1 (10 3/4 ounce) can Campbell's Cream of Chicken Soup (Regular or 98% Fat Free)
2 2/3 cups water
1 1/2 cups uncooked instant rice
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
4 -6 boneless skinless chicken breast halves
2 cups shredded cheddar cheese (8 oz)

Steps:

  • MIX soup, water, rice onion powder and black pepper in 3-qt shallow glass baking dish. Top with chicken. Sprinkle chicken with additional pepper.
  • COVER and bake @ 375F for 45min, check and bake for another 45min, or until chicken is no longer pink and rice is done.
  • UNCOVER. Sprinkle cheese over chicken and bake and additional 10min.
  • GET YOUR VEGGIES: Stir 2 cups fresh, canned or frozen vegetables into the soup mixture before topping with chicken.

I adapted the rice and chicken bake from the Campbell cookbook because I had no mushroom soup. So here is my take on it.

Number Of Ingredients 9

2 -4 boneless skinless chicken breasts
3/4 cup uncooked rice
1 (10 3/4 ounce) can condensed cream of broccoli soup or 1 (10 3/4 ounce) can broccoli cheese soup
1 cup water
1 cup frozen broccoli florets
1/2 teaspoon paprika
1/2 teaspoon pepper
1/2 teaspoon salt
1 cup shredded cheese (whatever you want, I like Mexican blend)

Steps:

  • Mix soup, water, rice, broccoli, paprika, salt and pepper in a 2 quart baking dish.
  • Put chicken on top on rice mixture and sprinkle with paprika, salt and pepper.
  • Top with cheese. (I also put some Parmesan and Breadcrumbs on here too, but that's optional).
  • Cover and bake 40 minutes at 375 degrees.
  • Remove foil and bake another 5-10 minutes until chicken and rice is done.

1 1/3 cups water
3/4 cup long-grain white rice (uncooked)
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
1 1/2 lbs boneless skinless chicken breast halves (about 4-6)
1 cup shredded cheddar cheese

Steps:

  • Mix soup, water, rice, onion powder and black pepper in 2 qt shallow baking dish.
  • Top with chicken.
  • Sprinkle chicken with additional pepper.
  • Cover and bake at 375 for 45 minutes or until chicken is no longer pink and rice is done.
  • Uncover and sprinkle cheese over chicken and put back in oven long enough for cheese to melt.
  • If you like you can add 2 cups of fresh, canned or frozen veggies into soup mixture before topping with chicken.

1 cup panko breadcrumbs
1 tablespoon melted butter
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 cup sour cream
6 ounces shredded english sharp cheddar cheese
3 ounces crumbled blue cheese
1/4 cup prepared pesto sauce
1/4 cup diced sun-dried tomato
4 cups cooked brown rice
2 lbs boneless skinless chicken breasts, cut in to chunks or 3 chicken breasts
freshly grated romano cheese or parmesan cheese

Steps:

  • Preheat oven to 350.
  • Toss Panko crumbs in the one tablespoon of melted butter, Set aside.
  • In large saucepan, melt 3 tablespoons butter over medium-high heat. Add Flour and whisk together until it starts to turn golden brown. Add milk and then sour cream.
  • A little at a time, add shredded cheddar, making sure it gets completely incorporated. Add blue cheese, again making sure it gets stirred in and melted completely.
  • Remove from heat and stir in Pesto, followed by remaining ingredients(except for bread crumbs and Romano cheese).
  • Pour in to buttered Casserole dish. Top with Romano cheese and bread crumbs. Bake for 30 minutes, or until golden brown on top.

2 cups chicken breasts, cooked and cubed
4 cups cooked brown rice (Success Boil-in-Bag cooks up in 10 minutes)
3/4 cup frozen corn
1 (15 ounce) can black beans, Drained And Rinsed
1 cup fat free Greek yogurt (or Sour Cream)
1 (4 ounce) can green chilies
1 cup salsa (the original called for 1/2 c but I thought it needed more)
1 cup low-fat cheddar cheese, Plus More For Topping
2 tablespoons fresh cilantro (to garnish)

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, combine all ingredients except for cilantro and mix thoroughly to combine. Make sure the yogurt and cheese are stirred in throughout the entire bowl.
  • Season with salt and pepper if desired.
  • Transfer to an oven-safe dish and top with extra cheese if you would like.
  • Bake for 20-25 minutes, or until heated through.
  • Garnish with chopped cilantro.
  • It can also easily be made ahead of time and reheated. Keep covered and pull out about 20 minutes before you're ready to reheat it so it can come up to room temperature and cook evenly.
