Steps:
- Heat olive oil on medium heat in a large pot. Add chicken breasts, season with salt and pepper, and allow the chicken to brown on one side.
- Flip chicken, then add onions and garlic as the second side browns.
- Once the chicken has browned on both sides, add chicken broth, water, and pasta to the pot.
- Stir all ingredients, cover the pot with a lid, and bring to a boil. When it begins to boil, uncover and stir. Bring the heat to low, stir, then cover and let simmer for 20 minutes.
- After 20 minutes has passed, uncover and add in the broccoli. Stir continually as the broccoli steams until the rest of the liquid evaporates.
- Add milk and cheddar cheese and stir until the cheese melts and you have a smooth cheese sauce.
- Add salt and pepper (to taste), cayenne, and nutmeg. Stir once more, then you're ready to serve.

- Boil a large pan of water with a sprinkle of salt, when bubbling, add pasta to water and leave for 10 - 12 minutes. Add broccoli and leave for further 5 minutes, once cooked, drain out and add pasta and broccoli back to pan.
- Add a tbsp of oil to a large frying pan and add to high heat. Add chicken breast to pan and fry until begins to brown, remove from the pan. Add bacon into pan and fry for around 3 - 5 minutes, then add mushroom, garlic and spring onions and leave for another 2 - 3 minutes.
- Once bacon has cooked, add chicken back to the pan and stir together gently for another 5 minutes. Remove from heat and stir into pasta.
- In a medium sized saucepan, melt the soft cheese and butter together on a low heat, stirring together constantly. Once melted together and the sauce is visibly thinner, stir in the milk and add the pesto and stir for roughly 5 minutes. When happy with the sauce, stir into the pasta pan and mix together well so all contents are coated.
- Now, add all the pasta mix to a deep oven dish and spread out around dish, then sprinkle over Parmesan cheese and put into the oven, for about 30-35 minutes on 200c (Fan Oven) or until Cheese is brown and golden.

- Bring a large pot of water to a boil. Season with salt until it tastes like the sea. Cook the pasta until not quite al dente, about 7 minutes. Transfer with a spaghetti scoop or slotted spoon to a bowl and set aside. Add the broccoli to the pasta water and blanch briefly. Transfer with a slotted spoon to a bowl. Reserve the pasta water.

- 1. 1) Heat oven to 375 degrees. 2) Butter or grease two 3 quart baking dishes, set aside. 3) Start heating the water for the pasta. 4) Cut chicken into 1 - 2 inch pieces. 5) Heat a large skillet or large pot with cooking oil to med. high; add chicken, salt, pepper, garlic powder and cook until slightly browned, stirring occasionally. 6) At this time the water should be at a rapid boil so add the pasta, you may add salt to the water if desired. - 1. In a large pot with high sides, or a dutch oven, cook bacon over medium-high heat, stirring occasionally, until browned and crispy, about 5-7 minutes. Remove to a plate with a slotted spoon.
- 2. Season chicken with salt and pepper to taste. In the same pot with the bacon grease, arrange the chicken in a single layer. -
- 3. Cook for 5 minutes until golden and browned, flipping once halfway through. Remove with a slotted spoon to the plate with the bacon.
- 4. If necessary, remove all but 2 tablespoons of the bacon grease from the pan. Increase heat to high, add the onions and broccoli, and cook until the onions are golden and brown, about 5-7 minutes.
- 5. Decrease heat to low, add garlic and stir to combine until fragrant, about 30 seconds. Remove all the veggies to the plate with the chicken and bacon.

I whipped this up as a slightly healthier baked mac and cheese that acts as a whole meal. I've used canadian bacon or ham for this recipe, but that is easily subbed for veggies for a comforting veggy meal.

- Cook your pasta slightly less than al dente, drain and rinse with cold water.
- Melt butter in a pan and sprinkle in flour. Cook for about two minutes then add milk and whisk to combine.
- Cook milk mixture (bechamel) on medium low for about 5 minutes until the sauce has thickened and is bubbly. The sauce should have reduced slightly as well. If the sauce is too thick add more milk.
- Add Monterey jack, Parmesan, mustard, salt and pepper to bechamel. Combine while cheese melts and taste and reseason if necessary (remember it's less salty after combining with the pasta and veggies).
- Mix pasta, veggies and meat (if using) into the cheese sauce. Pour half of the mixture into an oven-proof container and sprinkle with 1/4 cup shredded cheddar. Layer the other half of mixture and then sprinkle bread crumbs and then cheese on top.
- Bake at 350 for 30 minutes or until cheese on top is melted and casserole is bubbly.

- Preheat oven to 350°F. Lightly spray a baking dish - I like to use my 7" x 11" rectangle.
- Fill a large pot with water and bring to a boil. Drop in the bow tie pasta and cook until just barely al dente. Once is it cooked, drain well and give it a quick rinse then set aside.
- Cut the broccoli florets into smallish bite size pieces. Steam until crisp tender then drain well and set aside.
- While the pasta and broccoli are cooking, cut the ham or smoked sausage into bite size pieces and set aside.
- Melt butter in large saucepan over low heat until melted. Whisk in the flour and stirring constantly, cook for about 3 minutes. Whisk the milk in about half at a time. Bring to a high simmer over medium low heat. Stir constantly for about 3 or 4 minutes until it is thickened.
- Add cheeses slowly and continue to cook over low heat while whisking until all of the cheese has melted and you have a smooth sauce.
- Add the pasta and meat. Stir gently to coat. Add the steamed broccoli and gently stir to coat.
- Spoon the pasta mixture into your prepared baking dish. Top with salt and pepper to taste then a thin layer of crushed butter crackers topped with canned onion rings.
- Bake - uncovered - for about 20 or 25 minutes or until bubbly. Allow it to sit for about 5 minutes before serving.
