STILTON AND WALNUT WELSH RAREBIT - BLUE CHEESE ON TOAST

A very easy & tasty recipe which I first devised for using up the Post-Christmas Stilton Cheese, but now I will actually buy Stilton, when I can, or any other good quality blue cheese in order to make this supper dish! The only requirements are: good blue cheese and good "Country" style bread or home-made bread. I have used Walnut bread, Multi-grain Granary bread, French Baguette & Ciabatta bread in the past for this dish. There are numerous options and additions too - tomatoes go well on top as does a finely sliced spring onion. This recipe is great for a light supper dish with a crispy salad on the side & a good glass of Red wine too. I have also used this recipe for pre-dinner nibbles - you need to stamp out small rounds of bread if you wish to serve them that way.

8 ounces Stilton cheese or 8 ounces blue cheese
3 tablespoons cream or 3 tablespoons creme fraiche
1 teaspoon Worcestershire sauce
1/2 teaspoon English mustard or 1/2 teaspoon Dijon mustard
2 ounces walnut pieces
8 slices bread
2 ounces butter
1 teaspoon cayenne pepper
black pepper
salt (optional)

Steps:

  • Pre-heat the grill the the highest setting and line a grill pan with kitchen foil.
  • Put the cheese into a mixing bowl and mash with a fork.
  • Add the cream or creme fraiche, Worcestershire sauce, mustard, black pepper, salt, (optional as the cheese is already quite salty) & the walnut pieces.
  • Mix well & set aside.
  • Place all the slices of bread on to the lined grill pan and toast until just golden brown.
  • Take out and spread the UNTOASTED side with butter.
  • Spread the cheese mixture over the top ensuring it is spread to the edges, otherwise they will burn!
  • Sprinkle with the Cayenne pepper.
  • Place under the grill and grill for about 2-4 minutes until the cheese is melted, bubbling & tinged with brown.
  • Serve 2 slices per person with a crisp seasonal salad and a good glass or two of Red wine!
  • The ultimate supper dish!
  • If you wish to serve these as aperitif nibbles, stamp out rounds from the slices of bread and continue to assemble & grill as above. Serves about 8 people that way.

2 cups shredded CRACKER BARREL Sharp Cheddar Cheese
1/2 cup beer
2 tsp. butter or margarine
1/2 tsp. paprika
1/4 tsp. dry mustard
1 egg
6 slices white bread, toasted, halved diagonally

Steps:

  • Place cheese, beer, butter and seasonings in saucepan; cook on low heat until cheese is completely melted, stirring occasionally.
  • Beat egg lightly with fork in small bowl. Remove small amount of cheese sauce from saucepan. Add to egg; mix until well blended. Add to remaining cheese sauce in saucepan; stir until well blended. Cook until thickened, stirring frequently.
  • Place 2 toast triangles on each serving plate. Top evenly with cheese sauce just before serving.

Nothing is more delicious that a well-made Welsh Rabbit, or 'rarebit'. It is easy to make but you do need to keep your eye on it! 375 g Mature cheddar cheese, coarsely grated
30 g butter or 30 g margarine
125 ml milk or 125 ml beer
1 teaspoon Worcestershire sauce
1 teaspoon mustard powder
1/2 teaspoon salt
1 pinch cayenne powder
1 egg, lightly beaten
8 slices bread, toasted
paprika (optional)

Steps:

  • Melt the butter or margarine in the top of a double boiler over boiling water. Add the milk or beer; when this is warm, add the grated cheese.
  • With a fork, stir lightly but constantly until the cheese is melted. Season with Worcestershire sauce, mustard, salt and cayenne.
  • Remove the saucepan from the heat, and stir in the lightly beaten egg, which will cook in a few seconds.
  • Pour the mixture over the hot toast.
  • Sprinkle with a little paprika if liked, and serve immediately.

An easy and very tasty rarebit dish made with Irish cheddar cheese and the ubiquitous Irish ale, Guinness. The Emerald Isle produces some great dairy products and none is better than their butter and Cheddar style cheese. This recipe has Ireland written right the way through it, using soda bread as the base for this cheesy snack, as well as the aforementioned cheese and ale. I have also made these to eat with a bowl of hearty soup or Irish stew, perfect for a cold or damp winter's day. Amazing high tea time food as well; served with salad, chutneys and pickles for a cheap and easy fire-side supper.

2 tablespoons butter
2 tablespoons plain flour
1 teaspoon Dijon mustard or 1 teaspoon English mustard
1 teaspoon honey
1/2 cup milk or 1/2 cup buttermilk
1/2 cup irish stout beer, such as Guinness
2 finely chopped spring onions (green onions)
1 cup irish cheddar cheese, grated (or similar Cheddar cheese)
salt and pepper
4 slices soda bread

Steps:

  • Melt the butter in a heavy pan and stir in flour to make a roux. Cook on a low heat for a further minute without allowing it to brown.
  • Remove pan from heat and gradually beat the milk or buttermilk into the roux. Return to heat and stir until the mixture thickens. Stir in mustard and honey, spring onions and finally the stout/Guinness. Cook this mixture fairly rapidly for 2-3 minutes then add the grated cheese and stir over very low heat only until all the cheese has melted.
  • Spread thickly on four slices of soda bread and place under the grill until golden brown and bubbling. Serve hot with soups, stews, salad, chutneys or pickles.
  • (Serves 2 as a light meal or snack with salad and 4 as an accompaniment to soup or stew.).

Here's what you need: white bread, butter, mature cheddar, beer, mustard, worcestershire sauce

6 slices white bread
2 tablespoons butter
2 ½ cups mature cheddar, or a welsh farmhouse cheese if you want to be more traditional
⅓ cup beer
1 teaspoon mustard
2 teaspoons worcestershire sauce

Steps:

  • Cut the centre out of a slice of bread, leaving only the thin crust in one piece - then cut that centre into smaller squares.
  • Place all of the bread along with another regular full slice on a baking tray and lightly toast under a grill for a few minutes.
  • Melt the butter in a pot on a medium-low heat, then add the cheese. Stir it all in until everything is melted.
  • Gradually add the beer bit by bit, stirring until combined before adding the next bit of beer.
  • Stir in the mustard and Worcestershire sauce and remove from the heat.
  • Stack the hollowed out crust of the bread onto the full slice and drop in half of the small squares.
  • Fill this with the cheese mixture, then top with whatever squares you have left over.
  • Put it under the grill for another 1 or 2 minutes until the bread has fully toasted and the cheese mixture is slightly brown.
  • Enjoy!

1/2 teaspoon dry mustard
1/4 cup milk
1 teaspoon Worcestershire sauce
1 dash hot pepper sauce
2 slices bacon, cooked, crumbled
1 loaf French bread, cut into 1-inch cubes, toasted if desired

Steps:

  • In fondue pot or medium saucepan over low heat, combine cheese cubes, dry mustard, milk, Worcestershire sauce and hot pepper sauce.

This is so GOOD!!! I originally got this recipe from a "Best of Bridge" cookbook. I've changed the recipe a bit and also expanded the recipe since the original only filled my bread-bowl about a quarter full. It's so awesome and even reheats well (wrapped in foil in the oven), if you happen to have leftovers. *You can also optionally stir in bacon bits and finely chopped green onion before serving.

4 cups cheddar cheese, shredded
1/2 cup sour cream
2 garlic cloves, minced
2 tablespoons Worcestershire sauce
1 tablespoon mustard
1/2 cup beer
1 large round sourdough loaf

Steps:

  • Combine all ingredients except bread. Set aside.

A delectable tangy topping of Cheddar cheese, chopped olives, sun-dried tomatoes with cherry tomatoes - melted on little toasted bread rounds! Perfect for all types of parties, buffets, nibbles, Hors D'oeuvres, starters and aperitif snacks! I make up my toasted bread rounds ahead of time and store them in an airtight tin; the cheese rarebit mixture can also be made ahead, you just need to spread it on top of the toasted bread rounds and then pop them in the oven for 5 to 8 minutes. Perfect, tasty and very elegant! I usually use green olives, as I prefer the flavour when mixed with the cheese and tomatoes - but you could use black olives if you wish. I also use pimento stuffed olives to great effect, I am sure that almond stuffed olives would also be wonderful. Try to use a good quality thick sliced loaf of bread for the toasted bread rounds - it makes such a difference to the finished taste. This recipe is easily doubled or trebled for larger gatherings!

4 -6 slices bread, white or 4 -6 slices brown bread
4 ounces grated cheddar cheese
1/2 teaspoon English mustard powder
2 tablespoons good quality mayonnaise
2 ounces green pitted olives, finely chopped
6 extra olives, cut into half (to garnish)
2 sun-dried tomatoes, drained and finely chopped
6 cherry tomatoes, cut in half
salt
pepper

Steps:

  • Stamp 12 x 2" rounds out of the sliced bread - the spare bread can be kept for fresh breadcrumbs.
  • Pre-heat the oven to 230C/475F and line a baking tray with greasproof paper.
  • Lay the bread rounds on the lined tray and bake for about 3 to 5 minutes or until a pale golden brown. Remove from the oven.
  • Mix the grated cheese, chopped olives, chopped sun-dried tomatoes, mustard powder and mayonnaise together - season with salt and pepper to taste, remembering the olives are already quite salty!
  • Spread the mixture over the top of the pre-toasted bread rounds and bake in the pre-heated oven for about 5 to 8 minutes, or until the mixture has melted and is bubbling.
  • Take the mini rarebits out and place half a cherry tomato into the toppping of each round - put them back into the oven for about 1 to 2 minutes to soften the tomato, make sure they do not brown too much.
  • Take them out of the oven and finish off by placing half an olive in the middle of each cherry tomato as a final garnish.
  • Serve warm or at room temperature with cocktails, wine and other Hors D'oeuvres for festive feasts, frolics, parties or buffets!
  • The toasted bread rounds can be stored for up to a week in an airtight tin, and the cheese rarebit mixture can be made ahead and stored for up to 3 days in the fridge.

JANE AUSTEN'S REGENCY TOASTED CHEESE - WELSH OR SCOTCH RAREBIT

Lots of you who know me very well on Recipezaar will know of my love and research into Historical recipes, traditions, culture and food; this Toasted Cheese recipe is the first in a series of Regency recipes that I will be posting! I always like to make any recipe that I post at least twice, and this one is a real cracker in my humble opinion! Jane Austen is known to have said.... "We were greatly surprised by Edward Bridge's company...It is impossible to do justice to the hospitatlity of his attentions towards me; he made a point of ordering toasted cheese for supper, entirely on my account." --Jane Austen-- 27 August, 1805. This is a classic regency dish - often served AFTER a heavy meal and before the dessert! It was more often than not called Toasted Cheese, but is also known as Scotch or Welsh Rarebit. The original recipe was written like this: "Toasted Cheese - Grate the cheese and add it to one egg, a teaspoonful of mustard, and a little butter. Send it up on toast, or in paper trays". I have amended the orginal recipe for today's quantities, ingredients and cooking methods!! NB: In 1747, a cookery book gave a recipe for "Scots Rabbit" or Rare Bit as bread toasted on both sides and a slice of cheese, the same size as the bread, also toasted on both sides and laid on the buttered bread. The same book had "Welsh Rabbit" made in the same way but with mustard rubbed on the cheese. "English Rabbit" on the other hand had a glass of red wine poured over the toast before the cheese was added. Take your pick!

1 1/2 lbs grated mature cheddar cheese
6 fluid ounces milk or 6 fluid ounces ale
3/4 teaspoon dry English-style mustard
1 teaspoon Worcestershire sauce
salt, to taste
pepper, to taste
6 slices thick bread
butter
chutney, to serve

Steps:

  • Melt the cheese over hot, but not boiling, water and then gradually stir in the rest of the ingredients. Mix well and set to one side. Taste and adjust seasonings.
  • Toast the bread on ONE side only and then butter the UNTOASTED side.
  • Spread the melted rarebit mixture over the top of the bread - on the UNTOASTED side - make sure the mixture is spread upto the edges.
  • Place under a hot grill and cook until the rarebit mixture is bubbling hot and brown in patches, about 3 to 5 minutes depending on the heat of your grill.
  • Serve immediately with a selection of chutneys, relishes and pickles.

QUICK CHEESE & ONION RAREBIT

350g tub four cheese sauce
3 spring onions , sliced
100g (or 4 slices) good quality ham , torn into large strips
50g cheddar , grated

Steps:

  • Toast the bread in a toaster. Meanwhile, mix the cheese sauce, onions and a grind of pepper together in a small bowl.
  • Transfer the toast to a non-stick grill rack and drape the ham over each slice. Next, spoon the cheese sauce onto the ham and spread it around with the back of the spoon. Scatter the grated cheese over the sauce, then pop the rarebit under a hot grill until the cheese turns bubbly and golden. Cut each slice in half and serve while still hot.

1 tbsp olive oil
200g nettle leave
200ml tub crème fraîche
1 tsp wholegrain mustard
140g British blue cheese , such as Blue Vinney
4 slices sourdough bread

Steps:

  • Heat the olive oil in a frying pan. Add the nettles and cook for 1 min until wilted. Allow to cool for 1 min, then roughly chop. Add to a bowl with the crème fraÎche, mustard and half the blue cheese. Stir in seasoning and set aside.
  • Heat the grill and lightly toast the bread on both sides. Divide the nettle and cheese mix between the toasts then pile on the remaining cheese and grill until golden and bubbling. Serve immediately.
