1 cup chopped celery
1 cup chopped onion
2 (14.5 ounce) cans chicken broth
3 cups peeled and cubed potatoes
1 (15 ounce) can whole kernel corn
1 (4 ounce) can diced green chiles
1 (2.5 ounce) package country style gravy mix
2 cups milk
1 cup shredded Mexican-style processed cheese food

Steps:

  • In large saucepan, melt margarine over medium high heat. Add celery and onion; cook and stir until tender, about 5 minutes.
  • Add chicken broth; bring to a boil. Add potatoes; cook over low heat for 20 to 25 minutes or until potatoes are soft, stirring occasionally.
  • Stir in corn and chiles; return to boiling. Dissolve gravy mix in milk; stir into boiling mixture. Add cheese; cook and stir over low heat until cheese is melted.

2 (15 ounce) cans chicken broth
½ cup sliced carrots
2 tablespoons chicken bouillon granules
3 bay leaves
½ teaspoon sea salt
½ teaspoon ground black pepper
½ teaspoon ground thyme
½ teaspoon dried marjoram
¼ teaspoon garlic powder
1 cup peeled and diced potatoes
½ cup chopped onion
½ cup sliced celery
3 tablespoons butter
3 tablespoons all-purpose flour
1 ½ cups milk
1 (15 ounce) can cream-style corn
1 (8 ounce) package shredded sharp Cheddar cheese
1 cup diced cooked ham

Steps:

  • Stir chicken broth, carrots, chicken bouillon, bay leaves, sea salt, pepper, thyme, marjoram, and garlic powder together in a Dutch oven; bring to a boil, reduce heat to medium, and cook for 10 minutes. Add potatoes and onion; cook for 10 minutes more. Add celery; cook until all vegetables are fork tender, about 10 minutes more.
  • Melt butter in a saucepan over low heat. Remove from heat and whisk flour into butter until smooth. Return saucepan to medium heat; gradually add milk to butter mixture, whisking constantly, and cook until mixture thickens, 6 to 7 minutes.
  • Stir milk mixture into vegetable mixture; add corn, Cheddar cheese, and ham, reduce heat to low, and simmer until ham is heated through and cheese melts, 10 to 15 minutes.

3/4 cup chopped sweet onion

  • In a Dutch oven, cook bacon and onion over medium heat until onion is tender. Add the water, potatoes, carrots and bouillon; bring to a boil. 1 large sweet onion, finely chopped
3 large carrots, cut into 1/4-inch dice
3 celery ribs, cut into 1/4-inch dice
1 red bell pepper, cut into 1/4-inch dice
3/4 pound Yukon gold potatoes, peeled and cut into 1/4-inch dice
3/4 pound sweet potato, peeled and cut into 1/4-inch dice
4 cups reduced-sodium chicken broth
4 cups water
3 cups fresh corn kernels (cut from about 4 ears) or 1 1/2 pounds (24 ounces) frozen corn kernels (not thawed)
2 cups heavy cream
8 ounces extra-sharp Cheddar, coarsely grated (3 cups)
1 1/2 teaspoons salt
1 teaspoon black pepper
1/2 cup finely chopped fresh basil or parsley
Finely chopped fresh chives or scallions (optional)
Paprika (optional)

Steps:

  • Cook bacon in a 6- to 8-quart heavy pot over medium heat, stirring frequently, until crisp, about 5 minutes. Transfer with a slotted spoon to a small bowl.
  • Pour off all but 2 tablespoons bacon fat. Add onion, carrots, celery, and bell pepper to pot and cook, stirring, until onion is softened, 10 to 12 minutes.
  • Add Yukon gold and sweet potatoes, broth, and water, and simmer, covered, until potatoes are just tender, about 15 minutes. Add corn and cream and simmer, uncovered, 10 minutes.

1 (14 1/2 ounce) can creamed corn
1 (14 1/2 ounce) can whole kernel corn, drained

1/4-1/2 cup half-and-half
1 teaspoon dried thyme
1 teaspoon black pepper
1/2 teaspoon celery salt

3 (10 ounce) cans cream of chicken soup
1 cup chicken broth
16 ounces frozen whole kernel corn
3 cups of cooked boneless chicken
1 (10 ounce) can Rotel diced tomatoes
1 (8 ounce) can creamed corn
1 lb of melted Velveeta cheese
1 tablespoon black pepper
2 teaspoons garlic powder

Steps:

  • Thaw frozen dorn.
  • Dice or shred the cooked chicken.
  • Dice the Velveeta cheese and pour the chicken broth over the cubes.
  • Next melt the mixture in the microwave, stirring ever 45 to 60 seconds until its completely melted.
  • Using a nonstick stock pot, mix all the liquid ingredients (do not add any water to the condensed soup) and using low heat bring to a simmer.
  • Next add the rest of the ingredients and continue to cook on low until thoroughly heated.
  • CAUTION: Keep a watchful eye on this for it will stick and or scorch if heated to fast or on too high a temperature.

1 chicken breast
1/4 cup onion, chopped
1/4 cup celery, chopped
1 cup potato, cubed (or more if desired)

1 (15 ounce) can whole kernel corn (can use cream style corn)
1/2 cup half-and-half
2 tablespoons pimientos (optional)

  • In large saucepan, combine chicken breast, onion and celery with 1/2 cup water.
  • Bring to a boil and reduce heat.
  • Cover and simmer 15-20 minutes.

1 lb ground turkey
1 garlic clove, minced
1 medium onion, chopped
1 cup zucchini, chopped
1 cup green bell pepper, chopped
1/2 cup red bell pepper, chopped
1 1/2 cups raw potatoes, cubed
1 cup raw sweet potato, cubed
1/2 cup frozen green pea
1 cup frozen corn
3 tablespoons flour
3 1/2 cups chicken stock
2 chipotle chiles, minced, plus
2 teaspoons adobo sauce
2 cups half-and-half cream
1 teaspoon fresh sage, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup longhorn cheese or 1 cup cheddar cheese, grated
1 lb Velveeta cheese or 1 lb processed cheese, cubed

Steps:

  • Cut all vegetables to size-- I cut all of mine into approximately 1/2" pieces-- I found that it reduced the cooking time for them all to be similar in size.
  • In soup pot, melt 2 T butter and brown the ground turkey.
  • Add garlic& sauté until done.
  • Add onions, green& red peppers, and zucchini-- sauté a few minutes until vegetables are limp.
  • Stir in 1 T butter& flour.
  • Add chicken stock, peas, corn, potatoes, sweet potatoes, salt, sage, chipotle peppers, adobo sauce,& black pepper.
  • Bring to boil-- Reduce heat to simmer.
  • Cover & let cook until all vegetables are tender, (approx 25 minutes).
  • Ladle 2 cups of soup into mixing bowl-- SLOWLY stir in the half & half to prevent it from separating.
  • Pour it SLOWLY back into soup pot, stirring frequently.
  • Add both cheeses-- stir until cheese is melted and chowder is thickened.
  • Taste & adjust salt/pepper if needed.

1 lb ground beef
salt and pepper to season beef
1 medium onion, chopped
2 stalk(s) (ribs) celery, chopped
1 green or red bell pepper, seeded and chopped
1 tsp dried basil
1 tsp dried parsley flakes
1 - 2 clove garlic, minced
5 Tbsp butter, divided
4 c chicken broth
2 - 3 large potatoes, diced (peeled or unpeeled, your choice)
1 pkg (16 oz) frozen whole kernel corn, thawed
3 Tbsp all purpose flour
2 c processed cheese (velveeta) cubed
1 1/2 c milk
1 tsp salt
1 tsp black pepper

Steps:

  • 1. In a medium-sized, non-stick skillet, brown the beef seasoned with salt and pepper, drain and set aside.
  • 2. In a 3-quart soup pot, sauté the onion, celery, bell pepper, basil, parsley and garlic in 2 tablespoon butter until vegetables are tender, about 10 minutes.
  • 3. Add the chicken broth, potatoes, browned ground beef and corn to the soup pot. Add more chicken broth or water to cover the vegetables if necessary. Bring to a boil, reduce heat and cover. Simmer for 12-15 minutes or until potatoes are fork tender.
  • 4. Meanwhile, in the non-stick skillet, melt the remaining butter. Add the flour, stir and cook for 3-5 minutes until bubbly. This will help thicken the soup stock.
  • 5. Add butter-flour mixture to the soup pot, stir well and bring to a boil. Cook and stir for 2-3 minutes.
  • 6. Reduce the heat to low and stir in the cheese, milk, salt and pepper, stirring until cheese melts.
  • 7. Remove from the heat and serve immediately. Great served in a nice bread bowl and garnished with sour cream, chopped green onions or chives.

1 cup chopped celery
1 cup chopped onion
1/2 cup diced bacon
1/2 diced red bell pepper
2 (14.5 ounce) cans chicken broth
3 cups peeled and cubed potatoes
1 (15 ounce) can whole kernel corn
1 (4 ounce) can diced green chiles
1 (2.5 ounce) package country style gravy mix
2 cups milk
1 cup shredded Mexican-style processed cheese food

Steps:

  • In large saucepan, melt margarine over medium high heat. Add celery and onion; cook and stir until tender, about 5 minutes. Add chicken broth; bring to a boil. Add potatoes; cook over low heat for 20 to 25 minutes or until potatoes are soft, stirring occasionally. Stir in corn and chiles; return to boiling. Dissolve gravy mix in milk; stir into boiling mixture. Add cheese; cook and stir over low heat until cheese is melted.

This is a delicious, quick 'n easy, chowder soup to put together.

1 can (10-3/4 ounces) cream of potato soup
1 can (10-3/4 ounces) nacho cheese soup
1 can (15 ounces) cream style corn
1 cup frozen whole kernel corn
8 oz. grated sharp cheddar cheese
1 pint half and half cream
small bread bowls (optional)
toppings for the chowder: bacon bits & croutons

Steps:

  • 1. Mix ingredients together; heat and serve chowder in small bread bowls, or ladle into soup bowls.
  • 2. Top each bread bowl (or soup bowl of chowder), with bacon bits & croutons.

This is my daughter Vicki's favorite soup ever. While she is away at school, I make large batches and freeze it for her so that she always has a taste of home.

Number Of Ingredients 12

4 Tbsp butter
1 large yellow onion, diced
6 c chicken broth
4 c frozen corn
8 medium russet potatoes, peeled and diced
2 c milk
2 c shredded sharp white cheddar cheese
3 Tbsp minced garlic
2 tsp salt
1 1/2 tsp black pepper
3 ribs of celery, sliced
12 oz cooked, crumbled bacon

Steps:

  • 1. Melt butter in a large soup pot
  • 2. Add onion and celery. Cook about 5 minutes until onion is clear.
  • 3. Stir in chicken broth, garlic and potatoes. Bring mixture to a boil. Reduce heat and simmer, covered for 20 minutes.
  • 4. Add in corn.
  • 5. Remove 4 cups of soup and puree in blender. Return puree to pot with remaining soup. Or use an immersion blender to thicken about half of the soup in the pot.
  • 6. Stir in milk, cheese and bacon. Simmer 10 minutes, stirring occasionally.
  • 7. Garnish with additional shredded cheese, if desired.
  • 8. Enjoy!

6 bacon strips, chopped
3/4 cup chopped sweet onion
2-1/2 cups water
2-1/2 cups cubed peeled potatoes
2 cups sliced fresh carrots
2 teaspoons chicken bouillon granules
3 cans (11 ounces each) gold and white corn, drained
1/2 teaspoon pepper
7 tablespoons all-purpose flour
5 cups milk
3 cups (12 ounces) shredded cheddarcheese
i cup cubed process cheese (Velveeta)

Steps:

  • In a Dutch oven, cook bacon and onion over medium heat until onion is tender. Add the water, potatoes, carrots and bouillon; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender. Stir in corn and pepper. In a large bowl, whisk flour and milk until smooth; add to soup. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add the cheeses; cook and stir until cheeses are melted. Yield: 15 servings (3-3/4 quarts).

PAM'S CHEESY PANCETTA AND CORN CHOWDER FOR 2

I went to the freezer and got out a package of sweet corn I had frozen this summer because I wanted a little of the summer back on this cold dreary day. I opened the fridge and saw milk, heavy cream, cheese and Pancetta. There were four small potatoes in the bin next to the remaining onions we grew. Inspiration!!! Cheesy Pancetta...

3 - 4 oz pancetta, chopped into 1/2
1 small onion, chopped
1 small carrot, chopped
1 1/2 stick celery, chopped
2 small potatoes, peel & chop (3-4" dia)
1 can(s) chicken broth (15 oz)
1 small bay leaf
1/4 tsp curry powder, mild
2-3 dash(es) hot sauce
1/2 c cream
2 c milk
1 - 2 c frozen corn
2 Tbsp butter
3 Tbsp flour
1/2 c shredded cheddar
5 or 6 slice swiss flavored american cheese (stack and cut into small cubes)
salt and pepper to taste

Steps:

  • 1. In a medium saucepan over medium heat, saute the pancetta until browned and crisp. Remove with slotted spoon and reserve. Remove all but 1 Tbsp of rendered fat from the pan. (If there is not that much, add a little butter)
  • 2. In the same pan, saute the onion, carrot, and celery in the fat until translucent. Add potatoes, bay leaf, chicken broth, hot sauce and curry powder. Cook over medium high until potatoes are tender. Reduce heat to medium low. Remove bay leaf. Add corn, milk and cream.
  • 3. Melt the 2 Tbsp of butter in a small microwaveable bowl, Add flour and stir. Microwave for 30-45 sec to cook out raw flour taste. Stir flour into hot soup mixture quickly to avoid lumps. Let simmer over low heat for a few minutes, stirring occasionally. Add the cheeses and allow to melt. Stir to combine and then adjust seasonings.
