2 pieces bacon, diced
1 medium onion, chopped
3 cloves garlic, minced
2 large egg yolks
1 tablespoon Dijon mustard
1/2 teaspoon hot sauce
1 tablespoon Worcestershire sauce
2 tablespoons heavy cream
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 pound ground beef chuck
8 ounces ground pork
8 ounces ground veal
8 ounces sharp cheddar, shredded (2 1/3 cups)
1/3 cup chopped flat-leaf parsley
2 tablespoons tomato paste
1 tablespoon balsamic vinegar
2 tablespoons water

Steps:

  • Preheat oven to 400 degrees F.
  • Cook bacon in a medium nonstick skillet over medium-low heat, until crispy and fat renders, about 10 minutes. Remove bacon with a slotted spoon to a paper towel-lined plate, reserving renderings in the skillet. Cook the onions and garlic in the pan drippings until brown, about 15 minutes. Let cool.
  • Meanwhile, in a large bowl whisk the eggs, mustard, hot sauce, Worcestershire, cream, salt, and pepper. Add the meat, cheese, parsley, and cooked onion. Chop and add the bacon. Mix with a fork until evenly blended. Whisk the glaze ingredients together in a bowl.
  • Dampen hands with water and on a foil-lined cookie sheet, pat mixture into a loaf shape. Bake until an instant-read thermometer inserted into the center of the loaf registers 155 degrees F, about 1 hour. Spread the glaze onto the meatloaf after about 50 minutes. Let loaf rest for at least 10 minutes before serving.

  • Combine ground beef, bread crumbs, milk, Cheddar cheese, egg, and dry onion soup mix in a bowl; mix until well combined. Transfer mixture to a cutting board and shape into a loaf.
  • Place a trivet into a multi-functional pressure cooker (such as Instant Pot®). Pour 1/2 cup water into the pot and set loaf on top of the trivet. Close and lock the lid. 1/2 cup plain dry breadcrumbs
2 pounds meatloaf mix (ground beef, pork and veal)
1 1/4 cups shredded Cheddar (about 5 ounces)
1/2 cup barbecue sauce

4 small green onions, finely chopped (about 1/3 cup)
2 cloves garlic, minced
1 large egg

Steps:

  • Preheat the oven to 375 degrees F. Pour the milk over the breadcrumbs in a large bowl and stir to combine. Add the meatloaf mix, 1 cup of the cheese, 1/4 cup of the barbecue sauce, the salt, pepper, green onions, garlic and egg and mix with your hands until just combined.
  • Divide and shape the mixture into 6 balls and arrange the balls in a 6-cup nonstick muffin pan. Place the muffin pan on a rimmed baking sheet and brush the remaining 1/4 cup barbecue sauce on top of the meat.
  • Bake for 40 minutes, rotating the pan halfway through cooking. Sprinkle with the remaining 1/4 cup cheese. 1 can (14-1/2 oz.) stewed tomatoes, undrained, chopped

Steps:

  • Heat oven to 350°F.
  • Mix meat, bread crumbs, onions and 2 Tbsp. steak sauce just until blended.
  • Pat into 12x8-inch rectangle on sheet of waxed paper; top with broccoli and 3/4 cup cheese, spreading ingredients to within 1 inch of edges. Roll up, starting at one short end. Place, seam side down, in shallow pan sprayed with cooking spray.
  • Bake 1 hour or until done (160ºF). About 10 min. before meatloaf is done, cook tomatoes, and remaining steak sauce until heated through, stirring occasionally.

Not your average meatloaf! The Heinz 57 sauce just gives this great flavor, not too strong, just like a hidden ingredient! I always serve with Catalina dressing to dip it in...AWESOME! The leftovers make great meatloaf sandwiches I butter two slices of bread, put on med. heat frying pan, top one slice with cheese, top cheese with fresh sliced mushrooms then add warmed meatloaf on top, until cheese is melted and bread is golden brown. On the other toasted slice spread mayo. Top meatloaf with a good amount of Heinz 57 and place the two pieces together. Y-U-M.

1 onion, chopped

Steps:

  • Preheat oven to 350°.
  • Heat a large nonstick skillet over medium-high heat. Cook bacon until crisp. Remove from pan and place on a paper towel. Allow to cool. Crumble into pieces.
  • Add chopped onion to the reserved bacon drippings and sauté 3-4 minutes. Cool.

Drain. Put potatoes into a ricer for best results. Return potato to pan. Add heavy whipping cream and remaining ingredients; stir with a spoon to desired consistency. If they are not creamy enough for you, add up to 1/4 cup more cream or milk - although they need to be stiff enough to pipe on top.
  • Put the potatoes into a pastry bag with a wide star tip and pipe the mashed potatoes on top of the meatloaf.

1/2 cup old-fashioned oatmeal, can sub dried bread crumbs
1/4 cup milk
1/4 cup finely chopped onion
1 teaspoon seasoning salt
1 teaspoon Worcestershire sauce

4 -6 slices deli ham (thin slices)
1 (10 ounce) package frozen chopped broccoli, thawed and drained
10 slices American cheese, can sub cheddar or 10 slices colby-monterey jack cheese, divided

Steps:

  • In large bowl combine first 7 ingredients til very well mixed.
  • Place mixture onto a sheet of foil.
  • Press out to a flat, even 8"x10" rectangle.
  • Top evenly with 6 slices ham to within 1/2" of edges.
  • Top with 6 slices american cheese.
  • Sprinkle cheese layer with chopped broccoli evenly. Chop any big pieces smaller.
  • Roll up starting from long side, lifting and using the foil to help you roll it all up.
  • Roll up tightly.
  • Pinch ends and seam closed VERY well. Place seam side down onto cookie sheet, or keep on the foil (seam side down)and place onto cookie sheet, that's what I did. Easier clean up!
  • Sprinkle with a little coarse ground pepper.
  • Bake in 350º oven for 55 minutes.
  • Cut remaining 4 slices cheese in half corner to corner. Place on top of meatloaf nicely, overlapping slices slightly, showing pointed sides.
  • Bake 5 minutes longer or til cheese is just melted.
  • Let rest 15-20 minutes before slicing.
  • Good served with mashed potatoes, baby carrots and fresh rolls.
  • *Some hams can turn ground beef slightly pink. It is done in 1 hour. Just check juices to see if they are running clear.
  • **"Do-ahead" Tip:This can be rolled up and refrigerated (covered)for up to 24 hours before baking.

BBQ CHEDDAR MINI MEATLOAF "MUFFINS"



BBQ Cheddar Mini Meatloaf

I've always loved meatloaf- but never could find the right recipe. I especially hate all the fat left in the pan after a regular loaf is baked. This recipe is easy, absolutely delicious, and since you have 12 small "muffins" instead of 1 large loaf, there is not a lot of fat left in the bottom of the tin. If you don't want to stray from traditional meatloaf- go ahead and use ketchup instead- but I recommend trying the BBQ at least once- my family loves it! Also great for potlucks since everyone can have their own individual muffin!

0.5 (3 ounce) package Stove Top stuffing mix (i use chicken)
1/2 cup water
1 egg
3/4 cup barbecue sauce (divided)

  • Preheat oven to 400 degrees. Place all ingredients in gallon zip-loc bag (except 1/4 cup of cheese & BBQ sauce). Squeeze until just mixed. (This keeps the mess out of preparing meatloaf!) Spoon mixture into a 12 cup muffin tin and press down firmly with back of spoon. Top with remaining BBQ sauce and place in oven for 25-35 minutes. Sprinkle remaining cheese on each muffin and bake additional 5 minutes. Allow to cool 5 minutes before removing from tins.

Steps:

  • Preheat the oven to 350°F.
  • In a skillet over medium heat, sauté the onion in the oil until golden. Add the garlic and sauté for 1 to 2 minutes (be careful not to burn the garlic). Remove from the heat and set aside to cool.
  • In a bowl, combine the beef, eggs, onion bread crumbs, oregano, mustard, salt, and pepper. Form a loaf (approximately 7 x 5 x 3 inches in size) and place it in a roasting pan. Cover the loaf evenly with the ketchup. Bake for about 1 hour, until it reaches an internal temperature of 145°F. Remove and allow to rest slightly, then cut into 1/2-inch slices.
  • In a heavy skillet over medium-high heat, cook the bacon until golden brown and crisp on both sides. Transfer to paper towels to drain.
  • Slice the ciabatta rolls in half. Top each bottom half with a slice of warm meatloaf and the cheese. Place the relish on the top halves and top with the bacon. Place all the roll pieces in the 350°F oven and remove once the cheese has melted and the relish is heated through. Close the sandwiches, cut into halves, and serve.

  • Finely roll 12 crackers.

3/4 cup yellow onion, chopped
1/4 cup egg substitute (Egg Beaters)

  • Preheat oven to 350°F.

1 tablespoon grill seasoning (a palmful, such as McCormick's Montreal Steak Seasoning)
2 teaspoons poultry seasoning (2/3 palmful)
1/3 cup bottled barbecue sauce, any brand
1 small or 1/2 medium zucchini, diced fine
1/2 small red bell pepper, seeded, cored, and diced fine
3 scallions, finely chopped
3/4 cup smoked almonds, such as Diamond brand, ground in food processor to bread-crumb consistency
1 egg yolk, beaten
Extra-virgin olive oil (EVOO), for drizzling
1 large head broccoli or 2 small heads
2 tablespoons butter
2 tablespoons flour
1 cup chicken stock or broth
1 cup milk
2 1/2 cups (10 ounces) good-quality shredded Cheddar cheese
2 teaspoons Tabasco sauce
Salt
1 cup store-bought chipotle, tomato, or tomatillo salsa, any brand

Steps:

  • Preheat the oven to 425°F.
  • Place the turkey in a medium mixing bowl and make a deep well in the center by punching the meat with your fist. Fill the well with the grill seasoning, poultry seasoning, barbecue sauce, chopped veggies, ground smoked almonds (clever sub for bread crumbs, I know, plus the smoked nuts rock with the BBQ sauce), and egg yolk. Mix the meatloaf ingredients together, then score the meat with your hand into 4 equal sections. Form 4 individual oval loaves, each 1 1/ 2 inches thick. Arrange on a nonstick baking sheet and drizzle liberally with EVOO. Roast the meatloaves for 18 to 20 minutes. While they roast, work on the broccoli and Cheddar sauce.
  • Trim the very end off of the broccoli stems. With a peeler or a paring knife, remove the thick, fibrous outer layer of the broccoli stems all the way up to within an inch of where the broccoli shoots off into its florets. Cut the broccoli lengthwise into large spears.
  • Heat a small or medium saucepot over medium heat and add the butter. When the butter melts, whisk in the flour and cook for 1 minute. Whisk in the chicken stock, then the milk. Thicken for 2 minutes, then stir in the cheese and melt, 2 minutes. Season with the Tabasco and salt to taste, then turn the heat to low.
  • Bring a couple of cups of water to a boil in a deep skillet. Add salt and broccoli and cook the spears for about 5 minutes in simmering water, until tender but still green. Drain and return to the pan to remain warm.
  • Place a turkey meatloaf on a dinner plate. Garnish with a spoonful or two of salsa. Pile some broccoli spears alongside and top with a generous ladle of cheese sauce.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup grated Cheddar
1 cup rolled oats
1/2 cup shredded carrots
1/2 cup chopped fresh chives
2 teaspoons Worcestershire sauce
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/4 cup ketchup
Kosher salt and freshly ground black pepper
1/4 cup barbecue sauce
2 teaspoons honey
1 teaspoon chipotle chile powder
1 teaspoon cider vinegar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, Cheddar, oats, carrots, chives, Worcestershire, eggs, onion, garlic, ketchup, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake for 30 minutes.
  • Stir together the barbecue sauce, honey, chipotle chile powder and vinegar in small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

I came up with this just because I love left over meatloaf in sandwiches. If you like meatloaf too you will be a fan of this sandwich.

2 slice bread - be creative i just used plain sandwich bread
2 slice cheese - you can be creative here too - i've even used pimento cheese spread and meatloaf
1 slice cold meatloaf, thinly sliced
sandwich pal horsey sauce
butter, softened or margarine

Steps:

  • 1. Spread one slice of bread with horsey sauce. Top with 1 slice cheese, then meatloaf, then cheese again, then second slice of bread. Butter outside of sandwich.
  • 2. In skillet on medium heat grill both sides evenly until golden brown and cheese is melted.

This meatloaf is not like any other meatloaf. You NEVER have to worry that it will be dry. its cheesy, and flavorful. It's one of my families favorites.

1 1/2 cups Italian breadcrumbs (or plain)
0.75 (16 ounce) jar mild salsa
1/4 cup ketchup
1/2 cup cheddar cheese or 1/2 cup mozzarella cheese, small diced
2 dashes basil
2 dashes oregano
2 dashes onion powder
2 dashes garlic powder
1 pinch salt
1 pinch pepper
1 egg
shredded cheese, for the top

Steps:

  • Mix all ingredients except shredded cheese for the top.
  • Form mixture into a loaf pan.
  • spread a very thin layer of ketchup on top.
  • Bake at 375 for about 1 - 1 1/2 hours top with cheese, Bake until cheese melts. if the top looks too cooked cover with foil and reduce heat to 350.

Steps:

  • Mix well: beef, salt, pepper, egg, milk, onion, rice and 1/2 can of cheddar cheese soup.
  • Add bread crumbs til firm texture.
  • Put in loaf pan and pat down.
  • Use rest of can of cheddar cheese soup to "frost" meat loaf.
  • Lay strips of uncooked bacon across top.
  • Bake at 350* for 1 hour.

2 Tbs. plus 1 tsp. canola or olive oil
1 medium yellow onion, chopped
1/2 cup small-diced carrots
1/2 cup small-diced celery
2 large cloves garlic, finely chopped
3/4 cup stout beer, such as Guinness
4 oz. medium-coarse white bread, such as Italian or French, cut into 2-inch pieces (about 2-1/2 cups)
1 cup whole milk
1 lb. ground beef
1 lb. ground veal
2 large eggs
1/2 cup grated Cheddar
1/4 cup dried mushrooms, rehydrated in hot water and chopped
1/4 cup chopped fresh cilantro
1 Tbs. Worcestershire sauce
Kosher Salt
Freshly ground black pepper
2 strips bacon criscross

Steps:

  • Heat 2 Tbs. of the oil in a 10- to 12-inch skillet over medium-low heat. Cook the onion, carrots, celery, and garlic, stirring frequently, until softened and just beginning to brown, 6 to 8 minutes. Add the stout, and simmer briskly, until almost dry, 4 to 5 minutes. Transfer to a large bowl and let cool until warm. In a shallow dish that holds it in a single layer, soak the bread in the milk, flipping once, until soggy but not falling apart, 5 to 10 minutes, depending on the coarseness and freshness of the bread. Lightly squeeze a handful of bread at a time to remove some of the milk (it should be wet but not drenched). Finely chop and add to the bowl with the vegetable mixture. Position a rack in the center of the oven and heat the oven to 375°F. Add the beef, veal and eggs to the onion mixture. Scatter the Cheddar, rehydrated mushrooms, and parsley over the meat, and then sprinkle with the Worcestershire, 2-1/4 tsp. salt, and 1/2 tsp. pepper. Use your hands to gently mix all the ingredients until just combined; try not to compact the mixture as you do this. Line a 9x13-inch baking pan with parchment. Transfer the meatloaf mixture to the baking pan and form into a 10x4-inch rectangular block (it becomes loaf-shaped as it cooks). Finish the meatloaf by draping it with slightly overlapping strips of bacon, tucking the ends under the loaf. Bake until an instant-read thermometer registers 160°F in the center of the meatloaf, 40 to 55 minutes. Broil the meatloaf about 6 inches from the broiler element until the bacon is brown and crisped, about 3 minutes. Let rest for 10 minutes. Transfer to a cutting board or serving platter with a large spatula and cut into 3/4- to 1-inch-thick slices.

•1 cup ketchup
•2 tablespoons tomato paste
•1/4 cup water
•2 tablespoons brown sugar
•1/2 tablespoon cider vinegar
•1/2 teaspoon chili powder
•Kosher salt and freshly ground black pepper
•For the Meatloaf:
•1 1/2 tablespoons extra-virgin olive oil
•1 medium onion, minced (about 1 cup)
•1 large jalapeño, minced (about 2 tablespoons)
•2 medium cloves garlic, minced (about 2 teaspoons)
•2 large eggs, lightly whisked
•1/4 cup homemade or store-bought low-sodium chicken stock
•1/2 teaspoon unflavored gelatin
•1 pound ground beef
•1/2 pound ground pork
•1/2 pound ground veal
•1 tablespoon Worcestershire sauce
•2 teaspoons Dijon or prepared mustard
•1 1/2 tablespoons tomato juice
•1/2 teaspoon ancho chili powder
•1/2 teaspoon dried oregano
•21 Saltine crackers, finely crushed
•1/3 cup finely grated Parmesan cheese
•Non-stick cooking spray
•6 ounces sharp cheddar cheese, cut into long strips

Steps:

  • For the Glaze: Combine ketchup, tomato paste, water, brown sugar, cider vinegar, and chili powder in a small saucepan. Season with salt and pepper, whisk again and set aside. 2.For the Meatloaf: Heat olive oil in a medium saute pan over medium heat until shimmering. Add onion, jalapeño, and garlic, and cook, stirring often, until tender and translucent, about 7 minutes. Transfer to a large bowl and let cool. 3.Whisk eggs and chicken stock in a medium bowl. Sprinkle with gelatin and let rest for 5 minutes. Adjust oven rack to lower-middle position and preheat oven to 375°F. 4.Add beef, pork, veal, Worcestershire sauce, Dijon, tomato juice, ancho powder, oregano, 3/4 teaspoon salt, 1/2 teaspoon black pepper, saltines, and Parmesan cheese to the bowl with the cooled onion mixture. Add egg mixture and combine using hands, taking care not to over-mix. 5.Spray loaf pan with cooking spray. Pack half of the meat lightly and evenly into the loaf pan, creating a well lengthwise down the center and leaving about an inch not indented on either end. Fill well with cheddar cheese. Top with remaining half of meat mixture, pressing to seal and enclose the cheese. Spread with half of the glaze and transfer meatloaf to the oven to cook. 6.Bake until an instant-read thermometer inserted in center of loaf registers 150 to 155°F, about 55 minutes. Remove from oven and let rest 20 minutes. Meanwhile, simmer the remaining glaze over medium heat until slightly thickened. Slice meat loaf and serve, passing additional sauce alongside.
