¼ cup cream cheese, softened
¼ cup shredded Cheddar cheese
2 slices cooked bacon, crumbled
2 green onions, chopped
2 tablespoons pesto sauce
¼ clove garlic, minced
1 pinch dried parsley
1 pork tenderloin, butterflied and pounded flat
salt and ground black pepper to taste
5 tablespoons butter
½ cup white wine
½ cube chicken bouillon
½ cup heavy whipping cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.
  • Mix cream cheese, Cheddar cheese, bacon, green onions, pesto sauce, garlic, and parsley together in a bowl. Lay pork tenderloin on a flat work surface and spread cheese mixture on one side of the meat. Roll tenderloin around the filling like a jellyroll. Season meat with salt and black pepper.
  • Melt butter in a large skillet over medium-high heat. Place rolled pork tenderloin in hot butter and cook, turning, until browned on all sides, 7 to 10 minutes. Transfer tenderloin to the prepared baking dish, reserving drippings in skillet.
  • Bake in the preheated oven until pork is no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Place the skillet with reserved drippings over medium-high heat. Pour in white wine and bouillon, bring to a simmer, reduce heat to low, and add cream; stir until sauce thickens slightly, about 5 minutes. Pour sauce over tenderloin.

herbs
4 tablespoons olive oil
6 garlic cloves
1 tablespoon kosher salt
1 teaspoon dried thyme (2 if fresh)

1/8 teaspoon pepper
prepared stuffing
8 ounces cream cheese

1 (10 ounce) package frozen chopped spinach

Steps:

  • 1. Cook bacon until crisp. Once cooked & cool, chop finely.
  • 2. Thaw and drain spinach.
  • 3. In a medium metal bowl on very low heat, combine cream cheese, goat cheese, spinach, & bacon. The heat allows easier mixing.
  • 4. Butterfly tenderloin(s).
  • 5. Tenderize tenderloin with mallet.
  • 6. Place stuffing in tenderloin & tie with kitchen twine.
  • 7. Combine rub mixture ingredients and massage onto outside of tenderloin(s).
  • 8. Roast tenderloin(s) at 475 deg F for 30 minutes.
  • 9. Continue roasting at 400 deg F for 45-60 min or until pork reaches internal temp of 165 deg F.
  • 10. Remove and let cool for 20 minutes while pork continues to cook.

2 tablespoons butter
1 small onion, finely chopped (1/3 cup)
1 clove garlic, finely chopped
1 cup (4 oz) crumbled blue cheese (preferably an aged Gorgonzola)
3 tablespoons coarsely chopped dried cherries
3 tablespoons chopped pecans
2 teaspoons chopped fresh or 1 teaspoon dried thyme leaves
2 pork tenderloins (1 lb each)
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon vegetable oil

Steps:

  • Adjust oven rack to middle position. Heat oven to 400°F.
  • In 8-inch skillet, heat butter over medium heat until melted. Add onion and cook 3 minutes, stirring occasionally, until soft. Add garlic and cook 30 seconds. Remove from heat and cool about 5 minutes.
  • In medium bowl, stir cheese vigorously with spoon. Stir in cooled onion mixture, cherries, pecans and thyme; set aside.
  • Place 1 pork piece on work surface with short side facing you. Use knife to slit in half lengthwise without going all the way through. Open pork like a book. Repeat with remaining pork. Spread half of the cheese mixture in center of each pork piece. Close up pork and tie with kitchen twine to secure. Season outside with salt and pepper.
  • In 12-inch ovenproof skillet, heat oil over medium-high heat until shimmering and hot. Add pork and cook about 4 minutes or until browned. Flip, being careful not to open them up, and cook about 4 minutes longer. Insert ovenproof meat thermometer so tip is in the thickest part of pork.
  • Place skillet in oven and roast 10 to 15 minutes or until meat thermometer inserted in center reads 155°F. Remove from oven and allow to rest, loosely covered with foil, about 5 minutes (temperature will continue to rise to 160°F). Slice each pork piece into 6 pieces. (If you don't have an ovenproof skillet, after browning pork in skillet, carefully place them in foil-lined 13x9-inch pan and then place in oven.)

1 (1 lb) pork tenderloin, trimmed and butterflied
1/2 cup dried fig, coarsely chopped (like Sun-Maid)
1/2 cup crumbled blue cheese
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
cooking spray
1 tablespoon apple jelly, melted

Steps:

  • Preheat oven to 450°F.
  • Butterfly the pork by slicing it in half lengthwise, cutting to, but not through, the other side. Open the halves (like a book), laying pork flat.
  • Place pork between 2 sheets of heavy-duty plastic wrap; pound to 1/2-inch thickness using a meat mallet or rolling pin.
  • Sprinkle the figs and blue cheese over the pork, leaving about a 1/2-inch margin around the outside edges. Roll up the pork lengthwise, like a jelly-roll. (I tucked in the sides prior to rolling to keep stuffing in, but this is optional.) Secure at 2-inch intervals with twine. Sprinkle pork with salt and pepper, and place on a foil-lined pan coated with cooking spray.
  • The original recipe called for baking it at 450°F for 20 minutes, however, I've found the tenderloin to still be raw in some areas, so I've adjusted the pre-jelly cooking time to about 25-30 minutes. Use a thermometer to gauge.
  • Remove the pork from the oven and brush with the melted apple jelly. Return the pork to the oven and bake for an additional 5 minutes or until the thermometer reads 160°F (slightly pink). Keep an eye on the pork if cooking for longer than the additional 5 minutes because I've found the apple jelly that melts onto the pan will begin to burn.
  • Remove the pork from the oven and let it stand for 10 minutes. Remove the twine and cut the pork into 1 inch slices, or to the thickness of your liking.
  • Yield: 4 servings (serving size: 3 1-inch slices).

This is a great pork recipe full of flavour and really delicious, it is a little fiddly to put together but well worth the end result. The only problem that occurs sometimes, not all the time, is some of the goats cheese melts out, this is no problem once I slice the pork I just put the escaped cheese into whatever slice it is missing from. The tighter you can get the kitchen string and the closer together the less this will happen.

1 (550 g) pork tenderloin
salt and pepper
300 g goat cheese
1 teaspoon lemon zest
1 1/2 tablespoons fresh basil, finely chopped
1 teaspoon instant chicken bouillon granules
1 tablespoon cherry preserves
1 teaspoon cornflour
1/2 cup water
1/2 cup dry red wine
1/2 cup cherries, pitted and halved (Fresh are best when I made this the other night I could not get any fresh as they are out of season,)
1 1/2 tablespoons balsamic vinegar
pepper

Steps:

  • Using a sharp knife, butterfly pork down the centre lengthwise being careful not to cut all the way through. Open pork out, using a meat mallet, pound to flatten to an even surface, do not over pound pork, season both sides of pork with salt and pepper.
  • In a bowl combine cheese, basil and zest, until well mixed.
  • Spoon mixture evenly over one half, remembering to leave enough of an edge, so when you fold over the other half so it covers cheese completely.
  • Fold other half of pork over and secure with kitchen string at close intervals, place pork in a lightly oiled roasting pan and roast in pre-heated oven 180-190c for 45-55 Min's or until pork is cooked through.
  • For The Sauce.
  • Heat wine, water, balsamic and chicken stock, stir until almost boiling add cherry preserves, mix a little water with cornflour and add to sauce and stir until sauce thickens, add cherries and pepper to taste, stir until heated through and serve with pork.
  • To Serve: Slice pork into thick slices and arrange on plate top with sauce. I served mine with twice baked parsnip mash and asparagus spears wrapped in bacon.
  • Bon Appetit.
  • 2-3 Servings depending on appetites.

1 tbsp olive oil
1 tbsp butter
2 pork tenderloins
2 oz goats cheese
1 pear, sliced
salt and pepper
For the glaze:
1/2 c balsamic vinegar
1 tbsp grainy mustard
1 tbsp maple syrup
1/3 c cranberries
1 tbsp fresh rosemary, chopped
salt and pepper

Steps:

  • Preheat oven to 400 F Butterfly tenderloins by slicing lengthwise, leaving at least 1/2 inch intact. Pound slightly flat. Season inside with salt and pepper, spread 1/2 the cheese on one side of each tenderloin. Lay 1/2 pears on top of cheese, tie up with kitchen string. Season outside with salt and pepper. Melt oil and butter in large ovenproof skillet over medium heat. Sear tenderloins on all sides until well browned. Transfer to oven, cook 15-20 min. Remove meat from oven, transfer to plate, tent with foil, rest 5 min. Meanwhile, heat skillet over med. heat, whisk in vinegar, mustard, syrup, scraping up browned bits. Add cranberries, rosemary, bring to low boil. Cook until sauce is thick and syrupy and cranberries have burst. Season with salt and pepper. Slice meat, spoon sauce over.

Goat Cheese Stuffed Pork Tenderloin:
2 x Pork tenderloin, centre cut, approximately 6 inches (152 mm) each in length with silver
Salt and pepper to taste
3/4 cup goat cheese, crumbled (180ml)
Zest of 2 lemons
1 1/2 Tbsps fresh basil, chopped (22.5ml)
1 tbsp olive oil (30ml) + 1 tablespoon (30 ml)
1 tsp cracked pepper (5ml)
Butcher twine
Salt and pepper to taste
Red Wine Balsamic Cherry Sauce:
1/2 cup red wine (125ml)
1/2 cup fresh cherries, pits removed and chopped (125ml)
1/2 tbsp balsamic vinegar (7.5 ml)
Salt and pepper to taste

Steps:

  • Preheat oven to 395 degrees F (201 degrees C). "Butterfly" the pork tenderloin. Be sure to leave the loin with at least 1/2 inch (12 mm) uncut at the base. Repeat with remaining loin. Season both sides with salt and pepper. Cover loins with cling film and pound flat. In a medium sized bowl mix together the goat cheese, lemon zest and basil with 1 tablespoon (15 ml) of olive oil and the pepper. Mix gently until evenly combined. Remove the plastic wrap from the meat and spoon the goat cheese mixture evenly over the centre leaving a 3/4 inch border. Roll up to make a compact even roll. Repeat with remaining tenderloin. Using butcher string to make ties on every inch of the loin. Rub 1 tablespoon of the olive oil (15ml) all over the pork loins. Season to taste with salt and pepper. Set a large oven proof skillet over medium high heat, add the remaining olive oil and allow to heat 30 seconds. The pan should be hot but not smoking. Place the pork loins in the skillet and allow them to cook until a deep golden brown caramelized crust forms. Turn and repeat until both loins are golden brown. Place the skillet in the preheated oven and allow them to cook for another 12 minutes. Remove from the oven and place the loins on a plate and cover with foil. To serve slice 3/4 inch (19 mm) slices of pork using a sharp knife. Divide the pork on to six plates and drizzle with the cherry sauce. SAUCE: Place the now empty skillet over medium high heat. Add the red wine, use a wooden spoon to scrape up the bits remaining in the bottom of the pan. Add half of the cherries and the balsamic vinegar and cook for 5 mins. Add the remaining cherries and cook for 1 minute. At this point the sauce should be slightly reduced and the cherries warmed through. Season to taste with salt and pepper.

How to make Goat Cheese Stuffed Pork Tenderloin with Red Wine Balsamic Cherry Sauce

1 pork tenderloin
salt and pepper to taste
1/2 cup soft goat cheese (crumbled)
zest of 1 lemon
1 tablespoon basil (chopped)
1 teaspoon black pepper (ground)
butcher twine (I used unwaxed and unflavoured floss)
1 tablespoon olive oil
1 tablespoon olive oil
salt and pepper to taste
1/2 cup red wine
1/2 cup cherries (pits removed and chopped)
1 tablespoon balsamic vinegar
salt and pepper to taste

Steps:

  • Butterfly cut the pork lengthwise. (A butterfly cut is where you cut the pork as if you were going to cut it in half but stop cutting 1/2 inch from the end. This way you can roll up the pork and form a pocket.)
  • Lay the pork out flat with the cut open.
  • Season the inside of the pork with salt and pepper.
  • Mix the cheese, lemon zest, and basil and ground black pepper in a bowl.
  • Spread the cheese mixture on the inside of the pork leaving a 1/2 inch border free.
  • Roll the pork up sealing the cheese mixture inside.
  • Tie the pork roll with butchers twine in one inch intervals.
  • Rub olive oil onto the outside of the pork roll.
  • Season the outside of the pork roll with salt and pepper to taste.
  • Heat the olive oil in an oven proof pan.
  • Cook the pork tenderloin in the pan until the whole outside is golden brown.
  • Place the pan with the pork into a preheated 400F/200C oven and cook for about 12 minutes.
  • Place the pork roll on a plate and let it rest.
  • Place the pan back on the stove. (Use oven mitts as the pan will be very hot.)
  • Pour the red wine into the pan and scrape the bits off the bottom with a wooden spoon.
  • Add the cherries, balsamic vinegar and salt and pepper to taste.
  • Let the liquid reduce for a few minutes.
  • Slice the pork, plate it and drizzle with the cherry sauce.

2 tablespoons sweet smoked paprika
1/4 cup dry red wine
8 -10 garlic cloves
2 turkish bay leaves, well crumbled

1/2 freshly squeezed large lemon, juice of (1 1/2 tablespoons)
1 leaf and tender stems from 7 sprigs cilantro
1 leaf from 5 sprigs flat leaf parsley
1 1/2 tablespoons kosher salt
1/4 teaspoon fresh ground white pepper
1 few dashes hot sauce
1/4 cup olive oil
two 14-ounce pork tenderloin, fat and silver skin removed, each of the tenderloins cut crosswise in half
1/4 lb firm cheese, such as Nisa, Sao Jorge or 1/4 lb pecorino romano cheese, cut into 1/2-inch chunks
2 tablespoons amped-up red pepper paste
2 tablespoons olive oil (may substitute lard)
1/2 cup dry white wine
1 1/2 cups low sodium beef broth
chopped flat leaf parsley, for garnish

Steps:

  • To Make the Pepper Paste: Combine the sweet paprika and the smoked paprika, the wine, garlic (to taste), crumbled bay leaves, tomato paste, lemon juice, cilantro, parsley, salt, white pepper and piri-piri sauce (to taste) in the bowl of food processor or blender; pulse until the garlic and herbs are minced, stopping to scrape down any chunky bits from the sides of the bowl or jar.
  • With the motor running, add the oil in a slow, steady stream to form a homogenous dark-red paste; this should take 1 to 2 minutes. Use the mixture immediately, or transfer it to a glass jar with a tight-fitting lid and refrigerate for up to 1 month.
  • Make the Tenderloin:Use a metal skewer to poke a center channel running the length of each tenderloin half. Widen the channel to about 1/2 inch in diameter, then carefully stuff the cheese into the pork.
  • Place the stuffed tenderloin halves in a large (2-gallon) plastic food storage bag, then use a wide knife to cover the meat with the red pepper paste. Carefully invert the bag, holding the tenderloin halves in place, then repeat to cover the rest of the meat, using all of the paste. Season with the black pepper. Seal and refrigerate for 4 hours or up to overnight.
  • Position a rack in the middle of the oven and crank up the heat to 400 degrees. Remove the pork from the fridge and let it sit for 20 minutes. Have a large rimmed baking sheet ready, preferably with an uncoated wire rack nested in it.
  • Heat the oil in a large skillet over medium-high heat. Add the tenderloin halves (with the paste on them) and sear for 6 to 8 minutes, turning occasionally, until well browned all around. The skillet will be used to make a sauce; drain off any fat and keep it on the stove top (off the heat).
  • Use tongs to transfer the tenderloin halves to the rack. Roast for about 20 minutes, or until an instant-read thermometer inserted into the meat (and not into the cheese) registers just under 150 degrees. Let them rest for 5 minutes before cutting. Some of the cheese may ooze out as the meat roasts; this is okay. Use a knife to gently push it back into its channel.
  • While the tenderloins are roasting, place the skillet over high heat, then add the white wine. Bring to a boil, using a wooden spoon or spatula to dislodge any browned bits. Add the beef broth and return the mixture to a boil; cook for about 5 minutes, or until the liquid has reduced to 1 cup. Remove from the heat.
  • To serve, cut the pieces of each tenderloin half on the bias into 2 pieces. Lay one half in the center of each plate; if desired, lean the other against it at a jaunty angle. Drizzle equal amounts of the sauce over each portion. Garnish with the parsley; serve warm.
