This double cheese jacket potato is the ultimate in comfort food. The potatoes are baked, then piled high with mozzarella and cheddar, spring onions, mustard, mayo and soy sauce before being baked again.

4 baking potatoes
2 tsp olive oil
100 g grated/shredded cheddar cheese (vegetarian if required)
100 g grated/shredded mozzarella (vegetarian if required)
2 spring onions (sliced)
3 tbsp mayonnaise
½ tsp English Mustard
2 tsp dark soy sauce

Steps:

  • Preheat the oven to 200C (180C fan / 390F).
  • Push a skewer through each potato a few times to help steam escape and ensure even cooking. Place the potatoes on a baking tray.
  • Rub all over with the olive oil, then place in the oven and bake for 1 hour.
  • Put the cheddar, mozzarella, spring onions, mayonnaise, mustard and soy sauce in a bowl. Mix well.
  • When the potatoes are cooked, cut a cross into each of your potatoes and squeeze so that they open slightly.
  • Pile the cheese mixture on top of each potato, pressing down slightly.
  • Return to the oven for 5-10 minutes until melted.

3 lbs russet potatoes (peeled and thinly sliced, about 6 medium)
2 medium onions, thinly sliced
1 (6 ounce) package sliced process American cheese
salt and pepper
1 1/4 cups cheddar cheese, shredded
1/4 cup butter
1/4 cup flour
1 pinch cayenne pepper (or to taste)
3 cups warm full-fat milk

Steps:

  • Set oven to 400 degrees.
  • Butter a 13 x 9-inch baking dish.
  • Cook the sliced potatoes in boiling water for about 5 minutes; drain.
  • Layer one-third of the partially-cooked potatoes in bottom of the baking dish, then one-third of onion slices, then one-third of the cheese slices.
  • Sprinkle with salt and pepper, then repeat layers two more times.
  • Sprinkle top with the shredded cheddar.
  • For the sauce; in a medium heavy saucepan melt butter over low heat.
  • Add in flour and cayenne then stir for 1 minute.
  • Slowly add in milk; whisk or stir until bubbly and thickened (about 3 minutes).
  • Pour the sauce over the cheese and potato mixture.
  • Bake for about 35 minutes or until golden.
  • Let stand for 10 minutes before serving.

4 medium unpeeled red potatoes, cut into 1/4-inch slices
2 tablespoons dried minced onion
Pepper to taste
1/3 cup shredded cheddar cheese
Minced fresh parsley

Steps:

  • In a large skillet, melt butter over medium-high heat. Add the potatoes, onion and pepper; toss to coat. Cover and cook for 8-10 minutes or until potatoes are tender, stirring occasionally. Uncover; cook until potatoes are browned, about 6 minutes. , Top with cheese. Remove from the heat. Cover and let stand for 2-3 minutes or until cheese is melted. Garnish with parsley.
