CHEESY SAUSAGE AND POTATOES CASSEROLE

Sausage and potatoes casserole that's so creamy and cheesy it will have them coming back for seconds! Oh so easy and oh so delicious!

Number Of Ingredients 10

1 lb bulk mild breakfast sausage
16 oz shredded frozen hash brown potatoes (thawed)
2 tbsp finely chopped onion
3 tbs butter
3 tbsp flour
1/2 cup chicken stock/broth
2 cups milk
4 oz Velveeta (cubed (see note))
Salt and pepper (see note)
2 tbs Panko bread crumbs (optional)

Steps:

  • Preheat oven to 350 degrees F. Lightly spray a 1-1.5 quart baking dish. A 9-inch square would probably be good too.
  • Brown sausage and onion in a large skillet over medium heat. Drain sausage well. Set aside in a large bowl. Add the shredded potatoes to this bowl as well
  • In a large saucepan, melt the butter over medium. Whisk in the flour until you have a smooth paste. Cook until this bubbles and cook for about 1 minute.
  • Gradually add the milk and chicken stock, whisking constantly so no lumps form. Cook until sauce begins to thicken and starts to bubble around the edge of the pan.
  • Add the Velveeta and reduce heat to low. Stir constantly until the Velveeta is melted.
  • Pour the sauce over the sausage/potato combination in the bowl-the amount of sauce you use it up to you. I used it all because I wanted it creamy. The consistency will be the same cooked as before, so let your eye-and your taste-be your guide. Mix well and turn into prepared pan.
  • Sprinkle top with Panko crumbs if using.
  • Bake at 350 degrees F for 45-60 minutes.
  • Recipe may be doubled to serve 4.

This is a family recipe through multiple generations. Although it can make 6 main-dish servings, my family loves it so much that it's often just 3 double servings!

1 (10.5 ounce) can condensed cream of celery soup
½ cup milk
½ cup chopped onion
½ cup chopped green bell pepper
½ teaspoon salt
¼ teaspoon ground black pepper
5 medium potatoes, peeled and thinly sliced, or more to taste
8 ounces fully cooked smoked sausage, sliced
1 tablespoon butter, cut into small pieces
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 3-quart baking dish.
  • Combine condensed soup, milk, onion, bell pepper, salt, and pepper in a mixing bowl; mix until well blended.
  • Layer 1/2 of the potato slices in the prepared baking dish. Top with 1/2 of the sausage and 1/2 of the soup mixture. Repeat layers once more. Dot butter over the top.
  • Cover and bake in the preheated oven for 1 hour 15 minutes. Remove the cover and sprinkle Cheddar cheese over top. Bake, uncovered, until bubbly and the cheese has melted, about 15 more minutes.

1 pound bulk pork sausage
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup 2% milk
1/2 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups sliced peeled potatoes
2 cups shredded cheddar cheese
Minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink, breaking it into crumbles; drain and set aside. Combine soup, milk, onion, salt and pepper. , In a greased 2-qt. baking dish, layer half the potatoes, soup mixture and sausage. Repeat layers. , Cover and bake until potatoes are tender, 60-65 minutes. Sprinkle with cheese; bake, uncovered, until cheese is melted, 2-3 minutes. If desired, garnish with parsley.

Hadn't given my boys a full Sunday breakfast in a while, this was their treat...growing up so fast but still my babies. NOTE:DO NOT SALT, THE SAUSAGE AND CHEESE ADD PLENTY. SALT POTATOES only if sitting over night and make sure to rinse well and drain off the excess water. I actually dried mine in the salad spinner.

6 medium russet potatoes, well, scrubbed, shredded
1 large yellow onions, minced
1 medium green bell pepper
2 cup(s) half and half
3 1/2 cup(s) cheddar cheese, sharp
1/3 cup(s) flour
- butter
3 link - hillshire farm, smoked sausage
2 - eggs

Steps:

  • Use mandolin or grater for potatoes sliced thin, or shredded fine, set aside in cold salted water.
  • In food processor, dice onions and bell pepper. Brown sausage in a skillet, set aside until cool enough to handle. Then slice, cube or coarsely grind in food processor.
  • In a mixing bowl pour the half and half, the eggs, and flour, mixing well. Mix potatoes, onions, bell pepper and sausage together and spoon into the dish.
  • Pour milk and egg mixture over the hash brown mixture, letting it soak thru. Cover with foil and bake at 350 for 1 hour.
  • Remove from oven, top with cheese and return to oven, under broiler until cheese is browned and bubbly. Serve warm.
