GOAT CHEESE TRUFFLES

Two 8-ounce logs goat cheese
1/4 cup sour cream
1 teaspoon kosher salt
1/4 cup minced fresh dill
1/4 cup toasted sesame seeds
2 tablespoons chopped walnuts
2 tablespoons chopped dried cherries
24 pretzel sticks

Steps:

  • Line a baking sheet with parchment.
  • Add the goat cheese, sour cream and salt to the bowl of a food processor and process until smooth, about 30 seconds. Using a tablespoon, scoop out some of the mixture and roll it into a ball to form a truffle. Place on the prepared baking sheet and repeat until you have 24 truffles. Transfer to the freezer to firm up, about 10 minutes.
  • Put the dill and sesame seeds into separate small bowls. Mix the walnuts and cherries in a third small bowl.
  • Roll 8 of the cheese balls in the dill, 8 in the sesame seeds and 8 in the walnut and cherry mixture. Transfer the truffles to a serving platter. Insert a pretzel stick into each truffle. If making ahead of time, cover and refrigerate the balls without the pretzel sticks, then insert the sticks right before serving.

6 ounces bittersweet chocolate, chopped
6 ounces fresh (mild) goat cheese, at room temperature
1/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/4 cup sweetened cocoa powder, sifted

Steps:

  • In the top of a double boiler, or in a metal bowl set over a pot of simmering water (make sure the water does not touch the bowl), melt the chocolate, stirring until it is smooth. Set the melted chocolate aside to cool for a few minutes while you prepare the rest of the ingredients.
  • In a bowl whisk together the goat cheese, sugar, and vanilla until it is light and fluffy. Whisk in the melted chocolate until it is well combined. Chill, covered, until it is firm, at least 1 hour.
  • To form the truffles, take a heaping teaspoon of the chocolate/cheese mixture and lightly roll it into a ball with your hands. Roll the finished truffles in the sifted cocoa powder, set them onto a baking sheet lined with waxed paper, and chill until they are firm, about 30 minutes. The truffles can be stored in an airtight container in the refrigerator for up to 3 days.

1/8 teaspoon pure lemon extract
1/4 cup unsweetened cocoa powder, sifted, for coating the truffles

Steps:

  • In a metal bowl set over a pan of barely simmering water melt the chocolate, stirring until it is smooth, remove the bowl from the pan, and let the chocolate cool slightly. In a bowl whisk together the goat cheese, the confectioners' sugar, the vanilla, and the lemon extract until the mixture is light and fluffy, whisk in the chocolate until the mixture is combined well, and chill the mixture, covered, for 1 hour, or until it is firm. Form heaping teaspoons of the mixture into balls and roll the balls in the cocoa powder. Chill the truffles on a baking sheet lined with waxed paper for 30 minutes, or until they are firm. The truffles keep in an airtight container, chilled, for 3 days.

  • In a small bowl, beat cheeses, garlic, lime zest, oil, chili powder and pepper flakes until blended. Stir in onion and cilantro. Steps:

  • Melt the chocolate chips in the top of a double boiler over simmering water, stirring until it is smooth and completely melted. Remove chocolate from heat and allow to cool slightly.
  • Meanwhile lightly whip goat cheese and vanilla until fluffy and light. And chocolate and continue mixing until well combined. Chill mixture, covered, for 1 hour, or until firm.

  • Bring enough water to a boil to cook pasta.

  • In a small bowl, whisk eggs together.
  • Dip breaded balls into eggs and then back into the bread crumbs.

Adapted from a recipe from Tyler Florence. This is a sophisticated-looking appetizer just bursting with flavor. It's a bit time consuming to make, but worth it. When I made it, I ran out of ground nuts, yet still had cheese left over. I chopped up a few grapes, and sprinkled some chopped walnut pieces in the cheese and mixed it up for a nice bleu cheese spread, as a bonus. Prep and cook time includes chilling time.

1 bunch seedless white grapes, washed and dried (about 1 1/2 pounds)
4 ounces cream cheese or 4 ounces neufchatel cheese, softened

  • Mash the cream and bleu cheese in a bowl until they are combined well.
  • Add the port.

1 quart milk, scalded
12 ounces mascarpone cheese
8 ounces fava beans, blanched

3 ounces Parmesan cheese, grated fine
1-ounce white truffle oil
2 (1 3/4 pound) Maine lobsters, blanched and shelled
1-ounce summer truffles, sliced thin
1 pound macaroni pasta, cooked al dente
2 tablespoons Italian parsley, chopped fine

Steps:

  • SAUCE: In a heavy bottom saucepan over low-medium heat, melt the butter. Add the shallots and lightly sweat. Add the flour, stirring in with a wooden spoon, lightly browning for 5 minutes. Add the scalded milk and stir constantly with a wire whisk. Add the mascarpone cheese and fava beans. Season with kosher salt and white pepper to taste. Remove from heat and reserve.
  • CRUST: Mix the panko, Parmesan cheese and parsley in a stainless steel mixing bowl. Moisten with truffle oil. Season lightly with kosher salt and white pepper.
  • In each of the cassoulet dishes, slice 1/2 of a lobster, arranging it in a circular pattern in the center of each dish. Reserve claws. Layer slices of summer truffles on top of the lobster. Add the macaroni to the sauce base, adjust the seasoning with salt and white pepper. Cover the lobster with the macaroni and sauce, dividing it evenly between the 4 dishes, filling up to the top. Place lobster claw in the center of each dish. Cover with the breadcrumb topping. Place in a preheated oven at 350 degrees until the top is golden brown and the cassoulet is hot all the way through (about 15 minutes). Serve with Louis Roderer L'Ermitage cuvee and enjoy!

BLUE CHEESE AND BACON TRUFFLES

6 ounces double-smoked bacon, chopped fine
2 small shallots, minced
4 ounces cream cheese, at room temperature
4 ounces crumbled Gorgonzola, at room temperature
1 1/2 cups finely crushed pretzels
2 tablespoons minced fresh chives

Steps:

  • Place the bacon in a medium skillet and heat over medium heat. Cook the bacon until almost entirely crispy, about 10 minutes. Add the shallots and cook for an additional 2 minutes. Using a slotted spoon, scoop the bacon mixture into a medium bowl. Add the cream cheese and gorgonzola and mix well with a rubber spatula. Using a 1-tablespoon ice cream scoop, scoop little balls of the cheese mixture and roll them between your palms to smooth. Place on a plate, cover and refrigerate for at least 1 hour.
  • When ready to serve, allow the balls to sit at room temperature for 5 minutes. Mix together the pretzels and chives in a small bowl. Roll the truffles in the crushed pretzel mixture and serve.

These are very dense as truffles go, rich and yummy! Change the type of chips you use or add a teaspoon of flavoring to change the flavor. They keep very well. I get my dipping chocolate in the bulk foods department at our local grocery store.

2 teaspoons water

ghiridelli's milk dipping chocolate (or dark)

  • Melt the chocolate chips in a heavy sauce pan.
  • Add other 2 ingredients and cook and stir till all are melted and well incorporated.
  • Chill till firm.
  • Form into size ball you wish, placing on wax paper lined cookie sheet. Chill till ready to dip.
  • Melt dipping chocolate in microwave and dip each truffle in dipping chocolate placing on another wax paper lined cookie sheet and chill in fridge till chocolate is set.

1 cup green olive pesto, spread on plate
1 medium butternut squash, peeled, seeded and cut into 1/4 inch cubes (about 2 cups)
1/4 cup EVOO
1/4 cup balsamic vinegar
2 scallions, thinly sliced
1 tbsp black mustard seeds
salt and pepper

Steps:

  • 1. Roll goat cheese into four pieces roughly the size of golf balls 2. Roll balls in olive pesto, tapping and rolling so that pesto adheres in thin layer 3. Roll olive pesto coated goat cheese balls in a plate covered with chopped parsley, until coated. Set "truffles" aside. 4. Bring 2 quarts of water to boil 5. Drop squash cubes into boiling water and cook until soft yet still firm (about 3 - 4 minutes). Drain in a colander over sink and refresh with cold water until cool. 6. Toss squash cubes with EVOO, balsamic vinegar, scallions, mustard seeds. Season to taste with salt and pepper. 7. Divide and arrange squash salad n center of four plates. Cream Cheese Brownie Truffles is a sweet treat for the holidays. They are a fun and easy recipe to make, and ultra-delicious with only 3 ingredients!

Number Of Ingredients 3

15.25 ounce box brownie mix (make according to the package )
4 ounces cream cheese (softened)
¾ cup Wilton candy melts (or chocolate chips, melted)

Steps:

  • Bake brownies according to directions on the package. Watch closely and do not overbake. Allow the brownies to cool completely.
  • Add the brownies into a large bowl. If there are any hard edges, leave them out.
  • Add the cream cheese to the bowl and stir until combined with the brownies.
  • Using a ¼ cup spring release scoop, form the brownie mixture into balls. Place the balls on a parchment-lined sheet pan, cookie tray, or other flat-bottomed baking dish that will fit into your freezer.
  • Chill the balls for at least 30 minutes in the refrigerator.
  • Melt the chocolate in a small bowl in the microwave. Then place your truffle ball on a toothpick and dip it into the chocolate. Once the ball is covered, tap the toothpick on the edge of the bowl to remove excess chocolate. Place ball carefully on the parchment paper.
  • You can leave the truffles to dry as is or top with sprinkles, brownie crumbs, or drizzle over more chocolate.
  • Store in the refrigerator in an airtight container for up to 5 days.
  • You can store them in the freezer for 1 month.
