Cream-style corn, whole corn kernels, sour cream, butter, green chilies, ground meat and sharp cheddar cheese are combined with a packaged corn bread mix in this moist, pudding-like main dish.

½ pound ground beef
1 egg, beaten
1 (6.5 ounce) package corn bread mix
½ (8.75 ounce) can sweet corn, drained
½ (8.25 ounce) can cream-style corn
½ cup sour cream
¼ cup butter, melted
½ cup shredded sharp Cheddar cheese
½ (4 ounce) can chopped green chiles, or more to taste
2 tablespoons shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
  • Heat a skillet over medium-high heat and stir in ground beef. Cook and stir until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
  • Stir egg, corn bread mix, sweet corn, cream-style corn, sour cream, and butter in a bowl until well mixed. Fold in ground beef, 1/2 cup Cheddar cheese, and chiles; pour into prepared baking dish.
  • Bake in the preheated oven for 35 to 40 minutes; sprinkle remaining 2 tablespoons Cheddar cheese on top. Continue baking until a knife inserted into the center comes out clean, 5 to 10 minutes. Serve warm.

We really like spoon bread. Good with fish. This recipe comes from Mastercook. The recipe was given to them by the Actor who played Festus in the old" Gunsmoke" TV series.

1 (1 lb) can cream-style corn
3/4 cup milk
1/3 cup shortening
2 eggs, slightly beaten
1 cup cornmeal
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 (4 ounce) can diced green chilies, drained
1 1/2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 400 degrees.
  • Combine corn, milk, shortening, eggs, cornmeal, soda, baking powder, salt, drained chiles and cheese.
  • Mix well.
  • Pour into greased 9-inch square pan.
  • Bake for 45 minutes until golden.
  • Serve hot.

2 eggs, lightly beaten
1 (12 ounce) package corn bread mix
1 (8 ounce) can cream-style corn
1 (8.75 ounce) can sweet corn, drained
1 cup sour cream
½ cup melted butter
1 cup shredded Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
  • Combine the eggs, corn muffin mix, cream-style corn, whole-kernal corn, sour cream, and melted butter. Mix well and pour into the prepared pan.
  • Bake in the preheated oven for 35 to 40 minutes. Remove casserole from oven and sprinkle cheese over the top. Return to oven and bake for an additional 10 to 15 minutes or until a knife comes out clean. Serve warm, spooning servings right from the pan.

This is a great recipe inspired by Better Homes and Garden -although most of the ingredients are different the end result is the same,after being tweaked a bit by me. Very good- I'm lovin' this custard-like breakfast/ brunch idea.

1 c buttermilk
1/2 c chicken broth
1 c corn flour or masa harina
1/4 tsp salt
3 Tbsp butter
1 c dairy sour cream
3 large eggs,beaten
14 oz can creamed corn, green giant
1/4 c diced red bell pepper
1/4 c diced green bell pepper
1/2 c shredded mexican-style cheese
6 slice fried crisp and chopped bacon
1/2 c shredded swiss cheese
1 1/2 c french fried onion (french's)

Steps:

  • 1. Preheat oven to 350^. Butter or spray a 3 to 4 qt. casserole dish. Set aside. --- Bring the buttermilk, chicken broth,masa and salt to a boil, whisking to break up lumps. Simmer for 2 minutes while whisking. Add the butter and remove from heat.
  • 2. Whisk together the sour cream, and eggs in a large bowl. Add mixture slowly to the cooked masa mixture and stir well. Add the creamed corn, bell peppers, the Mexican-style cheese and 1/2 cup of the French's fried onions.Mix to blend.
  • 3. Pour mixture into a buttered or sprayed 3 quart casserole dish. Sprinkle top of casserole with the chopped bacon,sprinkle on the swiss cheese and remaining French Onions. Bake for 35-45 minutes until the top starts to brown and the spoon bread no longer jiggles. Let set 10 minutes before spooning into individual serving dishes.

4 oz onion, chopped
4 oz kerrygold dubliner cheese, crumbled

  • 1. preheat oven to 375 2. place cream cheese and butter into a microwavable mixing bowl, microwave for 1 minute until slightly melted 3. add remaining ingredients mixing very well until smooth and creamy 4. pour mixture into a buttered baking dish. Bake in preheated oven for 45 minutes or until center feel firm 5. serve as a side dish
