Steps:
- 1. In a large skillet over medium heat - add a small amount of oil and once hot add chicken, separating as it cooks. Once no pink remains - stir in the taco seasoning and water. Simmer for 12 - 15 minutes. If becomes too thick, add a little more water. Once chicken is good and tender, remove from heat and set aside.
- 2. While chicken is cooking, warm your cheese sauce and beans. Have remaining toppings prepared. https://www.justapinch.com/recipes/sauce-spread/sauce-spread-dip/family-favorite-guacamole-cassies.html?p=1
- 3. In a large casserole dish place half the tortilla chips. Dollop evenly with half of beans, Sprinkle evenly with corn, jalapenos, onions. Drizzle evenly with half the cheese sauce. Evenly spread half the chicken. Repeat starting with chips.
- 4. Once you have second layer. Sprinkle with tomatoes. Top with desired sour cream and guacamole. Serve immediately, so chips stay crunchy.
- 5. Family thought they were awesome. Other toppings that could be used would be black olives, cilantro, red onion, anything you like on your nacho's. Shredded cheese could be added to the top as well and placed under broiler to melt a few minutes.
