1 box brownie mix, prepared according to package instructions
24 oz cream cheese
¾ cup sugar
3 eggs, beaten
2 teaspoons vanilla extract
1 lb semi-sweet chocolate chips
2 cups heavy cream

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Prepare the brownie batter and pour into greased springform pan.
  • Bake until set, about 20-25 minutes.
  • Meanwhile, beat the cream cheese and sugar until incorporated. Add beaten eggs and vanilla, and beat again until smooth.
  • Remove brownies and lower oven temperature to 325˚F (165˚C).
  • Pour cheesecake batter over brownie bottom, and bake for 50 minutes until set and slightly jiggly.
  • Remove cheesecake and refrigerate for 4 hours, or overnight.
  • Heat or microwave whipping cream to just before boiling and pour over chocolate chips. Stir continuously until the chocolate is melted and smooth.
  • Allow the ganache to sit for 10-15 minutes.
  • Transfer cheesecake to a baking pan with a wire rack. In a circular motion starting from the inside out, pour the ganache glaze over the cheesecake making sure to cover all sides.
  • Allow ganache to cool and set for 30 minutes.

  • Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Steps:

  • For crust:
  • Finely grind cookies, chopped chocolate, brown sugar, and nutmeg in processor. Add butter and process until crumbs begin to stick together, scraping down bowl occasionally, about 1 minute. Transfer crumbs to 10-inch-diameter springform pan with 3-inch-high sides. Wrap plastic wrap around fingers and press crumb mixture firmly up sides to within 1/2 inch of top edge, then over bottom of pan.
  • For ganache:
  • Bring whipping cream to simmer in large saucepan. Remove from heat; add chocolate and Kahlúa. Whisk until chocolate is melted and ganache is smooth. Pour 2 cups ganache over bottom of crust. 1/2 cup powdered sugar
1/4 cup hershey's cocoa powder
1/3 cup butter or 1/3 cup margarine, melted
24 ounces light cream cheese, softened (don't use fat free!!)
3/4 cup granulated sugar
3 eggs
1/3 cup sour cream
4 tablespoons all-purpose flour
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
1 1/4 cups semi-sweet chocolate chips, melted
1 1/4 cups peanut butter chips, melted

Steps:

  • Heat oven to 350°F.
  • Combine wafer crumbs, powdered sugar, cocoa, and melted butter in medium bowl.
  • Press onto bottom and up the sides of 9 inch springform or pie pan. Bake 8 minutes then cool.
  • Beat together cream cheese and sugar in large bowl until smooth. Add eggs, sour cream, flour, vanilla, and salt; beat well until blended.

Topping
5 tablespoons whipping cream
5 tablespoons light corn syrup
8 ounces semisweet chocolate chips (about 1 1/3 cups)

Steps:

  • For crust:
  • Preheat oven to 350°F. Wrap foil around outside of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Blend all ingredients in processor until nuts are finely ground and crumbs stick together. Press crust mixture over bottom and 2 inches up sides of prepared pan. Bake until set, about 10 minutes. Cool. Maintain oven temperature.
  • For filling:
  • Using electric mixer, beat cream cheese, sugar and extract in large bowl to blend. Beat in cream of coconut, shredded coconut and flour. Add eggs 1 at a time, beating until just combined. Pour filling into crust. Bake until top is brown and center is almost set, about 1 hour 15 minutes. Transfer to rack and cool. Cover and chill overnight.
  • For topping:
  • Bring cream and syrup to simmer in medium saucepan. Remove from heat. Add chocolate chips; whisk until smooth. Cool to just lukewarm. Pour topping over cake. Sprinkle edge with almonds and coconut. Chill until topping is set, about 2 hours. (Can be made 2 days ahead; cover and refrigerate.)

4 eggs
1/4 cup English toffee bits or 1/4 cup milk chocolate English toffee bits
1/4 cup finely chopped pecans
1/4 cup butter
2/3 cup firmly packed brown sugar
1/3 cup heavy whipping cream
1/4 cup light corn syrup
2 (1 ounce) bittersweet chocolate pieces or 2 (1 ounce) semisweet baking chocolate, coarsely chopped
1 teaspoon vanilla

Steps:

  • Heat oven to 300°F Lightly grease sides only of 10-inch springform pan. Stir together all crust ingredients except 1/2 cup toffee bits in medium bowl. Press crumb mixture evenly on bottom and 1-inch up sides of prepared pan. Bake for 10 to 12 minutes or until edges are lightly browned. Remove from oven; immediately sprinkle 1/2 cup toffee bits on hot, partially baked crust.

Cool 1 hour on cooling rack at room temperature. Refrigerate in pan, uncovered, until thoroughly chilled (3 to 4 hours). Cover; refrigerate until serving.
  • Meanwhile, melt 1/4 cup butter in 2-quart saucepan over medium heat; stir in 2/3 cup brown sugar, whipping cream and corn syrup. Cook, stirring occasionally, until mixture just comes to a boil (2 to 3 minutes). Boil 3 minutes. Remove from heat.
  • Add chocolate; stir until melted and smooth. Stir in vanilla. Cool slightly; place in microwave-safe bowl. Cover; refrigerate until serving time.
  • Just before serving, microwave sauce on HIGH, stirring every 30 seconds, until warm (30 seconds to 1 1/2 minutes).

I made this recipe from Southern Living for Christmas and everyone just loved it! The recipe makes two 9 inch cheesecakes so it feeds a lot of people. This three layered cheesecake has a rich brownie bottom layer with a center layer of cream cheese and a decadently rich chocolate glaze covering the top. The recipe is easily halved. The Chocolate Glaze top layer is intended to divide between the two cheesecakes. However, I used one full recipe to top one cheesecake. Allow 8 hours chilling time. This cheesecake is absolutely delicious and I am sure you will enjoy it, too!

Steps:

  • Sprinkle 1/2 cup toasted and chopped pecans evenly over the bottom of each of 2 greased and floured 9-inch springform pans.
  • Microwave chocolate squares in a microwave-safe bowl at MEDIUM (50% power) 1 1/2 minutes, stirring at 30-second intervals until melted.
  • Stir until smooth.
  • Beat butter and 2 cups sugar at medium speed with an electric mixer until light and fluffy.
