1 1/2 cups cut-up cooked chicken
1 1/4 cups shredded mozzarella cheese (5 ounces)
1/3 cup grated Parmesan cheese
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
1/2 teaspoon garlic powder
1 can (8 ounces) tomato sauce
1/2 cup Original Bisquick™ mix
1 cup milk
1/4 teaspoon pepper
2 eggs

Steps:

  • Heat oven to 400°. Grease bottom and side of pie plate, 9x1 1/4 inches, with shortening. Mix chicken, 1/2 cup of the mozzarella cheese, the Parmesan cheese, oregano, basil, garlic powder and 1/2 cup of the tomato sauce; spoon into pie late.
  • Stir Bisquick, milk, pepper and eggs until blended. Pour over chicken mixture.
  • Bake uncovered 35 minutes. Sprinkle with remaining 3/4 cup mozzarella cheese. Bake 5 to 8 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Serve with remaining tomato sauce, heated if desired.

A wonderful savory pie that would be delicious for brunch, lunch, or dinner. The vegetables, fresh spinach, and moist chicken breasts are a hearty filling. Cream cheese adds a touch of tang and makes everything creamy. We loved the crunch from the crescent roll dough crust. Easy to make and so good.

4 chicken breast halves, skinless and boneless
1 green pepper, sliced in half
1 red pepper, sliced in half
1 medium sweet onion, sliced in half
1 c shredded Italian cheese blend (I use six cheese)
1 half brick of cream cheese, small cubes
1 Tbsp Italian seasoning
1/2 c water
2 can(s) big and flaky crescent rolls
1 c spinach, fresh

Steps:

  • 1. Preheat oven to 350. Place four chicken breasts and vegetables in a skillet or baking dish. Sprinkle with sea salt, pepper, and Italian seasoning and toss until coated. NOTE: You can use a bit of oil for this part but I opt not to and use the moisture from the chicken and vegetables to help the spices stick.
  • 2. Bake all ingredients 20-25 minutes or until the chicken is cooked through. Cool ingredients in the fridge or counter until you can handle them.
  • 3. RESERVE ANY JUICES OR PAN DRIPPINGS LEFT FROM BAKING. Chop all ingredients and set aside.
  • 4. Place hot water in the pan or on the baking sheet to get the drippings and juices from baking your meat and veggies. Set aside.
  • 5. Add water/dripping mixture, cream cheese, and shredded cheese in a mixing bowl. Mix until creamy adding more water if needed (you want it to have a cream soup like texture).
  • 6. Add your reserved meat and veggie mix to the cheese mixture.
  • 7. Open 1 can of crescent rolls and press into a springform pan or non-stick skillet to form a pie crust.
  • 8. Add filling to crust.
  • 9. Place 2nd can of crescent rolls to the top of the pie. You may need to press the seams together so that the pie doesn't leak.
  • 10. Bake at 350 for 23-30 minutes or until the pie is golden brown and the filling is hot.

I love cheese so I experimented and found that this is the greatest meat pie I have ever eaten! This pie makes good use of any chicken or turkey leftovers. It normally serves about 6 people.

1 ½ cups chicken stock
1 cup cooked, shredded chicken meat
¾ cup green peas
⅓ cup diced celery
⅓ cup diced carrots
1 ½ cups shredded Cheddar cheese
2 tablespoons cornstarch
¼ cup milk
1 recipe pastry for a 9 inch double crust pie

Steps:

  • In a medium saucepan combine the stock, chicken, peas, celery and carrots. Bring to a boil.
  • Mix cornstarch with milk and stir into stock mixture. Cook stirring constantly for 5 minutes. Remove from heat and let cool for 1 hour.
  • Preheat oven to 325 degrees F (175 degrees C).
  • Stir cheese into filling mixture and pour into a 9 inch pie crust. Top with second crust, seal edges and cut slits in top crust. Place on a cookie sheet and bake for 35 to 40 minutes or until top crust is golden brown.

7 oz uncooked vermicelli
1 egg
1/4 cup butter or margarine, melted
1/3 cup grated Parmesan cheese
1 tablespoon butter or margarine
2 tablespoons finely chopped onion
1 cup frozen mixed vegetables
1 can (10 oz) diced tomatoes with green chiles, drained
1 tablespoon Worcestershire sauce
12 ounces VELVEETA™ Original Cheese loaf (from 16 oz. box), cut into cubes
2 cups cubed cooked chicken

Steps:

  • Cook and drain vermicelli as directed on package.
  • Meanwhile, heat oven to 350°F. Spray 9 1/2-inch glass deep-dish pie plate with cooking spray.
  • In large bowl, beat egg. Stir in 1/4 cup melted butter and the Parmesan cheese. Add cooked vermicelli; toss to coat. Spoon mixture evenly into pie plate, pushing mixture slightly up side of plate to form crust.
  • In 12-inch skillet, melt 1 tablespoon butter over medium heat. Add onion; cook 3 to 5 minutes, stirring constantly, until tender. Stir in mixed vegetables, tomatoes and Worcestershire sauce. Cook 5 minutes. Add cheese; cook, stirring constantly, until melted. Stir in chicken. Spoon evenly into vermicelli-lined pie plate.
  • Bake 20 to 25 minutes or until filling is set and crust is light golden brown. Let stand 10 minutes. To serve, cut into wedges.

1 onion
40g butter
100g button mushroom
40g plain flour, plus extra for dusting
400ml milk, warmed
1 chicken stock cube
pinch nutmeg
pinch mustard powder
bay leaf
250g cooked chicken
200g mix of sweetcorn, peas, chopped, peppers, broccoli, carrots or other veg
250g shortcrust pastry
1 egg, beaten or milk, for glazing

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Peel and chop the onion as finely as possible. Melt the butter in the pan over a medium heat. Add the chopped onion and leave to cook for 5 mins, stirring occasionally. Finely slice the mushrooms and add them to the pan with the onions.
  • When the onions and mushrooms are almost cooked, add the flour to the pan and stir to make a thick paste called a roux. Crumble the stock cube in and stir well. Continuously stir the roux over a low heat for 2 mins to cook out the flour. This stops the sauce from having a starchy taste.
  • Slowly add the warm milk to the pan, stirring all the time. Once all the milk has been added, season with salt, pepper, nutmeg and mustard powder. Add the bay leaf and bring to the boil, stirring all the time to stop the sauce becoming lumpy.
  • When the sauce has thickened, add more milk or water as necessary to get the desired consistency, bring to the boil, then turn down to a very low heat. Chop the cooked chicken into even-sized pieces and add to the sauce. Add your veg and pour into the pie dish.
  • Put the pastry on a clean, floured surface. Make sure you also dust the rolling pin with flour. Roll out the pastry, trying not to make any tears. Measure the pastry against the pie dish and once the pastry is slightly larger than the top, lift it carefully over the dish. It might be helpful to use the rolling pin to help you move the pastry. Trim off the pastry hanging over the edge of the dish. Press the outside edge of the pastry with a fork or your fingers to make a nice pattern.
  • Brush the top of the pie with beaten egg or milk. Make a small hole in the centre of the pastry top to allow the steam to escape. You can use any leftover pastry to decorate the top of the pie with pastry shapes if you like. Place the pie in the oven for 25 mins. It is ready when golden brown.
