- Coat a 10 inch (25cm) oven-safe skillet with olive oil. Place the dinner roll dough balls in a ring around the skillet. Cover and let rise until thawed and doubled in size.
- In a medium bowl, combine cream cheese, parmesan, romano, mozzarella, sour cream, artichoke hearts, spinach, garlic, basil, and red pepper flakes.
- Once the dough has thawed, uncover and scoop the dip into the center of the skillet.
- Brush the rolls with olive oil, and top with an additional sprinkle of cheese (optional).
- Bake in a preheated oven at 375˚F (190˚C) for 25 minutes.
- (If the bread browns too quickly, lower oven temperature to 350˚F (180˚C) or cover the bread with a ring of foil). Remove and let cool slightly before serving.

- Heat the oven to 180C/160C fan/ gas 4. Lightly oil a small baking dish. Tip the defrosted spinach into a sieve set over the sink and press down with the back of a large spoon to remove as much liquid as possible. Set aside.
- Whisk the soft cheese, soured cream and mayonnaise together in a medium bowl until well-combined. Add the garlic, most of the cheeses, all the spinach and the artichokes. Season with black pepper and fold everything together to combine.

AMAZINGLY CHEESY CREAMY SPINACH ARTICHOKE DIP
OK, I know there are a ton of recipes out there. But I have yet to find one I like as well as my version. This has a cream cheese base, and bakes up creamy and extra cheesy with lots of flavor. This works well with low fat ingredients also. Enjoy!

- Kick the tires and light the fires to 350 degrees. This is as easy as falling off a horse.
- Mix the cream cheese, sour cream, very squeezed out spinach, roasted garlic that you chopped or smushed up, the chopped artichokes and pepper. Cream it all together well.
- Whip it up, get that spinach broken up, the creams melded together, don't worry, the more you mix it, the better it is.
- Then add in the cheese. Now this Parmigiano-Reggiano makes this dip taste amazing. That and the roasted garlic give this hot dip an edge on most others.
- Mix in half the mozzarella cheese.
- Place your dip into a greased baking pan or pyrex baking container and add the remaining mozza cheese to the top.
- Bake uncovered at 350 degrees for 20-25 minutes until the cheese is melted and a knife inserted in the middle comes out hot. Then you can serve it piping hot out of the oven, put some lovely artisan breads in there (which I did not make myself, as if) or vegetables, crackers, you name it. If you cover it with tinfoil for a few minutes, you also heat the bread up quite nicely before serving.
