CHEESY BACON JALAPEñO CORN DIP

8 slice bacon
1/4 c fresh basil copped
1 jalapeno, seeded and minced
2 can(s) sweet whole kernel corn
1 dash(es) cayenne
1/2 tsp salt
8 oz cream cheese, softened
1 c mozzarella cheese , shredded
parmesan cheese to taste

Steps:

  • 1. Cook bacon in cast iron skillet until slightly crisp. Drain grease reserving 1 tsp. to grease skillet .
  • 2. Crumble bacon. Combine corn, jalapeño, cream cheese, mozzarella, salt , cayenne, half bacon, and half basil into the bacon greased skillet.
  • 3. Bake for 20 min on 400° Sprinkle with remaining bacon, and basil. Sprinkle with parmesan cheese. Serve with crackers or chips

Creamy, full of cheese and corn, this is one mighty good dip. The jalapenos add some heat but don't make this corn dip extremely spicy. The bacon adds its usual wonderful, smoky flavor. The Kitchen Crew couldn't get enough of this easy recipe. A perfect snack for football season. Would be great served at a potluck too!

24 oz corn frozen, or canned & drained
1 pkg bacon
8 oz cream cheese
2 c Mexican blend shredded cheese
1 can(s) chopped jalapenos, undrained, 4 oz.
1/2 c milk

Steps:

  • 1. Cook bacon then set aside to cool.
  • 2. In saucepan put corn, cream cheese, jalapenos, milk, and half of the shredded cheese.
  • 3. Heat until blended and cheese melted. Remove from heat.
  • 4. Cut the bacon into small pieces and add half to the corn mixture. Mix completely.
  • 5. Transfer mixture to oven-safe pan. Top with remaining shredded cheese and bacon pieces.
  • 6. Cook at 350 in the oven or microwave until cheese is melted.
  • 7. Serve with tortilla chips and enjoy!

2 cups shredded pepper Jack cheese (8 oz)
1 package (8 oz) cream cheese
3 cloves garlic, finely chopped
16 oz frozen corn
1/4 cup pickled jalapeño chiles, chopped
2 tablespoons liquid from jar of jalapeño chiles
4 slices bacon, crisply cooked and crumbled
Chopped scallions, as desired
Tortilla chips and lime wedges, as desired

Steps:

  • Spray slow cooker with cooking spray. Place cheeses, garlic, frozen corn, jalapeño chiles, and liquid from chiles in slow cooker. Cover and cook on Low heat setting 2 hours, stirring a couple of times during cooking.
  • Stir in half of the chopped bacon. Transfer to serving bowl, and top with remaining bacon and scallions. Alternatively, you can serve this dip right out of the slow cooker.
  • Serve with tortilla chips and lime wedges on the side.

2 (11 ounce) cans whole sweet corn, drained
1 jalapeno, seeded and minced
8 ounces cream cheese, softened
1 cup shredded mozzarella cheese
1/2 teaspoon salt
1 dash cayenne pepper
1/4 cup fresh basil leaf, chopped
parmesan cheese

Steps:

  • Preheat oven to 400 degrees.
  • In a cast iron skillet or ovenproof skillet, cook bacon over medium heat until crispy. Remove from heat and set on paper towels to absorb excess grease. Drain off all but 1 teaspoons of bacon grease remaining in skillet to grease the pan and add more bacon flavor to the dip. Crumble bacon.
  • Combine corn, jalapeno, cream cheese, mozzarella cheese, salt, cayenne, half of the bacon, and half of the basil. Scoop into the skillet and bake for 20 minutes.
  • Sprinkle with the remaining bacon and basil, and parmesan cheese to taste. Serve immediately.
