Yield 8 danish

Number Of Ingredients 6

1 large egg plus 1 yolk
8 ounces cream cheese, softened
3 tablespoons sugar, plus more for dusting
1 teaspoon lemon juice
1/4 teaspoon vanilla extract
One 17.3-ounce box frozen puff pastry sheets, thawed

Steps:

  • Preheat the oven to 400 degrees F. Line 2 baking pans with parchment paper.
  • Beat the whole egg with 1 teaspoon of water in a small bowl; set aside.
  • Beat the egg yolk, cream cheese, sugar, lemon juice and vanilla in a medium bowl with an electric mixer on medium-high speed until smooth.

Spoon the cream cheese mixture evenly into the center of each (about 2 tablespoons per); do not spread the cream cheese. Brush all of the exposed pastry with the egg wash, then dust generously with sugar.
  • Bake until puffed and golden brown all over, about 18 minutes. Cool slightly before serving.

CHEESE DANISH PIE CRUST SQUARES

Cheese Danish Pie Crust Squares image

My mom used to make cinnamon rolls with pie crust scraps, which gave me the idea for making these danishes. It is a great way to use leftover dough and enjoy the taste of a cheese danish without having to make a whole batch. These danishes are a wonderful treat to have with your coffee in the morning! I make them with my gluten free pie crust recipe (Recipe #266631), so I do not know how they would taste on a regular wheat flour crust, but I'm sure they would still be tasty! I like to make half the batch with chocolate chips and the other half with raspberry jam (put this on top of the cream cheese mixture before baking). I had trouble naming this one, so I would love to hear ideas for a tasty and descriptive name!

Time 25m

Yield 7 serving(s)

Number Of Ingredients 4

1/4 cup leftover pie dough
2 tablespoons cream cheese (1 oz)
5 tablespoons powdered sugar
7 semi-sweet chocolate chips

Steps:

  • Roll out your extra pie crust about 1/4 inch thick and cut into 6 squares. Take the scrap dough from that and shape into a 7th square (this one won't look as nice, but will be just as tasty!). Press down in the middle of your squares to make a small circular indention.
  • In a small bowl mix cream cheese and powdered sugar together with a fork until it has the consistancy of icing. Scoop a small amount in the center of each square (about 1/2-1 tsp). Bake for 20 minutes at 350 degrees (you can put it right in with your pie).
  • Let cool for a few minutes, then pop a chocolate chip in the center of the gooey cream cheese. Sprinkle powdered sugar on top for the final touch.

CHERRY CHEESE DANISH FOR A CROWD

Cherry Cheese Danish for a Crowd image

I first had this at a school potluck and I indulged in more than my fair share! This feeds a small crowd of 16 people and the best thing is that it doesn't need refrigeration. It can be baked and kept at room temperature for up to one day.

Number Of Ingredients 9

2 (8 ounce) packages cream cheese, room temperature
1/2 cup sugar
1 large egg
2 teaspoons vanilla extract
2 (8 ounce) tubes refrigerated crescent dinner rolls
1 (21 ounce) can cherry pie filling
1 egg yolk, beaten with
1 teaspoon water
powdered sugar

Steps:

  • Heat oven to 350*.
  • Lightly grease or spray a large cookie sheet (with sides) or a jelly roll pan. I've found that a 10" x 13" cookie sheet works best.
  • In a medium sized bowl, mix cream cheese, sugar, egg and vanilla until smooth.
  • Remove dough from 1 crescent roll tube.
  • Unroll and place it in middle of the prepared pan. Pat out with fingers, pressing perforations together, until dough completely covers bottom of pan.
  • Warm in oven 4 minutes until slightly dry. This will set the bottom crust.
  • Remove from oven and cool slightly.
  • Spread cheese mixture over dough evenly to edges.
  • Scatter cherry pie filling evenly over cheese.
  • Unroll remaining sheet of crescent roll dough and separate into 8 triangles on top of cherries filling. They should not cover the surface completely; just be sure to space them evenly. *Another option is to tear the 8 triangles into small 1" pieces and randomly scatter them over the top of the pie filling.
  • Brush triangles or 1" pieces with egg glaze.
  • Bake 20-30 minutes or until top crust is golden and cheese mixture is set.
  • Cool in pan on wire rack before dusting with powdered sugar.
