SHRIMP COGNAC AND BAKED CHEESE GRITS
If you love shrimp and grits you will thoroughly enjoy this new take on a Crescent City Classic used at the storied Commander's Place Restaurant in New Orleans.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Bring the water and 3/4 teaspoon of salt to a boil in a large pot. Whisk in the grits and return to a boil. Reduce heat to low, and cook, stirring frequently until the grits are tender and very thick, about 30 minutes. Remove from the heat, and stir in 1 3/4 teaspoons of salt and 1/2 teaspoon of pepper, 1/2 cup butter, 2 tablespoons garlic, and the Cheddar cheese until the cheese has melted. Beat the eggs in a bowl with the milk until smooth, then stir into the grits until evenly combined. Pour into the prepared baking dish.
- Bake in the preheated oven until the grits are hot in the center, and the top is golden brown, about 1 hour.
- Meanwhile, melt the clarified butter in a skillet over medium heat. Stir in 2 tablespoons of garlic, and cook until golden, about 2 minutes. Add the leeks, and cook 1 minute more. Stir in the morel mushrooms, oyster mushrooms, chanterelle mushrooms, tomatoes, and Creole seasoning; cook and stir until the mushrooms begin to release their liquid, about 3 minutes. Pour in the cognac and simmer 2 minutes before pouring in the shrimp stock and veal stock. Return to a simmer, and cook until the liquid has reduced by half. Stir in the shrimp, thyme, and 3 tablespoons of butter. Cook and stir over low heat until the shrimp is no longer translucent, about 4 minutes; season to taste with salt and pepper.
- Serve the shrimp and mushroom sauce alongside the baked grits.

BAKED SHRIMP WITH FETA CHEESE
This recipe from Cooking Light magazine is a super easy dish - especially if you purchase cleaned shrimp! My husband likes LOTS of olive oil, so I actually used several tablespoons - not so "light" anymore!

Steps:
- Preheat oven to 350*.
- Heat oil in a large nonstick skillet.
- Add salt, red peppers, shrimp and garlic.
- Saute for 3 minutes.
- Spoon this mixture into an 11 x 7 baking dish.
- Pour wine in skillet.
- Cook over low heat until reduced in half, about 8 minutes.
- Stir in tomatoes, then pour over shrimp mixture.
- Sprinkle feta cheese over shrimp/wine mixture.
- Bake at 350* for 10 minutes.
- Pour shrimp mixture over pasta and serve.

Steps:
- Mix all ingredients except the shredded cheeses & shrimp (I use a food processor).
- Add Shrimp (diced or process last so it's still in pieces and not puréed). Place mixture in a large bowl and add shredded cheeses.
- Next pour mixture into a large casserole dish (that has been buttered or sprayed with Pam) and add cracker crumbs.
- Bake in a 350°F preheated oven for 20 minutes or until bubbly.
- Let cool completely and serve with crackers.
- Please feel free to use less spices and add more according to your tastes, But we like it SPICY!

- 1. Preheat oven to 350 degrees. 2. Heat oil in a large non-stick skillet over medium-high heat. Add oregano and next 4 ingredients; saute 3 minutes. Spoon shrimp mixture into an 11x7-inch baking dish coated with cooking spray. 3. Add wine to pan; cook over low heat until reduced to 1/4 cup (about 3 minutes). Stirn in tomato; pour over shrimp mixture. Sprinkle with cheese; bake at 350 for 10 minutes. Serve mixture over pasta; sprinkle with parsley.
CHEESE BAKED SHRIMP

Steps:
- 1. Crush crackers in very fine crumbs. Mix crumbs with dill and paprika set aside. 2. Roll shrimp in crumb mixture, then in milk again in the crumbs. Place in shallow pan. Drizzle with butter. Bake in 375°F oven for 15 minutes, or until golden and tender. Do not overcook. Serve with lemon wedges.
