuts, toasted
1/4 cup chopped fresh oregano
1 large egg
Flaky salt, for sprinkling
Freshly ground black pepper
Freshly grated Parmesan, for sprinkling

Steps:

  • For the dough: Whisk together the warm milk, yeast and 2 teaspoons sugar in the bowl of a stand mixer fitted with a dough hook. Allow to sit until it begins to bubble, about 5 minutes. Turn the mixer to medium and add the salt and eggs. Mix until the eggs are incorporated. Add the remaining 1/4 cup sugar, then reduce the speed to low and add the flour in batches, allowing the flour to fully incorporate with the dough between additions. Continue to mix until well combined. Add the butter in small pieces, allowing each addition to become fully incorporated before adding more. Turn the mixer to medium and let the mixer knead the dough for 10 minutes. Spray a large bowl with cooking spray. Place the dough in the bowl, cover with a towel or plastic wrap and allow to rise until it has doubled in size, about 1 hour.
  • For the filling: Spray a 12-cup muffin tin and set aside. Turn the dough onto a floured surface and use a rolling pin to roll it out into a 12-by-18-inch rectangle. Brush the olive oil over the dough and sprinkle with the chile flakes, garlic, Gruyere, pine nuts and oregano. Starting from the longer side, roll the dough up tightly, similar to how you make a cinnamon roll, and pinch the edges to seal, placing it seam-side down. You should have an 18-inch log. Cut into 24 slices, then smush two slices into each muffin cup, cut-side up and overlapping. (This whole process is a little messy and rustic but when they bake and rise they will look beautiful.) Cover with a kitchen towel and set aside for 30 minutes.
  • To finish: Preheat the oven to 375 degrees F.
  • Beat the egg together in a small bowl with 1 tablespoon water. Brush the tops of the muffins with the egg wash and sprinkle with flaky salt, pepper and Parmesan. Bake until puffed and golden, 15 to 20 minutes. Allow the muffins to cool slightly, then use a sharp paring knife to run around the edges to release them from the tin.
