This incredible meatloaf is sure to be a family favorite. It's SIMPLE to make using turkey, loads of cheese, and Italian bread crumbs.

2 pounds ground turkey
1 cup milk
1 cup Italian seasoned bread crumbs
2 eggs
1 teaspoon salt
¼ teaspoon pepper
¾ pound Colby cheese, cut into 1/2-inch cubes
½ cup ketchup

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.
  • Bake 1 hour in the preheated oven, to an internal temperature of 180 degrees F (85 degrees C).

2 lbs ground turkey
1 cup milk
1 cup Italian seasoned breadcrumbs
2 eggs
1 teaspoon salt
1/4 teaspoon pepper
3/4 lb colby cheese, cut into 1/2-inch cubes
1/2 cup ketchup (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.

½ sweet onion, chopped
1 tablespoon minced garlic
2 pounds ground turkey
1 pound processed cheese (such as Velveeta®), cubed
½ cup crushed buttery round crackers
⅓ cup ketchup
1 egg
1 pinch garlic salt, or to taste
salt and ground black pepper to taste
aluminum foil
¼ cup ketchup, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan with cooking spray.
  • Spray a medium skillet with cooking spray. Add onion and garlic and saute until the onion is tender, about 5 minutes. Set aside to cool.
  • Mix ground turkey, cheese cubes, crushed crackers, 1/3 cup ketchup, egg, garlic salt, salt, and pepper in a large bowl. Add cooled onion and garlic mixture and mix until well combined. Transfer to the prepared loaf pan. Place the loaf pan on a baking sheet and cover with aluminum foil.
  • Cook in the preheated oven for 1 hour. Remove foil and drain any excess juices from the loaf pan. Top meatloaf with ketchup and cook, uncovered, until no longer pink in the center, about 30 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

I got this recipe from Ladies Home Journal several years ago. My family loves it and requests it often. Because it takes a little more time for the prep work, I usually double the recipe and freeze the other loaf.

2 tablespoons butter
2 green onions, finely chopped
1 cup onion, finely chopped
1/2 cup green bell pepper, finely chopped
1/3 cup celery, finely chopped
1 tablespoon garlic, minced
1 1/2 teaspoons salt
1 teaspoon cumin
1/2 teaspoon pepper
1/4 teaspoon red pepper
1/8 teaspoon nutmeg
2 bay leaves
1/2 cup ketchup
1/2 cup half-and-half or 1/2 cup evaporated milk
1 lb extra lean ground beef
1 lb ground pork
2 large eggs, lightly beaten
2 teaspoons Worcestershire sauce
1 1/2 teaspoons Tabasco sauce

Steps:

  • Melt butter in medium skillet over medium heat. Add green onions, onions, green pepper, celery and garlic; cook until softened. Stir in salt, cumin, pepper, ground red pepper, nutmeg and bay leaves and cook 1 minute. Stir in ketchup and half-and-half and simmer 2 minutes. Cool. Remove bay leaves.
  • Heat oven to 350ºF. Combine ground beef, ground pork, eggs, worcestershire, and tabasco in large bowl. Stir vegetable mixture into meat mixture until well blended.
  • Spoon mixture into 9x5 loaf pan. Bake 70 minutes until meat thermometer inserted in center registers 160ºF. Cool in pan on wire rack 5 minutes. Drain and unmold onto serving platter.

Next time you are making turkey meatloaf try kicking it up a notch! While this won't be featured on a Brennan's menu anytime soon it is delicious. The original recipe was from Bon Appetit but I've modified it over time. If you are leary of using only turkey, consider a mix of 1 part beef to 2 parts turkey.

1 1/2 lbs lean ground turkey
1 medium onion, finely chopped
2/3 cup quick-cooking oatmeal
1/2 cup chopped fresh parsley
3 large garlic cloves, minced
4 teaspoons cajun seasoning
2 egg whites (beaten to blend)
2 teaspoons ground cumin
1 teaspoon dried thyme
1/3 cup creole mustard or 1/3 cup another grainy or spicy mustard

Steps:

  • If you don't have a pre-made Cajun spice blend, there are several good ones on this site. Try Cajun Seasoning Mix #14190 or Cajun Seasoning #33092. Look for one that has no added salt.
  • Preheat oven to 350°F
  • Optional Step: You can ground the oatmeal in the food processor one or two pulses. You are not looking for flour, just bits of oatmeal somewhat smaller than the whole grain.
  • Combine all ingredients except mustard in large bowl. Season with salt and pepper.
  • Place meat mixture in a nonstick loaf pan.
  • Cover and bake 20 minutes. Scrape off any crud that may appear on the surface. Spread top with mustard.
  • Bake uncovered another 35 minutes.
  • Remove from pan and cut into slices.

Your can use either Creole or Cajun seasoning. I've been making this for years, and I can't remember where I got it. Sometimes, I put slices of pancetta (or bacon) on the outside. Of course, it isn't as healthy - but it sure is pretty and tastes great.

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

1/4 cup olive oil
1 large onion, chopped
2 teaspoons fresh thyme leaves
1 teaspoon minced fresh sage
Kosher salt and freshly ground black pepper
2 cloves garlic, grated
1 tablespoon tomato paste
3 tablespoons Worcestershire sauce
3/4 cup panko breadcrumbs
1/2 cup chicken broth
3 pounds ground turkey
2 large eggs
1/2 cup ketchup

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
  • Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined.   • Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.
